ORANGE ROMAINE SALAD

Romaine lettuce and orange slices are tossed with a light honey vinaigrette.

¼ cup red wine vinegar
¾ cup vegetable oil
1 tablespoon honey
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup chopped green onion
1 large head romaine lettuce, torn into bite-size pieces
3 oranges, peeled and thinly sliced

Steps:

  • In a small container with a tight-fitting lid, combine the vinegar, oil, honey, salt, pepper and green onion. Close the lid, and shake vigorously to blend.
  • Place the romaine lettuce into a large serving bowl. Sprinkle with dressing and toss to coat. Add orange slices and toss gently. Serve immediately.

2 tablespoons tarragon vinegar
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce

10 cups torn romaine
1 cup (15 ounces) mandarin oranges, drained
2 celery ribs, chopped
2 green onions, sliced
2 tablespoons minced fresh parsley

Steps:

  • In a small bowl, whisk the first six ingredients until blended. In a large bowl, combine remaining ingredients. Drizzle with dressing; toss lightly to coat.

I found this recipe in a cookbook of blue-ribbon winners from Nashville, Tennessee cooking contests. The combination of oranges and steak sauce with romaine combine to make an unusual but delicious recipe. We love it!

1 small head romaine lettuce, torn into bite-size pieces (or a bag of pre-washed and chopped romaine)
1/2 cup orange juice
2 teaspoons A.1. Original Sauce
1 teaspoon lemon juice
1 teaspoon dried dill
1/4 teaspoon celery salt
1/2 cup good quality olive oil
2 small oranges, peeled and separated into segments or 1 (11 ounce) can mandarin oranges, drained
1/2 cup pecan halves, toasted
1/4 cup crumbled feta cheese

Steps:

  • Place lettuce in a large salad bowl. In a small bowl, combine orange juice, steak sauce, lemon juice and seasonings; mix well.
  • Gradually add oil, whisking constantly. Pour 1/2 cup of the dressing over lettuce; toss to coat. Add oranges, nuts and cheese; gently toss. Serve remaining dressing on the side, for those who want to add more salad dressing.

2 oranges

2 tablespoons olive oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
6 cups shredded romaine lettuce
2 scallions, thinly sliced

  • With a paring knife remove the skin and pith from the oranges.
  • Working over a large salad bowl to catch the juices, cut out the orange segments. Set aside.

6 slices bacon
⅓ cup apple cider vinegar
¾ cup white sugar
½ red onion, coarsely chopped
½ teaspoon dry mustard powder
¼ teaspoon salt
½ cup vegetable oil
1 teaspoon poppy seeds
10 cups torn romaine lettuce leaves
1 (10 ounce) can mandarin orange segments, drained
¼ cup toasted slivered almonds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  • To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.
