Steps:

  • In a blender or food processor, combine mayonnaise, buttermilk, cheese, Worcestershire and garlic powder, and process until smooth. Store in tightly covered jar in the refrigerator until ready to serve. Serve over tossed salad greens.

1 (3 ounce) package cream cheese, softened (may be low fat)
1 1/2 cups mayonnaise (may sub half regular and half low fat)
3/4 cup evaporated milk
1 1/2 tablespoons black pepper, coarsely ground
1 garlic clove, minced (a large one....may substitute 1/4 tsp garlic powder)

Steps:

  • Combine all the ingredients in a medium mixing bowl; beat at medium speed of an electric mixer until blended. Serve dressing over salad greens.

  • Combine the mustard, vinegar, and half the blue cheese in a small bowl. Slowly drizzle in the oil, whisking until the mixture becomes thick; gently fold in remaining blue cheese. Season with salt and pepper.

  • Make dressing:

  • Preheat oven to 400°F. Wrap beets tightly in foil. Bake until tender, about 1 hour 15 minutes. Cool beets; peel and cut each into wedges.
  • Arrange 2 lettuce quarters crosswise on each of 6 large plates. Surround lettuce on each plate with beet wedges. Top with some onion slices and watercress sprigs. Drizzle with dressing, sprinkle with walnuts and serve.

3 firm, shapely Conference pears , peeled, halved and cored, but stalks left on
300ml red wine , such as Merlot
3 tbsp caster sugar
1 cinnamon stick
handful toasted pecan nuts
couple handfuls watercress
1 tsp white wine vinegar
3 tsp olive oil
100g roquefort , crumbled
125ml crème fraîche

Steps:

  • Put the pears in a pan large enough to fit them in a single layer on the base. Pour over the wine and 300ml water, sprinkle over the sugar, then add the cinnamon stick. Put a small saucepan lid on top so the pears stay submerged under the liquid, then simmer for 10 mins until tender, but not mushy. Cool in the liquid, then chill until ready to eat. Can be made the previous day.
  • Make the dressings. First, mix the vinegar and oil with seasoning in a bowl. Make the Roquefort dressing by slowly warming the cheese in a pan with the crème fraîche.
  • Toast the pecans in a dry pan, then set aside. Take the pears from their poaching liquid, slice them three-quarters of the way up from the base toward the stalk end, then fan out on plates. Toss the watercress in the vinegar and oil dressing, pile onto the plates, then sprinkle over the nuts. Pour the warm Roquefort dressing around the pears or serve in shot glasses or mini jugs on the plates for guests to pour themselves.

4 (12-ounce, 1 1/2-inch thick) sirloin New York strip steaks
2 tablespoons butter
2 large yellow onions, thinly sliced
2 tablespoons black peppercorns
Worcestershire sauce, for brushing
Coarse salt
4 to 6 cups mashed potatoes (use leftover mashed or prepared packaged instant)
8 ounces Roquefort, crumbled
2 scallions, greens and whites, chopped
4 slices center cut bacon, chopped
1/2 cup balsamic vinegar
1 (16 ounce) bag triple washed baby spinach leaves
6 large white mushroom caps, sliced
1/4 cup extra-virgin olive oil

Steps:

