3 pork tenderloins, cleaned
3 tablespoons chopped rosemary leaves
3 tablespoons chopped tarragon leaves
Salt and pepper
Chicken stock, for sauteing
2 garlic cloves, chopped
1 tablespoon vegetable oil
Sweet Potato Puree, recipe follows
Steamed asparagus, recipe follows
Orange juice reduction, recipe follows
Julienne roasted red pepper, recipe follows
1/2 can pumpkin pie filling
1/2 can sweet potatoes
1 tablespoon honey
1 1/2 tablespoons tarragon leaves, chopped
Salt and pepper
Several stalks asparagus
2 tablespoons butter
2 tablespoons shallots, chopped
1 tablespoon garlic, chopped
1 tablespoon salt
1/2 tablespoon pepper
1 (12-ounce) can frozen orange juice concentrate
1 1/2 tablespoons chopped tarragon leaves
1 teaspoon sugar
1 red bell pepper
Salt and pepper

Steps:

  • Season the pork tenderloin on both sides with rosemary, tarragon, salt and pepper. In a large pan, add chicken stock, garlic, oil, salt and pepper. Allow the stock to simmer over medium heat. Cut the seasoned, raw pork into medallions and then place them into the simmering stock. Cook the meat until the medallions are medium rare. Remove from the pan.
  • In the final presentation, place the potato puree in the middle of the plate with the asparagus above it. Lay the pork against the puree and the orange juice sauce below the pork. Garnish with the red pepper strips.
  • Place the pumpkin pie filling and sweet potatoes into a food processor. Add honey, tarragon, and salt and pepper to the food processor and blend into the potato mixture.
  • In a large pot, bring just enough water to cover the asparagus to a boil. Add the asparagus to boiling water and blanch the stalks until they are al dente. Heat a medium saute pan and melt 2 tablespoons of butter in the pan. Add the blanched asparagus to the pan and saute with shallots and garlic. Cook until the asparagus spears are tender.
  • Pour the entire can of frozen orange juice into a medium saucepan and heat the juice over medium heat. Reduce the liquid by 1/2. Add freshly chopped tarragon to the orange juice reduction and stir well.
  • Over an open flame, roast the entire red pepper until the skin blackens. Once the entire pepper is blackened, wrap it in plastic wrap. Allow it to stand in the wrap for approximately 10 minutes. Remove the pepper from the wrap and wipe away the black skin. Julienne the pepper and use, as garnish, on the plate.

1 bunch asparagus
4 small red potatoes, quartered
Salt and ground black pepper
4 (4-ounce) boneless lamb loin chops, trimmed of fat
1 tablespoon olive oil
2 leeks, rinsed and chopped
1 cup prepared plum sauce
2 tablespoons prepared plum preserves
1 tablespoon chopped fresh rosemary leaves
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 hard-boiled egg, shelled and diced

Steps:

  • Preheat oven to 400 degrees F.
  • Coat a large baking sheet with cooking spray.
  • Arrange asparagus and potatoes on baking sheet and spray with cooking spray. Season with salt and black pepper. Roast 20 to 25 minutes, until tender and golden brown.
  • Meanwhile, season lamb chops all over with salt and black pepper. Heat oil in a large skillet over medium heat. Add chops and sear 2 to 3 minutes per side, until golden brown. Remove lamb from pan and set aside. Add leeks to the same pan and saute 3 minutes, until soft. Return lamb to pan.
  • In a small bowl, whisk together plum sauce, plum preserves and rosemary. Pour mixture over lamb chops. Simmer 5 minutes, until lamb is tender and medium-rare to medium.
  • In a small bowl, whisk together lemon juice, lemon zest, oil and mustard. Season to taste with salt and black pepper. Arrange asparagus on a serving dish. Drizzle lemon vinaigrette over top. Top with diced egg. Serve lamb chops with asparagus and potatoes on the side and extra sauce (with leeks) spooned over top.

