MICROWAVE VEGETABLE CHICKEN CASSEROLE OAMC
This is a great casserole I have been making for years. I have also included the directions for OAMC.

Steps:
- In 3 quart microwave safe casserole dish, mix noodles, water and chicken broth.
- Cover with lid and microwave on high for 6 minutes, stirring once during cooking.
- Add vegetables, onion, chicken and seasonings.
- Cover and microwave on high for 7-9 minutes, stirring once during cooking, until vegetables are hot,crisp and tender and noodles are tender.
- Stir in half of cheese and mix well.
- Sprinkle casserole with remaining cheese.
- Cook, uncovered, on high for 2-3 minutes until cheese is melted.
- To freeze casserole, do not thaw vegetables.
- Cook noodles as directed above and then cool in refrigerator until cold. Add vegetables, onion, chicken, seasonings, and half of cheese; sprinkle with remaining cheese, wrap well, label, and freeze up to 3 months.
- To thaw and reheat, thaw casserole overnight in refrigerator. Microwave on medium for 3-5 minutes, stirring once. Then microwave on high for 1-3 minutes until noodles and vegetables are tender and casserole is thoroughly heated.
CHICKEN BRUSCHETTA CASSEROLE OAMC
A very yummy chicken dish that is super fast and simple to assemble. I think this one is from Cooking Light. This is another that works great as a freezer meal. Assemble, freeze...cook when ready! Note: Chicken builloon changed to 1 teaspoon.

Steps:
- Preheat oven to 400°F.
- Too cook immediately.
- Cube chicken and place in the bottom of a casserole dish.
- Sprinkle the basil, salt, pepper and mozzarella cheese on top of the chicken.
- In a bowl combine the remaining ingredients.
- Layer this mixture over the chicken and cheese.
- Bake uncovered for 30-40 minutes.
- To freeze.
- Cube chicken and place in a quart size freezer bag. Seal.
- Place basil, salt, pepper and cheese in a quart size bag;shake;seal.
- Place stuffing, pepper and Italian seasoning in a quart size bag. Seal.
- Place diced tomatoes, garlic, and bouillon in a quart size bag seal.
- Place all the baggies into a large freezer bag, print the recipe and place inside as well. Squeeze all the air out. Seal; put in your freezer.
- When you are ready to cook, thaw overnight in fridge then follow the cooking instructions. Layer just like stated, adding the tomato mixture last.
- Note: The stuffing will not be a crunchy topping, It absorbs the juices of the tomatoes and has more of a cooked stuffing texture.

- Preheat oven to 350°. Cook pasta according to package directions. Meanwhile, in a large saucepan, heat oil over medium heat. Add chicken, onion, peppers and seasonings; saute until chicken is no longer pink. Add garlic; cook 1 minute longer., In a blender, pulse tomatoes and tomato paste, covered, until blended. Add to chicken mixture. Stir in broth; bring to a boil over medium-high heat. Reduce heat; cover and simmer until slightly thickened, 10-15 minutes. , Drain pasta; toss with chicken mixture. Spoon half of the mixture into a greased 2-qt. baking dish. Sprinkle with half of the cheeses. Repeat layers. , Cover and bake 30 minutes. Uncover; bake until heated through, 15-20 minutes longer.

CHICKEN CAESAR PASTA CASSEROLE
I finally decided to post this. I have made this recipe for years. Last year, I transformed this recipe and created Recipe#195066! I like to use a store-bought roasted chicken and an assorted bag of pasta that has penne, spirals, bowties and shells!! This recipe also works well with tortellini! I can't remember where this recipe originally came from... Enjoy!

- In a large bowl, combine all ingredients EXCEPT croutons and parmesan cheese.
- Pour mixture into a greased, 2-quart casserole dish. Top dish with croutons and parmesan cheese.

- Heat oil in a large skillet.
- Dredge chicken in flour and brown in oil.
- Mix drained mushroom liquid, tomatoes, soy sauce, and garlic in a bowl.
- Add sauce and sliced onions to chicken in skillet.

This is a kid pleaser-very cheesy and topped with pepperoni. It makes 2 large (9x13) casseroles or 4 small ones; I often divide it in fourths and freeze 3. This originally came from TOH's Quick Cooking.

Steps:
- Brown ground beef, onion, garlic and seasoning in oil.
- Drain.
- While beef is browning, cook pasta according to the packaging
- Stir in pasta, spaghetti sauce and 3 cups cheese.
- Place mixture in 2 greased 9x13x2 inch baking pans or 4 square pans.
- Sprinkle with remaining mozzarella.
- Top with pepperoni.
- Cover and freeze up to 3 months.
- To cook now: Bake uncovered at 350 degrees for 25-30 minutes, until heated through.
- To bake frozen casserole: Thaw in refrigerator overnight and bake at 350 for 35-40 minutes, till hot.

Rosalie is my mother-in-law. We had this at her house recently and my picky eater step kids loved it! It's simple to make and can be frozen for OAMC.

Steps:
- Mix chicken, pasta, celery, milk, and mushroom soup together in 13 x 9 pan. Cover and let sit in refrigerator overnight.
- Before cooking, add mixed vegetables and cheese. Bake @ 350 degrees for one hour.
- For OAMC: mix ingredients as above. Put in 1 ziplock for 8 servings, 2 ziplocks for 4 servings. Label and freeze.
- Night before cooking, take out and defrost over night. Place in 13 x 9 pan (8x8 for 4 servings), add drained mixed vegetables and cheese, bake as above.
