This jam roly-poly is simple to make, comforting and sure to bring back memories of traditional school dinners

50g salted butter, cold and cut into chunks, plus extra for greasing
250g self-raising flour, plus extra for rolling
1 vanilla pod, seeds scraped out
50g shredded suet
150ml milk, plus a drop more if needed
100g/4oz raspberry or plum jam, or a mixture
custard, to serve

Steps:

  • Put a deep roasting tin onto the bottom shelf of the oven, and make sure that there's another shelf directly above it. Pull the roasting tin out on its shelf, fill two-thirds with boiling water from the kettle, then carefully slide it back in. Heat oven to 180C/160C fan/gas 4. Tear off a large sheet of foil and greaseproof paper (about 30 x 40cm). Sit the greaseproof on top of the foil and butter it.
  • Tip butter, flour and vanilla seeds into a food processor; pulse until the butter has disappeared. Tip into a mixing bowl. Stir through the suet, pour in the milk and work together with a cutlery knife until you get a sticky dough. You may need a drop more milk, depending on your flour.
  • Tip the dough out onto a floured surface, quickly pat together to smooth, then roll out to a square roughly 25 x 25cm. Spread the jam all over, leaving a gap along one edge, then roll up from the opposite edge. Pinch the jam-free edge into the dough where it meets, and pinch the ends roughly, too. Carefully lift onto the greased paper, join-side down (you might find a flat baking sheet helpful for this), loosely bring up the paper and foil around it, then scrunch together along the edges and ends to seal. The roly-poly will puff quite a bit during cooking so don't wrap it tightly. Lift the parcel directly onto the rack above the tin and cook for 1 hr.
  • Let the pudding sit for 5 mins before unwrapping, then carefully open the foil and paper, and thickly slice to serve.

The cylindrical shape of the roly-poly recalls the days when puddings were cooked in cloths instead of bowls. The pudding is a sheet of dough that has been slathered with jam or marmalade, rolled up, and then baked on a rack in a pan filled with hot water.

2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces, plus more softened for parchment paper
3/4 cup whole milk
3/4 cup homemade or good-quality store-bought raspberry jam
3 tablespoons very finely chopped semisweet chocolate (optional)
Creme Anglaise (optional), for serving

Steps:

  • Pulse flour, sugar, baking powder, and salt in a food processor until combined. Add butter, and pulse until pieces are no larger than peas. Add milk; process until a soft dough forms. Place dough on plastic wrap, and pat into a rectangle; wrap in plastic. Refrigerate 30 minutes.
  • Preheat oven to 400 degrees. Place a roasting rack in a large roasting pan. Butter a 21-inch piece of parchment paper; set aside. Bring a large pot of water to a boil.
  • Turn out dough onto a lightly floured surface. Roll out to slightly thicker than 1/8 inch. Cut into a 15-by-12-inch rectangle. Spread jam over dough, leaving a 1-inch border. Sprinkle chocolate over jam if desired. Fold short sides of dough in by 1 inch. Roll lengthwise to form a cylinder, brushing off excess flour. Pinch ends and along length of cylinder to seal.
  • Place seam side down in center of buttered side of parchment. Bring long sides of parchment together at top, and make a 1/2-inch fold. Fold over again, and seal. Tuck ends under. Repeat with foil, folding sides together and twisting ends.
  • Place wrapped cylinder on rack in pan. Add enough boiling water to come about 1 1/2 inches up sides of pan (water should not reach pudding). Transfer to oven; bake 1 hour, adding boiling water occasionally to maintain level. Loosely tent with foil; bake until an instant-read thermometer inserted into center of pudding registers 180 degrees, about 30 minutes.
  • Transfer pudding to a wire rack, and let cool 20 minutes. Remove foil and parchment, and slice. Serve warm, with creme anglaise if desired.

