ROOIBOS, FRESH APPLE, GINGER AND LEMON ICED TEA



Rooibos, Fresh Apple, Ginger and Lemon Iced Tea image

You'll need a good juicer. Rooibos (redbush) is a herb-type plant that only thrives in the Cederberg mountain area, about 200 kms north of Cape Town, South Africa. Its health properties have been increasingly studied and confirmed in recent years and the tea (tisane, or infusion) of rooibos has become popular in Western countries and is available in the herbal tea section of many supermarkets as well as specialty health stores. Babies that grow up in South Africa are often fed rooibos tea from the bottle. It is high in antioxidants and micro-nutrients, and contains no caffeine. Since I live near to where rooibos is grown and I have a newfound love affair with juicing fresh fruits, I want to share this awesome iced tea, packed full of goodness. You won't need to sweeten this iced tea, since there is so much sweetness and deliciousness in the fresh apple juice. The ginger adds zing and has additional health benefits, and the lemon adds a hint of tartness and of course Vitamin C.

800 ml water
6 rooibos tea bags
4 apples, any eating apples are fine but my favourite are Granny Smith apples, green, tart and so very sweet
2 cm fresh ginger, peel included
2 cm fresh lemon, washed, peel included

Steps:

  • Boil water and pour over rooibos teabags in a teapot or jug. You'll see the lovely red colour developing immediately.
  • Allow rooibos infusion to cool down and transfer to fridge, with tea bags remaining - you really want to extract the most out of this healthy tea.
  • Juice apples with ginger and lemon and chill in fridge. (Use freezer for the juice and rooibos to shorten time between making and serving.).
  • To serve, fill each glass with about two-thirds rooibos and one-third juice, adjusting according to your guest's taste for sweetness. Stir and enjoy this healthy iced rooibos tea!

2 rooibos tea bags
2 1/4 cups boiling water
1 cup mango juice
2 teaspoons honey
ice cube

Steps:

  • Place the rooibos teabags in a pitcher and pour in the boiling water.
  • Allow to infuse for 2-3 minutes.
  • Remove the teabags, stir in the honey and leave to cool.
  • Add the mango juice and sweeten the mixture further if necessary.
  • Pour the cool tea over ice and serve.

6 tea bags, Rooibos
1 lemon, sliced
20 mint leaves
sugar, to taste
1 gallon boiling water

Steps:

  • Place teabags, lemon, mint leaves and sugar in a large pot, pour boiling water onto this and leave to steep.
  • Stir occasionally until cold.
  • Remove tea bags when tea is cold and refridgerate.

Rooibos tea (known in Britain as Redbush), grown in South Africa is naturally caffiene free and low in tannins so it's healthier and doesn't have the heavy tannin taste that puts me off most regular teas. You can also buy Organic Rooibos which is even better. This iced tea lasts for ages in the fridge and it's really light and refreshing!

8 rooibos tea bags
4 stalks mint
1 lemon
1 orange
2 slices ginger
1 tablespoon honey (optional)

Steps:

  • Cut the orange and lemon into 4 thick slices each.
  • Put all the ingredients into a glass jug and cover with boiling water.
  • Leave to stand for 30 minutes.
  • Strain, lightly squeezing the excess liquid from the teabags, fruit and mint.
  • Pour strained tea into a 2L container and top up with cold water.
  • Serve over ice with a little sugar syrup (if you like it sweeter) and a few slices of mixed citrus fruit (if you want to show off) -- .

Will keep for several days in the refrigerator. *Editing after Mikekey's review...I'm not sure if this is supposed to be a weak tea or not but I'm sure it's easily adjusted to taste. 2 -6 rooibos tea bags
1 -3 ceylon tea bag
1 -3 forest fruit tea bag
4 cups boiling water
1 cup sugar (more or less to taste)
4 teaspoons honey (more or less to taste)
8 cups cold water
8 cups ice cubes
3 tablespoons fresh lemon juice
1 lemon, sliced
1 orange, sliced

Steps:

  • Place the teabags in a teapot or pitcher and cover with the boiling water.
  • Brew the tea for 2 minutes then remove the teabags.
  • Dissolve the sugar and honey in the hot tea.
  • Add the cold water, ice and lemon juice to taste.
  • Serve in a pitcher with the lemon and orange slices.
