ROOT BEER BAKED BEANS



Root Beer Baked Beans image

Number Of Ingredients 17

4 slices bacon, cut into 1-inch pieces
1 large white onion, finely diced
2 garlic cloves, minced
1 tablespoon minced fresh ginger
2 tablespoons tomato paste
Two 12-ounce bottles root beer
1 teaspoon apple cider vinegar
2 teaspoons molasses
1 tablespoon grainy mustard
Hefty pinch red pepper flakes
1/4 teaspoon garam masala, store bought or homemade, recipe follows
Four 14-ounce cans cannellini beans (white kidney beans), rinsed and drained
Kosher salt and freshly ground pepper
3 large cinnamon sticks (if you have the kind you get at Indian stores, it's about 3 tablespoons of cinnamon bark bits)
3 tablespoons whole cloves
1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Set a medium oven-safe pot over moderate heat and add bacon. Cook until most of the fat is rendered out and the bacon is crisp. Prepare a plate with paper towels, and using a slotted spoon, remove the bacon from the pot to the plate. Set about a quarter of the bacon aside, for garnish.
  • Add the onions, garlic and ginger to the pot, and saute until soft and golden. Add the tomato paste and cook until the tomato paste deepens in color, about another minute.
  • Next add the root beer, cider vinegar, molasses, grainy mustard, red pepper flakes and garam masala. Stir to combine. Then add the beans and bacon, and gently stir so the beans don't lose their shape. Taste for salt and pepper, then pop into the oven, uncovered, until the mixture thickens, about 30 minutes. Remove the beans from the oven, let it cool slightly, and sprinkle with reserved bacon and serve.
  • Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using into a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

4 15-ounce cans cannellini beans, drained and rinsed

Steps:

Cook, stirring, until most of the fat is rendered and the bacon is crisp, about 8 minutes; remove to paper towels with a slotted spoon to drain. Add the tomato paste and cook until the color deepens, about 1 more minute. Add the root beer, vinegar, molasses, mustard, red pepper flakes and garam masala to the pot. Stir, then bring to a boil. Add the beans and three-quarters of the bacon and gently stir so the beans don't lose their shape. Reduce the heat to medium low and simmer until slightly thickened, about 15 minutes; season with salt and pepper. Transfer to the oven and bake, uncovered, until thick, about 30 minutes. Let cool slightly, then top with the remaining bacon.

1/2 cup root beer (do NOT use diet)
1/4 cup barbecue sauce (any type)
1/2 teaspoon dry mustard
3 dashes hot pepper sauce

Steps:

  • Cook the bacon with the onion until the bacon is brown and crisp.
  • Add the remaining ingredients and heat to a boil; turn down the heat and simmer, stirring often until slightly thickened, about 20 minutes.

3 slices bacon
1 small yellow onion, diced
2 (16 ounce) cans pork and beans, undrained
1/2 cup root beer (not diet)
1/3 cup barbecue sauce (your favorite brand)
2 garlic cloves, minced
1/2 teaspoon dry mustard
1/8 teaspoon Tabasco sauce

Steps:

  • Cook bacon in a skillet over medium heat until crisp; remove and drain on paper towels, reserving 2 tablespoons drippings in skillet.
  • Crumble bacon and set aside.
  • Sauté diced onions and garlic in hot bacon drippings in skillet over high heat for about 5 minutes or until tender.
  • Remove skillet from heat and add crips bacon, beans, rootbeer, barbecue sauce, dry mustard and Tabasco to the skillet; stir until well combined.
  • Pour bean mixture into a lightly greased 1-quart baking dish.
  • Bake beans, uncovered, at 400°F for 55 minutes or until sauce is thickened.

4 strips thick-sliced bacon, diced
SWEAT:
2 cups diced onions
1 green bell pepper, seeded and diced
1 tablespoons fresh garlic, minced
DEGLAZE:
2 cups root beer
2 cans pinto beans (15-ounces each), drained and rinsed
1 can tomato purée (10.75-ounces)
1/2 cup ketchup
1/4 cup dark brown sugar, packed
2 tablespoons each, Worcestershire sauce and cider vinegar
1 tablespoon prepared yellow mustard
1/2 teaspoon each, Tabasco sauce, root beer extract, and kosher salt
TOPPING, PULSE:
3 slices white bread, buttered
2 tablespoons fresh parsley, minced

Steps:

  • Preheat oven to 425°F. For the beans, cook bacon in a nonstick skillet until crisp; transfer to a paper-towel-lined plate and discard all but 1 tablespoon drippings. Sweat onions, bell pepper, and garlic in drippings over medium heat until soft, 5 minutes. Deglaze skillet with root beer and bring to a boil; cook until root beer nearly evaporated, 10 minutes.