1/2 pound fresh rhubarb, cut crosswise into 1/2-inch-thick slices (about 2 cups)
1/2 cup sugar
1 tablespoon water
1/2 cup raspberry jam
Dough:
2 cups all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
10 tablespoons (1 1/4 sticks) frozen unsalted butter
2/3 cup (or more) ice water
1 tablespoon whipping cream beaten with 1 tablespoon sugar (for glaze)
Vanilla Custard Sauce

Steps:

  • For filling:
  • Combine rhubarb, sugar, and 1 tablespoon water in medium saucepan. Stir over medium heat until sugar dissolves. Cover; cook until rhubarb softens to thick pulp, stirring often, about 8 minutes. Mix in jam; cool. do ahead Can be made 1 week ahead. Cover; chill.
  • For dough:
  • Sift flour, sugar, baking powder, and salt into large bowl. Using large holes on box grater, grate frozen butter into bowl; stir to blend. Cover and freeze at least 15 minutes. DO AHEAD: Can be made 1 day ahead. Keep frozen.
  • Preheat oven to 400°F. Line large rimmed baking sheet with parchment paper. Add 2/3 cup ice water to flour mixture, tossing until soft dough forms, adding more ice water by tablespoonfuls if dough is stiff. Transfer to lightly floured surface; knead gently 5 or 6 turns (butter should remain in firm pieces). Roll out dough to 12x9-inch rectangle. Spread 6 tablespoons filling over dough, leaving 1-inch plain border on all sides. Starting at 1 long side, roll up jelly-roll style; seal seam. Place seam side down on prepared sheet. Seal ends. Brush glaze over pastry.
  • Bake pastry until golden (jam may leak out), about 30 minutes. Cool pastry briefly.
  • Cut roly-poly crosswise into 6 to 8 rounds. Serve warm with Vanilla Custard Sauce and remaining filling.

This is my husband's favorite dessert, and I have to admit to having a fondness for it myself. We love it warm with hot custard sauce. It's one of those economical desserts made up from things most people readily have in their cupboards. More comfort food.

2 cups self raising flour, sifted
125 g butter, roughly chopped
2 tablespoons caster sugar
50 ml milk
50 ml water
2/3 cup raspberry jam
1 tablespoon milk, extra

Steps:

  • Preheat the oven to 350*F (180*C).
  • and line a baking tray with baking paper.
  • Sift the flour into a large bowl and add the butter.
  • Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs.
  • Stir through the sugar.
  • Add the milk and 50 ml water, and stir with with a flat bladed knife to make a soft dough.
  • Turn onto a lightly floured surface and gather together to form a smooth dough.
  • On a large sheet of non stick baking paper, roll the dough into a rectangle about 13.
  • 5 inches by 9 inches.
  • Spread with the raspberry jam, leaving a 1/2 inch border around the edge.
  • Roll up lengthwise like a jelly roll (swiss roll) and place on the prepared tray, seam side down.
  • Brush with extra milk and bake in the oven for about 35 minutes, until golden and cooked through.
  • Leave to stand a few minutes, then cut into thick slices, using a serrated knife.
  • Serve warm with custard.

175g fresh cranberries (or frozen, thawed)
1 tbsp icing sugar
2 tbsp cranberry sauce or jelly
300g self-raising flour , plus extra for dusting
140g dried suet
85g caster sugar
finely grated zest 1 orange
175-200ml milk
custard , to serve

Steps:

