We make rocky road-style fudge every Christmas and it's a tradition, but why wait until the holidays for a recipe this good? -Ashley Berry, Montgomery Village, Maryland

1-1/2 teaspoons plus 1 tablespoon butter, divided
2 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
2 cups salted peanuts, plus more for topping
1 package (10 ounces) miniature marshmallows, plus more for topping

Steps:

  • Line a 13x9-in. baking pan with foil, letting ends extend over sides by 1 in. Grease the foil with 1-1/2 teaspoons butter; set aside., In a large saucepan, combine chocolate chips, milk and the remaining butter. Cook and stir over medium heat until mixture is smooth. Remove from the heat; stir in 2 cups peanuts. Place marshmallows in a large bowl; add chocolate mixture and stir well. Spread into prepared pan. Sprinkle with additional peanuts and marshmallows. Refrigerate until firm., Using foil, lift fudge out of pan. Cut into 1-1/2-in. squares.

2 cups semi sweet chocolate chips
¾ cup peanut butter
3 cups mini marshmallows
1 cup walnuts (coarsely chopped)
½ cups peanuts (chopped)

Steps:

  • Line a 9 x 9 inch pan with foil.
  • Melt together the chocolate chips and peanut butter over low heat until smooth.
  • Stir in nuts and remove from heat. Allow to cool 3-4 minutes.
  • Add marshmallows and stir to coat.
  • Spread in pan and refrigerate until firm.

1/3 cup unsalted butter, cut into chunks
1 cup evaporated milk
1 1/2 cups sugar
1/4 teaspoon salt
12 ounces semisweet chocolate, chopped
1/2 cup slivered almonds, toasted
1 cup mini marshmallows

Steps:

  • Combine butter, evaporated milk, sugar, and salt in a medium saucepan. Bring to a hard boil for 5 to 7 minutes, stirring constantly. Remove from heat. Stir in the chocolate until melted and smooth. Fold in the almonds and marshmallows. Pour into an 8 by 8-inch square baking pan. Chill until firm, about 2 to 4 hours. Cut into 12 squares.

I first tried these at my mother in law's place. They were the perfect size for my daughter and she loved them! Great for parties and easy to make too. Use 12 plastic cups (3 oz size)

Number Of Ingredients 6

1 (3 1/2 ounce) package cook and serve chocolate pudding mix
2 1/2 cups milk
1/2 cup chopped peanuts
1/2 cup miniature semisweet chocolate chips
1/2 cup marshmallow creme
12 wooden popsicle sticks

Steps:

  • In a large microwave safe bowl, combine pudding mix and milk.
  • Microwave on high, uncovered, for 6 to 7 1/2 minutes or until bubbly and slightly thickened, stirring every 2 minutes.
  • Cool for 20 minutes, stirring several times.
  • Meanwhile, combine peanuts and chocolate chips and place about 2 tbsp in each plastic cup.
  • Stir marshmallow creme into pudding.
  • Spoon into cups.
  • Insert popsicle sticks into cups and freeze.
