STUFFED AND ROLLED PORK TENDERLOIN

Sometimes you just have to show off. This is one of my many recipes that looks very impressive to your dinner guests but is, in fact, quite simple and easy to prepare.

1 pork tenderloin
½ bunch flat-leaf parsley, chopped
⅓ cup bread crumbs
¼ cup dried currants
3 cloves garlic, minced
2 sprigs fresh rosemary, chopped
1 egg
2 tablespoons olive oil
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 pinch cayenne pepper
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Remove the flap of meat at the wider end of the tenderloin and trim the last two inches off of the narrow end of the tenderloin; chop trimmings and reserve.
  • Cut from one side of the tenderloin through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book. Cut a few shallow slashes in the meat. Cover the meat with plastic wrap and pound to about 1/2-inch thick. Roll up pounded tenderloin, cover with plastic wrap, and refrigerate to keep cold.
  • Mix chopped pork trimmings, parsley, bread crumbs, currants, garlic, rosemary, egg, olive oil, 2 teaspoons salt, 1 1/2 teaspoons black pepper, and cayenne pepper together in a bowl with a fork until stuffing is well-combined.
  • Unroll tenderloin on work surface. Spread stuffing over tenderloin, leaving a 2-inch border on one of the long-sides. Roll up tenderloin, ending at the 2-inch border; tie meat with twine to secure shape. Season tenderloin all over with salt and black pepper.
  • Heat an oven-safe skillet over high heat until hot. Cook tenderloin in hot skillet until browned, 3 to 4 minutes per side.
  • Cook in the preheated oven until pork is slightly pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer to a plate and let rest for 15 minutes before removing twine and slicing.

6 pork cutlets
6 swiss cheese, slices
12 cantimpalo sausage slices (can get at the deli)
2 garlic cloves, smashed
salt/pepper
2 Tbsp oil...any
1/4 c flour

Steps:

  • 1. salt and pepper each side of the pork cutlets...rub one side with the crushed garlic.
  • 2. place a slice of cheese and 2 of the cantimpalo on each and roll...secure with a toothpick
  • 3. In a skillet heat oil to medium high...coat each one in the flour and brown on all sides...then place a lid a finish cooking on low till cooked through....should be about 10-15 mins...as the cutlets are very thin, don't over cook...
  • 4. I served with rice pilaf and Fufu ( look for my recipe) *note...this can also be made with thin cuts of steak or chicken.

SPINACH & GOUDA-STUFFED PORK CUTLETS

3 tablespoons dry bread crumbs
2 tablespoons grated Parmesan cheese
2 pork sirloin cutlets (3 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
2 slices smoked Gouda cheese (about 2 ounces)
2 cups fresh baby spinach
2 tablespoons horseradish mustard

Steps:

  • Preheat oven to 400°. In a shallow bowl, mix bread crumbs and Parmesan cheese. , Sprinkle tops of cutlets with salt and pepper. Layer end of each with Gouda cheese and spinach. Fold cutlets in half, enclosing filling; secure with toothpicks. Brush mustard over outsides of pork; dip in bread crumb mixture, patting to help coating adhere. , Place on a greased foil-lined baking sheet. Bake until golden brown and pork is tender, 12-15 minutes. Discard toothpicks before serving.

4 green onions, sliced, divided
1 cup cold cooked long-grain white rice
1 can (15 oz.) black beans, drained, divided
6 oz. VELVEETA, cut into 1/2-inch cubes
6 thin pork cutlets (1-1/2 lb.)
1 cup fat-free reduced-sodium chicken broth
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 tsp. oil

Steps:

  • Reserve 3 Tbsp. of the onions for garnish. Combine remaining onions with rice, 1/3 cup of the beans and the VELVEETA; set aside. Spoon about 1/3 cup of the rice mixture down center of each cutlet; roll up tightly.
  • Heat oil in large nonstick skillet on medium-high heat. Add meat roll-ups, placing seam-side down in skillet; cook 8 to 10 min. or until browned on all sides, turning occasionally. Meanwhile, place remaining beans, broth and sour cream in blender; cover. Blend until smooth.
  • Rearrange meat roll-ups if necessary so roll-ups are seam-side down. Cover with bean sauce. Reduce heat to medium; simmer 15 min. or until sauce is thickened and meat is cooked through. (Do not let sauce boil.) Sprinkle with the reserved onions.

1 boneless pork chop (about 1/2 lb)
2 tablespoons cream cheese
2 tablespoons fresh broccoli
2 tablespoons seasoned bread crumbs

Steps:

  • tenderise the pork chop so that it is flattened.
  • add cream cheese to the centre of the pork chop.
  • chop broccoli.
  • place broccoli in a bowl and microwave for 1 minute.
  • once the broccoli has cooled, place it on top of the cream cheese.
  • take one side of the pork chop and place it/pull it on to the other side of the chop.
  • press the ends of the chop together so that the filling doesn't come out.
  • take the breading and put it on a plate.
  • place the pork chop on the breading and cover both sides of the pork chop.
  • place the chop on a greased baking sheet.
  • place in the oven at 350, no higher for half an hour.

I got this recipe from a friend and it is awesome! When I want comfort food, this is the one that I turn to. My husband loves it too! We love the stuffing so much I usually double the recipe for the bread crumb mixture, leave everything else the same. For the bread cubes, French bread works best, not sourdough.

2 tablespoons vegetable oil
4 raw chop with refuse, 113 g; (blank) 4 ounces thick cut pork chops
3 cups day-old bread cubes
¼ cup butter, melted
¼ cup chicken broth
2 tablespoons chopped celery
2 tablespoons chopped onion
¼ teaspoon poultry seasoning
1 (10.75 ounce) can condensed cream of mushroom soup
⅓ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet, heat the oil and brown the pork chops. Place the pork chops in a baking dish.
  • In a bowl, toss the bread cubes, melted butter, chicken broth, celery, onion, and poultry seasoning together. Put heaping mounds of the bread crumb mixture onto the pork chops.
  • Combine the cream of mushroom soup with the water, and pour this mixture over the stuffing and pork chops.
  • Cover and bake for 30 minutes.
  • Uncover and continue baking for 10 minutes longer or until juices run clear. The meat thermometer should read 145 degrees F (63 degrees C).