  • To make the filling, warm the cranberries and icing sugar together in a saucepan until the fruits begin to soften. Increase the heat, so the juices boil and become jammy. Pour the mixture into a bowl, then stir in the cranberry sauce or jelly. Leave to cool. Butter and lightly flour a large sheet of greaseproof (about 40 x 30cm), and sit it on a bigger sheet of foil. Put a steamer on to simmer.
  • For the dough, mix together the flour, suet, caster sugar and orange zest with a wooden spoon. Stir in some milk until the mixture reaches the consistency of a soft pastry. Gather together into a ball, but don't overwork or it will toughen.
  • On a lightly floured surface, roll the dough into a rectangle about 22cm x 25cm. Spread with the cooled cranberry mix, leaving a 2cm border around the edge. Moisten the border with cold water or milk before rolling into a cylinder. Start by tucking over the border of one of the short ends, then lift as you roll (see step 1, click photo above) so the jam doesn't get squeezed out. With the long join underneath, lay the roly-poly in the centre of the parchment paper. Fold over the long paper and foil edges to seal, leaving enough space above the pudding to allow it to rise. Squeeze the paper ends together tightly to seal them.
  • Lay the parcel in the steamer over the simmering water, cover and steam for 1¼-1½ hrs, until firm to the touch. Rest for a min or two before unwrapping, slicing and serving. Vanilla custard is the perfect accompaniment and the roly-poly is best eaten as soon as it is made.

3 teaspoons baking powder
1 teaspoon salt
¼ cup shortening, chilled
.66 cup cold milk
2 cups cherries, pitted and halved
¾ cup white sugar
½ teaspoon ground cinnamon
2 teaspoons grated lemon zest
2 tablespoons butter, melted

Steps:

  • To make dough: In a medium bowl, sift together flour, baking powder and salt. Cut in shortening with a pastry blender or two knives, until mixture resembles coarse crumbs. Stir in milk, a little at a time, and mix well. Knead briefly. Set aside.
  • For filling: In a medium bowl, stir together cherries, sugar, cinnamon and lemon zest until well mixed.
  • On a floured surface, roll the dough into a rectangle 1/4 inch thick. Brush with melted butter. Spread the cherry filling evenly over the surface of the dough, leaving 1/2 inch around the edges. Roll up the dough, starting at a short end, and pinch together all the edges so that the juice will not escape. Wrap roll in a kitchen towel or cheesecloth and tie loosely.
  • Place in a steamer or colander over boiling water, cover and steam for 90 minutes, until dough is firm. Remove cloth, slice and serve.

This is how my mother (who hates cooking) always made roly poly, which is usually made with a suet pastry. I still remember it fondly - we had it with custard after Sunday lunch.

4 ounces butter or 4 ounces margarine, cold
1 teaspoon baking powder
2 -4 tablespoons golden syrup or 2 -4 tablespoons jam
1/2 cup sugar
1 cup warm water

Steps:

  • Preheat the oven to 375°F.
  • Mix the flour and baking powder and rub in the butter/margarine.
  • Using cold water, make the mix into a pastry.
  • On a floured board, roll the pastry out into a rectangle about 1/4 inch thick (it cooks in a deep dish, so make sure the width is small enough to fit in the dish).

NANNY'S NURSERY BAKED JAM ROLY POLY PUDDING



Nanny's Nursery Baked Jam Roly Poly Pudding image

One of the mainstay recipes of Nanny's culinary repertoire for Nursery puddings, a classic British baked Jam Roly Poly - you cannot beat it! And, not just for children either, but "big" children, especially men love this pudding with lashings of custard! This pudding can be steamed as well as baked, but I much prefer the baked version for taste and ease. If you find shredded suet hard to obtain, put a block of butter in the freezer and grate it when it has frozen - this is the best substitute I know - it's the small grains or flakes of suet/butter that gives the pastry its rise and texture. I find the best jams for this delectable pudding are raspberry, plum and High Dumpsy Dearie; I have this recipe posted on Zaar: Recipe #253728. However, any other jam would be fine, depending on what you have available, and golden syrup is also delicious. Feel free to use vegetarian shredded suet as I often do, it is lighter than shredded beef suet, although not as traditional.