  • Preheat grill pan to high heat. Remove meat from the refrigerator and unwrap. Let beef stand a few minutes, to take the chill off.
  • Heat a medium skillet over moderate heat. Add butter and sliced onions to a hot pan and season with salt. Saute onions for 25 minutes, stirring occasionally, until onions are caramel in color, tender, and sweet.
  • Meanwhile, place peppercorns in a heavy-duty food storage bag. Hit peppercorns with a small, heavy frying pan to crack them. Baste meat with a little Worcestershire sauce on each side using a pastry brush. Coat steaks on 1 side with cracked black peppercorns. Grill steaks 5 minutes on each side for medium rare.
  • Meanwhile, heat leftover mashed potatoes on high in microwave oven for 5 minutes. If you are using instant potatoes, prepare to package directions and transfer warm potatoes to a mixing bowl. Stir cheese and scallions into the mashed potatoes. Heat a nonstick skillet over moderate heat. Coat the inside of pan with butter to aid in crusting. Spread cheesy potatoes in an even layer in the skillet and allow them to crust and brown on the bottom, 5 to 7 minutes. Cut the potato layer in half gently with a butter knife, careful not to scratch your nonstick surface. Fold one half over top of the opposite making a half moon shaped potato pie with a crusty outside and a cheesy, soft center.
  • While steaks and potatoes cook, brown chopped bacon in the small frying pan you used to crack the peppercorns over high heat. Transfer browned bacon bits to a paper towel lined plate to drain. Wipe out skillet and return to heat. Add 1 /2 cup balsamic vinegar to the pan and bring to a bubble. Reduce heat to low and simmer 1 to 2 minutes, until vinegar is reduced by half and thick. Turn off heat. Pour spinach into salad bowl. Top with bacon and mushrooms. Whisk extra-virgin olive oil into warm vinegar and pour over salad. Toss salad and serve.
  • Season the cooked steaks with a little salt and remove to a carving board. Let the steaks rest for 5 minutes for the juices to redistribute through the meat evenly. If you slice into a hot steak, the juices will run out and the first bite will be the only tasty one.
  • Slice steaks thin against the grain of the meat. Smother steak slices in onions. Cut potato pie into 4 wedges and serve along side steaks with spinach salad.

ROQUEFORT DRESSING

This is my version of the wonderful Roquefort dressing that was served at the Magic Lamp Inn in Cucamonga CA when I worked there as a prep-cook 40-45 years ago. As memory serves, it tastes pretty much like the original and is great on salads and as a dip for French fries, chips, chicken wings, or just about anything else you might want to dip in a blue cheese dressing. You have to start this a day ahead to drain the yogurt.

1 quart nonfat plain yogurt or 1 quart full-fat Greek yogurt, if you have no health problems or if you think the stuff is to die for,the original recipe was for p
8 ounces cream cheese, room temperature
2 cups good quality thick mayonnaise (I always use Hellman's or Best Foods)
4 -6 ounces good quality blue cheese (Maytag or Danish Blue is good)
4 -5 ounces good quality Roquefort cheese, i use societe bee brand if i can find it,if you are on a budget,double up on good blue cheese even r
4 -5 scallions (green onions)
1/2 bunch flat-leaf Italian parsley, stemmed
1/2 small white onion
2 cloves garlic
2 tablespoons Worcestershire sauce
1/4 teaspoon hot sauce
1/2 teaspoon seasoning salt, to taste
1/4 teaspoon fresh ground black pepper, to taste

Steps:

  • The night before you want to make the dressing, line a colander with a wet paper towel, stir the yogurt well, and place in the colander to drain.
  • Cover with another damp paper towel, and allow to drain overnight.
  • If you are a wuss, place the colander in a bowl, and let it drain in the fridge; if not, just leave it in the sink overnight.
  • Yogurt just gets better when in sets at room temperature; it’s a living organism; it doesn’t like the cold any more than you do!
  • The yogurt should have drained down to about 2 cups, more or less.
  • If you are a purist, finely chop the scallions, parsley, white onion, and press the garlic; if not, coarsely chop them, throw them in the food processor, pulse until everything is finely chopped, scraping bowl down once, and transfer to a bowl.
  • At the Magic Lamp, everything but the mayo and seasonings, went through the meat grinder, which still left a little texture.
  • Combine the yogurt, cream cheese, mayonnaise, and blue cheese in a food processor, or whisk until well combined.
  • Crumble the Roquefort or additional blue cheese, add to the processor, and pulse a couple more times, or finely crumble, and whisk into the mixture.
  • Add seasonings, and pulse or whisk until incorporated.
  • Allow to set for at least 30 minutes to allow flavors to develop, taste, and adjust any or all seasonings to taste.
  • If possible, refrigerate overnight before using.
  • Note: If the dressing seems to need ‘something’ after setting, I often stir in a couple splashes of balsamic vinegar.
  • This is definitely not part of the original recipe.
  • Who had ever even heard of balsamic vinegar in the ‘60s?

