MOCHA ROCKY ROAD OATMEAL COOKIES

This is my momma's recipe. These cookies are so unusual and everyone loves them including me. Mom used to take them and share at the nursing home she volunteered at. She makes them around the holidays.

Number Of Ingredients 14

1 c butter
1/4 c brown sugar
1/2 c sugar
2 eggs
1 1/2 tsp vanilla extract
1 Tbsp instant coffee granules
1 Tbsp hot water
1 3/4 c flour
1 tsp baking soda
1/2 tsp salt
2 1/4 c quick cooking oats
1 1/2 c chocolate chips
1 1/2 c chopped recans
1 1/2 c miniature marshmallows

Steps:

  • 1. Heat oven to 350F.
  • 2. Beat butter,sugars until creamy. Add vanilla; beat well. Dissolve coffee granule in hot water. Add to butter mixture; mix well. Add flour, baking soda & salt. Stir in oats, chocolate chips & chopped pecans. Scoop 1 teaspoon of dough and flatten it on on baking sheet. Place 4 marshmallows in the middle and wrap dough around them. Bale for 10-12 minutes.

This is another lost recipe that I'm so grateful to have found. It was published in 1999 in a church cookbook and I recently found the cookbook.

Number Of Ingredients 14

3 c uncooked oatmeal
2 c all-purpose flour
1/2 c malted milk powder
1/2 tsp each: cinnamon, ground ginger, baking soda
1/4 tsp each: ground cloves, nutmeg, salt
3/4 c firmly packed brown sugar
1/2 c granulated sugar
1 c butter, softened
1 tsp vanilla extract
1 large egg
1 c raisins, chopped
1 c miniature chocolate chips
1 c miniature marshmallows
1/2 c pecans, coarsely chopped

Steps:

  • 1. Lightly grease cookie sheets.
  • 2. Combine dry ingredients; mix well and set aside.
  • 3. Beat sugars, butter, vanilla and egg until smooth.
  • 4. Gradually add dry ingredients; blend.
  • 5. Fold in raisins, chocolate, marshmallows and nuts.
  • 6. Form rounded balls of dough from a tablespoon.
  • 7. Place each ball 1-1/2" apart onto prepared cookie sheets.
  • 8. Bake 14 minutes (for chewy cookie) or 17 minutes (for crispy cookies)
  • 9. Remove from oven and let cool on sheet for 1 minute.
  • 10. Remove to wire rack to cool completely.