  • Preheat oven to 200°C/400°F/Gas Mark 6.
  • Grease/line a large rectangular baking tray - about 12 x 9 inches.
  • In a large bowl, mix the flour, suet and salt together.
  • Add sufficient cold water to make a pliable dough.
  • Turn the dough out onto a floured board, and knead gently.
  • Roll out the pastry into a rectangle of about 10 x 8 inches.
  • Spread the surface of the rolled pastry with the jam of your choice, to within 1 inch of the border.
  • Moisten the edges of the pastry with some water, and roll it up loosly like a Swiss Roll, starting at the narrow end.
  • Press the edges together firmly to seal and gently lift onto a greased/lined baking tray - with the join UNDERNEATH the Roly Poly.
  • Bake for about 30-35 minutes until golden brown.
  • To Steam:.
  • Loosely wrap in greaseproof paper and foil, and steam for 1 1/2 hours.
  • To Serve:.
  • Serve hot, cut into slices and with custard or cream.

This is a good old-fashioned recipe. I think from what I could gather from my Mother and Grandmother, Australians made Jam Roly Poly from left over savoury, usually, or sweet pastry. The purpose was not to waste anything, especially during and after the war years. If you have left over pastry you can use that instead of the recipe below. This was a recipe that my Mum used when she wanted to fill the stomachs of the stockmen and shearers. Warning the Roly Poly it will caramelise. Do not use the glaze with you are making a Roly Poly from left over sweet pastry.

4 ounces sifted plain flour
1/4 teaspoon baking powder
2 ounces butter (lard use to be the thing to use back in the outback instead of butter)
2 ounces butter
4 ounces sugar
4 fluid ounces water

Steps:

  • Preheat your oven to 450 degrees F In a medium sized bowl, combine the sifted plain flour, baking powder and butter into a dough.
  • Work into a dough with spatular.
  • Knead into a dough.
  • Turn onto a floured board.
  • Roll out into a rectangle and spread jam (jelly) of your choice.
  • Spread almost to the edge of the pastry.
  • Roll up starting from the short edge of the rectangle and place into a greased baking dish.
  • Then into a saucepan combine the butter, sugar and water.
  • Stir over a medium heat on the stove until the mixture has melted.
  • Pour mixture over the top of the Roly Poly place in an oven at 450 degrees for 10 mins then 350 degrees for 20 minutes.
  • Watch the Roly Poly to make sure it does not burn.
  • It will carmelise.
  • Service with either, ice cream, custard or cream.

6 tablespoons thick strawberry jam
2 teaspoons unsalted butter, melted
Custard sauce

Steps:

  • Fill a large heavy pot (at least 10 inches across, with a tight-fitting lid) with 1‚ inches water. Make a platform for pudding by setting metal cookie cutters or egg-poaching rings in bottom of pot.
  • Center a 10- by 8-inch sheet of wax paper or parchment paper on top of a 14-inch square of heavy-duty foil with a short edge toward you.
  • Roll out dough on a lightly floured surface to form a 10- by 6-inch rectangle. Spread jam over dough, leaving a ‚-inch border around edges, and brush border with water. Starting with a short side, roll up dough to form a 6-inch log. Gently pinch seam to seal.
  • Center log, seam side down, on wax paper and brush with melted butter. Fold short sides of wax paper loosely over log and wrap log loosely in foil, crimping edges together over top to seal completely and leaving space in package for pudding to expand slightly.
  • Bring water in pot to a boil and set mold on platform. Steam pudding, covered, over simmering water 1 1/2 to 2 hours (add more boiling water to pot if necessary), or until golden and puffed. Transfer pudding in foil to a rack and let stand 5 minutes.
  • Unwrap pudding and gently slide onto a platter. Slice and serve immediately with custard sauce.

4 ounces cream cheese, softened

Steps:

  • Preheat oven to 375°. Line bottom and sides of a greased 15x10x1-in. baking pan with parchment; grease parchment., Beat eggs on high speed until thick and pale, about 5 minutes. Gradually beat in sugar until well mixed. Reduce speed to low; beat in water and vanilla. In another bowl, whisk together flour, baking powder and salt; add to egg mixture, mixing just until combined., Transfer batter to prepared pan. Bake until cake springs back when lightly touched, 10-12 minutes. Cool 5 minutes. Invert onto a kitchen towel dusted with confectioners' sugar. Gently peel off parchment. Roll up again, without towel; trim ends if needed. Place on a platter, seam side down., For glaze, heat butter in a small saucepan over medium-low heat until foamy and golden, 6-8 minutes. Remove from heat. Stir in confectioners' sugar and vanilla, then add cream 1 tablespoon at a time, stirring well, until mixture reaches a pourable consistency. Slowly pour glaze over top of cake, allowing some to flow over sides. If desired, top with walnuts. Refrigerate, covered, at least 2 hours before serving.

