4 skinless, boneless chicken breast halves
salt and pepper to taste
1 tablespoon olive oil
1 tablespoon butter
1 (14 ounce) can marinated quartered artichoke hearts, drained, liquid reserved
1 cup sliced fresh mushrooms
1 cup white wine
1 tablespoon capers

Steps:

  • Season chicken with salt and pepper. Heat oil and butter in a large skillet over medium heat. Brown chicken in oil and butter for 5 to 7 minutes per side; remove from skillet, and set aside.
  • Place artichoke hearts and mushrooms in the skillet, and saute until mushrooms are brown and tender. Return chicken to skillet, and pour in reserved artichoke liquid and wine. Reduce heat to low, and simmer for about 10 to 15 minutes, until chicken is no longer pink and juices run clear.
  • Stir in capers, and simmer for another 5 minutes. Remove from heat; serve immediately.

Garlic Chicken Roll-Ups image

1 stick (8 tablespoons) unsalted butter, at room temperature
1 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley
2 cloves garlic, grated or minced
Kosher salt and freshly ground black pepper
10 ounces sliced baby bella mushrooms
1/2 baguette, cut into 1/4-inch rounds
4 boneless, skinless chicken breasts, halved lengthwise and pounded 1/4 inch thick
1 cup grated mozzarella
1/4 cup mayonnaise
1/2 cup grated Parmesan
4 cups baby spinach
1 pound asparagus, steamed, blanched or sauteed, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the butter, basil, parsley and garlic in a small bowl. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Heat a 9- or 10-inch cast-iron skillet over medium-high heat. Melt 2 tablespoons of the compound butter in the skillet. Add the mushrooms and cook, stirring occasionally, until the mushrooms are browned and have released their liquid, 3 to 4 minutes. Transfer the mushrooms to a bowl and set aside.
  • Melt 2 more tablespoons of the compound butter in the skillet. Remove from the heat and cover the bottom of the skillet with baguette rounds. Place in the oven and bake until the bottoms are browned and toasted, 15 to 20 minutes.
  • Meanwhile, place the chicken breasts flat on a work surface. Sprinkle both sides lightly with salt and pepper. Mix together the mozzarella, mayonnaise and 1/4 cup of the Parmesan in a medium bowl. Spread a heaping tablespoon of the mixture on a chicken breast with a spatula or spoon. Top the mixture with 6 to 7 spinach leaves and a few mushrooms. Roll up the chicken, starting with the narrowest side to create a short, thick roll. Cut the roll in half crosswise. Repeat with the remaining chicken breasts and filling.
  • Remove the skillet from the oven. Flip the baguette rounds. Arrange the chicken cut-side up on top of the toasted baguette rounds. Add a few pats of compound butter on top of the chicken. Sprinkle the rounds with the remaining 1/4 cup Parmesan and bake until the chicken is fully cooked, 40 to 45 minutes.
  • Top the asparagus with any remaining compound butter and serve with the roll-ups.

This recipe takes inspiration from Chinese-style cabbage rolls. The filling is made of a savory mix of mushrooms, chicken and ham.

4 dried Chinese black mushrooms
1 skinless, boneless chicken breast, diced
2 ounces boiled ham, finely diced
1 teaspoon minced peeled ginger
Kosher salt
2 teaspoons Chinese rice wine or dry sherry
1 tablespoon toasted sesame oil
1 teaspoon soy sauce, plus more for dipping
1 tablespoon cornstarch
1 large egg white
4 scallions, halved lengthwise and thinly sliced
1/4 cup finely diced jicama
1 large head napa cabbage
Vegetable oil, for frying

Steps:

  • Soak the mushrooms in hot water for 30 minutes; drain. Remove the stems, then dice the caps and place in a food processor. Add the chicken, ham, ginger, 2 teaspoons salt, rice wine, sesame oil, soy sauce, cornstarch and egg white; pulse 3 or 4 times to form a coarse paste. Stir in the scallions and jicama. Cover and chill for 30 minutes.
  • Cut the top 3 or 4 inches off the cabbage and separate the leaves (reserve the bottom for another use). Place a heaping tablespoon of filling in the center of each leaf and roll up to enclose the filling. Place seam-side down on a plate.
  • Heat 1/4 inch of oil in a large skillet over medium heat. Add the rolls and fry until the chicken is cooked through and the cabbage is golden, about 2 minutes per side. Drain on paper towels, then serve with soy sauce.

2 boneless skinless chicken breast halves (6 ounces each)
1/2 cup fresh baby spinach, chopped
1/4 cup shredded part-skim mozzarella cheese
2 tablespoons butter, divided
1/4 cup seasoned bread crumbs
1 tablespoon all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup chicken broth
1/4 cup milk

Steps:

  • Flatten chicken to 1/4-in. thickness; layer with spinach and cheese. Roll up and secure with toothpicks. In a shallow microwave-safe bowl, melt 1 tablespoon butter. Place bread crumbs in another bowl. Dip chicken in butter, then roll in crumbs. , Place seam side down in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 375° for 30-35 minutes or until chicken juices run clear. , In a small saucepan, melt remaining butter. Stir in the flour, salt and pepper until smooth. Gradually add broth and milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Discard toothpicks from roll-ups; serve with sauce.