12 oz. pasta (I used mostacolli)
3 Tbsp. olive oil
1 Tbsp. fresh rosemary, finely chopped
2 boneless, skinless chicken breasts, pounded to even thickness
1 bunch (about 1 lb.) fresh asparagus, ends trimmed and cut into bite-sized pieces
3 cloves garlic, minced
1 tsp. lemon zest
1 tsp. lemon juice
2/3 cup (about 1 carton) Greek yogurt, plain
1/3 cup grated Parmesan cheese
2 cups fresh baby spinach
optional garnish: extra shredded Parmesan and/or chopped fresh parsley

Steps:

  • Prepare pasta al dente according to package instructions. (I would add the pasta to the boiling water around the time you begin cooking the asparagus.)
  • Heat 2 Tbsp. oil in a large skillet over medium-high heat. (You will know that it is ready when the oil is shimmering, or it sizzles when you place a drop of water in the oil.) Season both sides of the chicken with a pinch of salt and freshly-cracked black pepper. Add the chicken to the skillet and cook for 3-4 minutes on each side, or until the chicken is fully cooked and the juices run clear. Remove chicken and set aside. Wait a few minutes, then slice the chicken into thin strips.
  • In the same skillet, add the remaining tablespoon of olive oil. Add asparagus, garlic, lemon juice and zest, and rosemary and saute for 4-5 minutes until the asparagus is cooked but still slightly crisp. Remove skillet from heat. Stir in Greek yogurt, Parmesan cheese, and baby spinach.
  • Once the pasta is finished cooking, drain the pasta but reserve 1/4 cup pasta water. Toss together the pasta, creamy vegetable mixture and the chicken. Add some of the reserved pasta water if needed to thin the sauce. Serve immediately, garnished with extra Parmesan and/or chopped fresh parsley.

1 pinch sea salt

1/2 lb fresh asparagus, trimmed

8 ounces salmon fillets, cut into two 4-ounce portions

Steps:

  • Preheat the oven to 425 degrees. Cut a piece of parchment paper to fit a shallow baking pan.
  • Wash the sweet potatoes. Slice the potatoes and onions 1/4-inch thick.Put sweet potatoes and onions on the baking sheet in a single layer.Drizzle with the olive oil and sprinkle with the salt. Bake for 15 minutes.
  • Meanwhile, mix the garlic,mustard, lemon juice, and rosemary to make a paste and set aside.

4 lamb chops or 1 rack of lamb
1/2 pound asparagus
1/2 tsp sea salt

2 cloves garlic, finely chopped
1 tbsp Dijon mustard

Steps:

  • Directions Trim the woody ends off the asparagus. You may also peel off about 1 inch of the tough green fibrous sheath from the base of the asparagus stalks with a vegetable peeler. Put 1 inch of purified water and 1/2 teaspoon sea salt in a saucepan and bring to a boil. Place asparagus in the pan and steam for about 3 minutes, until tender but not soft (al dente). Drain and set aside. Make a paste of the olive oil, rosemary, garlic, and Dijon mustard. Brush the lamb chops with the paste. Using high heat, grill, sauté, or broil the lamb chops for 3 to 4 minutes on each side for medium-rare. Remove from heat and allow to rest. Place asparagus on a plate and arrange the lamb chops. 1/2 small onion, thinly diced
1/4 cup (60 ml) chicken stock (white wine might work too)
kosher or sea salt and black pepper, to taste
2 garlic cloves, crushed
1 tablespoon (15 ml) fresh rosemary, trimmed from stalk and chopped into fine bits
pasta, freshly cooked or leftovers - angel hair, linguine or your choice
1 1/2 cups (375 ml) freshly grated asiago or parmesan cheese

Steps:

  • Prepare ingredients as noted. Add oil to a deep dish frying pan over medium heat on stove top. Once oil is heated, add chicken breasts, prosciutto, onion, garlic powder, a bit of salt and pepper. Saute together, stirring periodically, for 2 to 3 minutes before adding asparagus, crushed garlic and rosemary. Add chicken stock (or white wine) and cover for 3 or 4 minutes, stirring from time to time, until chicken is cooked (not overdone). (As the chicken is thinly sliced it won't take long to cook. The asparagus should be crisp with a bright colour when the pasta is served.) Add enough pasta for two people. Mix with other ingredients and heat through. This shouldn't take long. Add cheese and melt through pasta, etc. Season with pepper and serve.