You must have this at hand, as it is easy and quick and a delight, served as is or with ice cream or custard. One shows how to roll up the dough, and the 2nd what the pudding and sauce look like before going into the oven.

2 cups flour (500 ml)
3 teaspoons baking powder (15 ml)
1 teaspoon salt
1/2 cup butter (1 stick or 125 g or 4 oz)
2 eggs, beaten
milk, a few tablespoons, see instructions
1 teaspoon vanilla
apricot jam
1 1/2 cups boiling water (375 ml)
1 cup sugar (250 ml)
2 tablespoons butter (30 ml)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 deg F/180 deg Celsius.
  • Grease a suitable oven dish, like a rectangular Pyrex dish.
  • Mix the flour, baking powder and salt, and rub in the butter. (Can be done in a processor, also the next step).
  • Add the beaten eggs, and then just enough milk, tablespoon by tablespoon, to make a fairly firm dough.
  • It's easy to watch in the processor: as soon as a firm ball forms which is not sticky, but soft, the dough is ready.
  • Roll the dough out quite thinly -- on a surface sprinkled with flour -- and form a rectangle, by cutting off bits and adding it on again -- you know how.
  • Spread the dough with apricot jam.
  • From one of the LONG sides, roll it up like a swiss roll.
  • Cut this roll into 1 inch slices, using a serrated knife such as a bread knife. The jam WILL ooze out.
  • Pack the slices, cut sides up, closely together, in the greased dish. Scoop the jam which oozed out on the surface you used, and just plonk back on to these rolls.
  • In a pot, mix the boiling water (from your kettle), sugar, butter and vanilla and stir until sugar dissolves.
  • With a tablespoon, ladle evenly over the slices of pudding, but beware: you will have more sauce than the baking dish can take. Usually you'll be left with about 3/4 cup. KEEP IT.
  • Bake for about 40 - 45 minutes.
  • When the sizzling pudding comes out of the oven, carefully pour the extra sauce over the centre slices: I find that, when baking, the sauce tends to pool on the sides.
  • Now the hot pudding will absorb much of the leftover sauce in seconds. Use as much or as little as you like.
  • Serve hot, with custard, ice cream or sweetened whipped cream.

Grandma would also steam or boil this pudding. She made a large pleat in some greaseproof paper or a clean tea towel to allow for expansion. Then, she wrapped the pudding loosely, tying each end with some kitchen string (like a christmas cracker), She then boiled or steamed the pudding for 2 hours until cooked. If you find shredded suet hard to obtain, put a block of butter in the freezer and grate it when it has frozen.

175 g self raising flour
1 pinch salt
75 g suet, shredded or 75 g frozen block butter, grated
5 tablespoons jam

Steps:

  • Preheat the oven to 200oc/400of/gas 6, place the flour, suet and salt in a large mixing bowl and mix together thoroughly.
  • Make a well in the centre of the mixture. Gradually add a little cold water, mixing until a soft dough forms.
  • Knead the dough lightly until smooth. Turn out the dough onto a lightly floured surface. Roll out to a oblong about 27x23cm/11x9in.
  • Using a palette knife, spread the jam out on the dough leaving a 1 inch border. Carefully roll up the dough from the shorter end. Seal seam with a little cold water.
  • Wrap the roll in a piece of folded greaseproof paper, the wrap in folded foil. Place in a roasting tin, seam side down.
  • Bake the pudding in the oven for 40minutes. Undo the foil and paper 15 minutes before the end of cooking time. Serve hot with custard.