1 1/2 avocados (preferably California)
2 teaspoons red-wine vinegar
1/2 teaspoon Dijon-style mustard
1/2 teaspoon paprika
1/3 cup vegetable oil
3 cups packed watercress sprigs
1/3 cup crumbled Roquefort

Steps:

  • With a serrated knife cut the zest and pith from the grapefruits and working over a bowl cut the flesh into sections, discarding the membranes and reserving 6 tablespoons of the juice. Peel and pit the avocados and cut them into 12 wedges. In a bowl sprinkle the avocados with 3 tablespoons of the reserved grapefruit juice, coating them thoroughly. In another bowl whisk together the remaining 3 tablespoons reserved grapefruit juice, the vinegar, the mustard, the paprika, and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. In a large bowl toss the watercress with two thirds of the dressing and divide it among 4 salad plates. Top the watercress decoratively with the avocado wedges, drained, and the grapefruit sections, sprinkle the salads with in Roquefort, and drizzle them with the remaining dressing.

1 red onion , thinly sliced
juice 0.5 lemon
6 rashers unsmoked streaky rindless bacon
1 iceberg lettuce , cored
200g cherry tomatoes , halved
1 cucumber , thinly sliced
100g radishes
100ml buttermilk
4 tbsp mayonnaise
50g roquefort or other blue cheese, crumbled
2 tbsp white wine vinegar
1 garlic clove , crushed
small pack chives , finely snipped

Steps:

  • Mix the red onion and lemon juice together in a small bowl, cover and set aside. Cook the bacon in a dry frying pan over a medium heat for 10-15 mins, turning halfway, until very crisp. Drain on kitchen paper, then crumble into tiny pieces and set aside.
  • To make the dressing, put all the ingredients in a bowl, season and whisk until well combined. Cut the lettuce into chunky pieces and place on a platter or in a bowl with the tomatoes, cucumber, radishes and onion. Just before serving, pour the dressing over and sprinkle with the bacon.

1 1/4 cups mayonnaise
3/4 cup salad dressing (Colonel Sanders' Special Dressing)
1/4 cup Worcestershire sauce
1/4 cup onion juice
1/2 cup salad oil
1/4 teaspoon garlic extract
7 ounces crumbled Roquefort cheese

Steps:

  • Mix all ingredients thoroughly except Roquefort cheese.
  • Crumble the cheese and stir into the mixture.
  • Yields one quart.
  • Keeps indefinitely in refrigerator.

1 tablespoon ketchup
2 tablespoons grainy mustard
2 teaspoons sugar
1 teaspoon minced garlic
2 tablespoons fresh lime juice
2 tablespoons balsamic vinegar
1/3 cup extra-virgin olive oil
1 pound skirt steak, trimmed of excess fat and halved crosswise
2 bunches arugula (3/4 pound), tough stems discarded
1/2 cup crumbled Roquefort or other blue cheese (1/4 pound)

Steps:

  • Prepare grill for direct-heat cooking over hot charcoal (high heat for gas); see Grilling Procedure
  • Whisk together ketchup, mustard, sugar, garlic, lime juice, vinegar, oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
  • Pat steak dry and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Oil grill rack, then grill steak, covered only if using a gas grill, turning once, 4 to 6 minutes total for medium-rare.
  • Transfer steak to a cutting board and let rest, loosely covered with foil, 5 minutes.
  • Toss arugula with enough dressing to coat.
  • Thinly slice steak diagonally across the grain. Serve steak over salad, sprinkled with Roquefort.