FOR CHIVE OIL:
1/2 cup(s) extra-virgin olive oil
1/4 cup(s) chopped fresh chives or 1 tbsp dried
1 teaspoon(s) fresh lemon juice
1/4 teaspoon(s) finely grated lemon peel
FOR POACHED EGGS:
6 tablespoon(s) white wine vinegar or unseasoned rice vinegar
6-12 large eggs
FOR ROSEMARY SALMON:
2 bunch(es) fresh rosemary
1 large red onion, thinly sliced
2 pound(s) salmon fillet, w/skin
2 large lemons, thinly sliced
3 clove(s) garlic, chopped
1/3 cup(s) olive oil
- salt and pepper to taste
FOR ASPARAGUS:
2 pound(s) medium asparagus spears, trimmed
3 tablespoon(s) olive oil
- garlic powder, salt and pepper to taste

Steps:

  • For chive oil- Blend olive oil, chives, lemon juice and lemon peel in blender or food processor until smooth. Season to taste with salt and pepper. (Chive oil can be made 3 hours ahead of time. Cover and chill. Return to room temperature before serving.)
  • For poached eggs- Fill two large bowls with cold water and ice; set aside.
  • Pour enough water into each of two large skillets to reach depth of 1-in. Bring water to a slow simmer over medium heat. Add 3 tbsp vinegar to each skillet.
  • Carefully crack each egg into individual ramekins. Gently slide one egg at a time into simmering water, working in batches of three eggs for each skillet. Cook until whites are just set, about 3 minutes.
  • Using slotted spoon, very gently transfer eggs to bowls with ice water, being careful not to break eggs. (Eggs can be made 1 day ahead. Cover and refrigerate eggs in bowls of ice water.)
  • For rosemary salmon- Preheat oven to 500 degrees. Arrange half of the rosemary sprigs in a single layer in the center of a 13x9x2-in. glass baking dish. Arrange sliced red onion on top of rosemary. Place salmon, skin side down, on top of onion. Sprinkle salmon with salt, pepper, and chopped garlic. Cover salmon with remaining rosemary sprigs. Arrange lemon slices over rosemary. Drizzle olive oil over all and sprinkle with salt. (Can be prepared 8 hours ahead. Cover and refrigerate.)
  • Roast salmon uncovered until just opaque in the center, about 20 minutes. (Roasted onion and lemon slices can be served on the side.)
  • For asparagus- Spread asparagus in single layer on rimmed baking sheet. Drizzle with 3 tbsp olive oil; turn asparagus to coat. Sprinkle with salt, pepper and garlic powder.
  • If using a gas oven, about 14 minutes before salmon is done, place asparagus under the broiler for 6 minutes, turn asparagus over and continue to broil until crisp-tender and beginning to brown, about 6 minutes longer. Divide asparagus among 6 plates. (If using an electric oven, wait until salmon is done, preheat broiler, and broil as instructed.)
  • Remove skin from salmon fillets and place on top of asparagus.
  • If you made poached eggs ahead, pour enough water into each of two skillets to reacha depth of 1-in; bring to a simmer. Using slotted spoon, transfer eggs to skillets; cook 1 minute for soft yolks. Using slotted spoon, place 1 or 2 eggs on top of asparagus and salmon. drizzle chive oil over and around each serving. Pass remaining chive oil separately.
  • NOTE: This is great served as a brunch with champagne, orange juice and sliced sourdough toast.

750g new potato (preferably Jersey Royals), halved
2 large bunches asparagus, woody ends discarded
1 whole garlic bulb, cloves separated
1 tbsp olive oil
1 lemon, halved
small handful rosemary sprigs
8 chicken thighs

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes, asparagus, garlic cloves, oil and lots of seasoning in a large roasting dish (about 30 x 20cm). Squeeze over all the juice from the lemon halves, then cut them into chunks and add them to the dish. Toss everything together, cover the dish with foil, and roast for about 15 mins.
  • Remove the foil and mix through the rosemary. Season the chicken thighs and arrange evenly in the dish.
  • Roast for another 25-30 mins until the potatoes are tender, and the chicken is crisp and cooked through. Serve the dish in the middle of the table for everyone to share.

Steps:

  • Pour enough olive oil into a skillet to coat the bottom; cook and stir onion, garlic, and rosemary over medium heat just until onion is soft, 5 to 10 minutes. Add butter and flour; cook and stir until butter is melted and flour is dissolved, 3 to 5 minutes.
  • Mix broth, white beans, asparagus, cream, salt, and pepper into onion mixture; bring to a boil. Reduce heat to medium, cover skillet, and simmer for 10 minutes. Remove skillet from heat and cool for at least 5 minutes.
  • Pour soup into a food processor or blender no more than half full. Cover and pulse a few times before leaving on to blend for about 3 minutes. Puree in batches until smooth. Pour soup through cheesecloth or strainer.