2-1/3 cups confectioners' sugar, divided

White nonpareils, sugar pearls and Red Hot candies

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add milk and vanilla; mix well. Add flour and mix well. Remove 1-2/3 cups dough; tint red. Shape white dough into 12 balls, 3/4 in. each, 48 balls, 1/2 in. each. and 12 balls, 1/4 in. each. Shape red dough into 12 balls, 1-1/4 in. each, and 60 balls, 1/2 in. each., Place the 1-1/4 in. red balls on two ungreased baking sheets for the body of 12 Santas. Attach 3/4-in. white balls for heads. Attach four 1/2-in. red balls to each Santa for arms and legs. Attach 1/2 in. white balls to ends of arms and legs for hands and feet; lightly press together. , Shape remaining 1/2-in. red balls into hats. Attach 1/4-in. white balls to tips of hats. Place inverted chocolate chips or sprinkles for eyes., Bake until set, 12-15 minutes.   • Add up to 30ml of water until it starts to blend together and make a pastry like texture and look.
  • Roll out the pastry so it is flat using flour underneath to stop it sticking !
  • Add the Jam into the middle and fold over or roll over so all the jam is covered by pastry.
  • Paint the pastry with a mixture of egg and milk so it will go nice and brown - bake for about 20 - 30 minutes until it goes a goldeny brown (not too brown though).

150 g fresh mixed berries or 150 g frozen mixed berries
2 tablespoons milk
1 tablespoon demerara sugar
custard, to serve

Steps:

  • Preheat the oven to 160°C.
  • Sift the flour and baking powder into a bowl, then stir through the suet, lemon zest and caster sugar.
  • Slowly add 150ml water, stirring until the mixture is combined.
  • Roll out the dough on a lightly floured board to a 24cm x 36cm rectangle.
  • Spread the jam over, leaving a 2cm border, then sprinkle with berries.

1 cup sugar

2 3/4 c. flour
4 1/2 tsp baking powder
1 1/2 tsp salt
2/3 c shortening
1 cup milk
Filling
2 cups rhubarb, cut in 1/2" pieces
1 1/2 cups sliced fresh strawberries
1/3 cup sugar
1/2 tsp. cinnamon
1 Tblsp. butter

Steps:

  • Combine water and sugar in 9"x13" oblong pan and place over low heat, whisking until sugar is dissolved. Remove from heat and let stand, cooling while you make the dough, etc. Mix flour, baking powder and salt, stir well to blend. Cut in the shortening with pastry blender until mixture resembles coarse meal. Add the milk all at once and stir with fork until all ingredients are moistened. Turn out on lightly floured surface and knead gently about 20 times. Roll dough out to 10"X12" rectangle. Spread evenly with rhubarb and strawberries. Sprinkle with sugar and cinnamon mixture and dot with butter. Roll up lengthwise and seal edge. Cut into twelve 1" slices. Place cut-side down in pan containing syrup mixture. Bake at 450 F for 25-30 minutes. Serve warm with cream or ice cream. Yield: 12 servings.

This is a great appetizer. The name comes from my middle child who thought it up one day when I told her I was making her favorite ham roll ups. These have to chill before slicing so prepare accordingly.

1 (8 ounce) package cream cheese, softened
2 tablespoons prepared Italian dressing
2 tablespoons olives, chopped (green or black)
2 tablespoons pickle relish (I use dill or sweet, depending on my mood)
8 slices ham (oblong lunchmeat type)

Steps:

  • Cream together the cream cheese and dressing.
  • Add the olives and relish and stir well.
  • Spread approximately 2 tablespoons on the ham slice and roll tightly as you would a jelly roll.
  • Secure each roll with 4 toothpicks and chill for 3 hours.
  • Remove from the refrigerator and slice each ham slice into 4 sections leaving a toothpick in each section.
  • Serve cold.