15 small baby red potatoes
4 fresh rosemary sprigs, soaked in water for 30 minutes
2 tablespoons garlic, chopped
1/4 cup oil, divided
2 bunches asparagus
1 head fennel
1 tablespoon fresh thyme
1/4 cup extra virgin olive oil
2 lemons, juice of
salt and pepper, to taste

Steps:

  • Parboil whole potatoes, with skin on, for about 5-7 minutes. Drain and run under cold water to stop the cooking process.
  • Half each potato and place in a zip-top plastic bag. Drizzle with oil and add chopped garlic and pepper. Seal bag and allow to marinate at room temperature for 20 minutes.
  • Preheat grill to 375°F.
  • Remove potatoes from marinade and pat dry. Place soaked rosemary sprigs on oiled barbecue grate. Place potatoes on top of rosemary, flesh side down. Close lid and leave to smoke for 20 minutes. Make sure rosemary doesn't burn.
  • Meanwhile, trim the woody end of the asparagus. Slice fennel bulb into 1/2 inch pieces, leaving core intact.
  • Drizzle asparagus spears and fennel with oil and season with salt and pepper.
  • Return to the potatoes and remove them from the grill. Discard charred rosemary. Season potatoes with salt and pepper and set aside to cool.
  • Oil the grill again. Place asparagus and fennel on grill.
  • Grill asparagus for approximately 2 minutes, turning when a bright green colour is achieved and golden brown marks appear.
  • Cook fennel for about 1 minute per side or until golden char marks are achieved.
  • Remove asparagus and fennel from the grill and allow to cool.
  • Place asparagus, fennel, and smoked potatoes on a large serving platter. Chill in the fridge for 20 minutes before serving. Drizzle with olive oil and lemon juice, and season with thyme, salt, and pepper.

2 teaspoons capers
1/2 medium red onion, thinly sliced
1 medium tomato, seeded and coarsely chopped (3/4 cup)
1 clove garlic, finely chopped
2 tablespoons lemon juice
1/4 teaspoon sea salt
1/8 teaspoon pepper
3/4-1 pound asparagus, tough ends trimmed
2 fresh rosemary sprigs
2 teaspoons butter
Lemon wedges

Steps:

  • 1. Preheat oven to 400°. Place salmon on a large piece of heavy-duty aluminum foil with at least 2 inches to spare on each end and enough room on the sides to fold over entire fish. 2. In a medium bowl, combine capers, onion, tomato, and garlic. Spoon over salmon. Drizzle with lemon juice and sprinkle with salt and pepper. Top with asparagus spears and rosemary sprigs. Dot with butter. 3. Wrap foil securely around salmon with edges at the top. Place on a baking sheet and cook for 25 minutes or until cooked through. Be careful when opening the foil package; the escaping steam will be quite hot. Serve with lemon wedges.

1/2 loaf potato rosemary bread, cut into 1-inch chunks
1 lb fresh asparagus, woody ends snapped and cut into 1-inch pieces
6 eggs, beaten
2 cups milk (whole milk preferred)
1 cup gruyere cheese, shredded
1 cup swiss cheese, shredded
1 cup parmesan cheese, shredded
1/4 cup fresh chives, finely chopped
1/4 cup fresh parsley, finely chopped
salt and pepper, to taste

Steps:

  • Preheat oven to 375 degrees.Spray bottom and sides of a 13" x 9" x 2" glass baking dish with cooking spray. Place half of the bread cubes in the bottom of the dish. Bring a medium pot of salted water to a boil. Add asparagus and cook until just tender - about 3-4 minutes. Drain and rinse under cool water.
  • In a large mixing bowl, whisk together the eggs, milk, salt and pepper.
  • In a small mixing bowl, combine cheeses. Add chives and parsley and then gently mix.
  • Place half of the asparagus on top of the bread cubes, then half of the cheese mixture.
  • Then put half of the egg mixture on top.
  • Repeat with remaining bread, asparagus, cheese mixture and egg mixture.
  • Make sure the bread cubes are mostly submerged in the egg mixture. If not, press them down.
  • For best results, let mixture rest for 15 minutes before cooking so the bread can absorb the egg.
  • Place glass baking dish on a baking sheet into the preheated oven.
  • Bake 35-40 minutes, until browned and puffed.
