1 package chocolate cake mix (regular size)
1 cup confectioners' sugar
2 tablespoons baking cocoa
6 tablespoons heavy whipping cream
1/2 teaspoon vanilla extract
6 tablespoons caramel ice cream topping
4 cups miniature marshmallows
1 cup chopped pecans

Steps:

  • Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. baking pan. , Meanwhile, for frosting, combine confectioners' sugar and cocoa in a small bowl; whisk in cream and vanilla until smooth. While cake is still hot, drizzle with half of the caramel topping and half of the frosting. Sprinkle with marshmallows; return to the oven for 5 minutes or until marshmallows are softened. , Drizzle with remaining caramel topping; sprinkle with nuts. Drizzle with remaining frosting. Cool on a wire rack.

1 ½ cups all-purpose flour
1 cup white sugar
½ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
5 tablespoons vegetable oil
1 teaspoon vinegar
1 teaspoon vanilla extract
1 cup water
2 (1 ounce) squares unsweetened chocolate, chopped
¼ cup margarine
¼ cup water
1 teaspoon vanilla extract
2 cups confectioners' sugar
1 cup miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, sugar, cocoa, baking soda and salt. Sift once more, then sift again into a 9 inch square pan.
  • Make a well in the center, and measure in the oil, vinegar and vanilla. Pour water over all and mix with a fork until smooth.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the frosting: In a saucepan, combine chocolate, margarine and water. Cook over low heat until melted and smooth. Remove from heat and stir in vanilla and confectioners' sugar. Fold in miniature marshmallows. Spread over cake.

125g salted butter, softened, plus extra for the tin
100ml vegetable oil
125g Greek yogurt
100ml milk
2 tbsp coffee granules, dissolved in 100ml boiling water and cooled (this enhances the chocolate flavour)
2 large eggs
225g light brown soft sugar
200g self-raising flour
1 tsp baking powder
50g cocoa powder
150g biscuits (we used digestives), plus extra for the topping
100g salted butter, cut into cubes
200g dark chocolate, finely chopped
60g golden syrup
80g mini marshmallows, plus extra for the topping
handful of extras of your choice, such as honeycomb pieces, popcorn, nuts, raisins, dried cranberries or glacé cherries (you'll need about 60g), plus extra for the topping

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter the base of a 23cm loose-bottomed cake tin and line with baking parchment. Melt the butter in a small pan over a low heat, then remove from the heat and leave to cool for 3 mins. Whisk the melted butter, oil, yogurt, milk, coffee and eggs together in a large bowl until combined. Whisk the sugar, flour, baking powder and cocoa together in a separate large bowl, breaking up any lumps of sugar with the whisk. Gradually whisk the wet ingredients into the dry until smooth, then pour into the tin. Bake for 55 mins-1 hr until firm to the touch and a skewer inserted into the middle comes out clean with no wet crumbs. Leave to cool completely in the tin.
  • For the rocky road, tip the biscuits into a food bag and bash with a rolling pin until roughly broken up. Melt the butter, chocolate and golden syrup together in a large pan over a low heat, stirring until smooth. Remove from the heat and leave to cool a little.
  • Tip the crushed biscuits, mini marshmallows and any extras into the pan and stir until everything is completely coated in the chocolate mixture. Spoon the rocky road over the cooled cake and smooth with a spatula so the top is completely covered. Sprinkle over some extra biscuit pieces, marshmallows and any other bits you'd like to add. Leave to set at room temperature for at least 2 hrs, or chill for 1 hr to help it set more quickly. Remove the cake from the tin, slice and serve. Will keep in an airtight container in a cool place for up to two days.

2/3 cup (about) water
1 teaspoon vanilla extract
2 cups cake flour
2 cups sugar
1/2 cup (1 stick) unsalted butter, room temperature
2 large eggs
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Rocky Road Frosting
1 1/2 cups miniature marshmallows
1 cup coarsely chopped walnuts

Steps:

  • Position rack in center of oven and preheat to 350°F. Butter two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottom of pans with parchment; butter parchment. Dust pans with flour; tap out excess. Stir chocolate in top of double boiler over simmering water until melted and smooth. Remove from over water. Cool just to room temperature.
  • Pour yogurt into 2-cup measuring cup. Add enough water to measure 1 1/2 cups; whisk to blend. Whisk in vanilla.
  • Combine flour, sugar, butter, eggs, baking soda, baking powder and salt in large bowl. Add yogurt mixture and melted chocolate. Using electric mixer, beat until smooth, occasionally scraping bowl with rubber spatula, about 3 minutes. Divide batter between prepared pans. Bake cakes until tester inserted into center comes out clean, about 25 minutes. Cool cakes in pans on racks 10 minutes. Run small knife around sides of pans to loosen cakes. Invert onto racks; peel off parchment. Cool completely.
  • Place 1 cake layer, flat side up, on platter. Spread 2/3 cup frosting over. Top with second cake layer, flat side down. Spread remaining frosting over top and sides of cake. Press marshmallows around top edge in 1-inch band and 1 inch down sides from top edge of cake. Sprinkle walnuts over center of cake. (Can be prepared 1 day ahead. Cover with cake dome and store at room temperature.)

1 (18.25 ounce) package chocolate cake mix
1 (16 ounce) package prepared chocolate frosting
20 individually wrapped caramels
3 cups miniature marshmallows
1 cup chopped walnuts
2 tablespoons milk

Steps:

  • Bake the cake according to the directions on the box. Use two 8 or 9 inch pans. When the cakes are done, turn them out of the pans. Let them cool for about forty minutes. When the cakes are almost cool, but still slightly warm to the touch, cut small slits in the tops of each layer.
  • Melt about 1 1/2 cups of the marshmallows and the chocolate frosting together in the microwave. Stir together ever thirty seconds or so to keep the sauce smooth.
  • Melt the caramels in the microwave with a tablespoon or two of milk. Stir every twenty seconds or so.
  • Place 1 layer of cake on serving dish. Pour enough of the chocolate frosting mixture over the bottom layer of the cake to cover the top and sink into the slits. It is okay if the frosting drips over the edges. Pour enough of the caramel sauce over the bottom layer to cover it liberally. Sprinkle about half of the nuts and remaining marshmallows over the caramel. Go easy on the marshmallows though, or the top won't sit well on the cake.
  • Place top layer over marshmallows, and pour on the remaining chocolate frosting mixture to cover the top of the cake. Let it drip over the edges and cover the sides of the cake as well. Some of the frosting will pool at the bottom and that's fine.
  • Now sprinkle remaining nuts and marshmallows over the top. Try to get them to stick to the sides as well. I use a lot of nuts and marshmallows on top. Finally, drizzle caramel sauce over the top of the cake.

I don't remember where I found this recipe but when I worked, I took it every Christmas season to people in my department. They loved it and looked forward to it every year. This year I baked it for my husband to take to associates in his department. It was well received. Enjoy!

1 cup chopped walnuts
1 cup seedless raisin
1 cup mini marshmallows
1 (6 ounce) package semisweet chocolate pieces
1 package devil's food cake mix, with pudding in the mix
4 eggs
1 cup mayonnaise (I use Kraft)
1 cup water

Steps:

  • Grease and flour 12 cup fluted tube pan.
  • In small bowl, mix first 4 ingredients.
  • In large bowl with mixer at low speed, beat together cake mix, eggs, real mayonnaise and water just until blended.
  • Increase speed to medium, beat 2 minutes.
  • Stir in nut mixture.
  • Pour in prepared pan, bake at 350 for 50 minutes or until cake tester inserted in center comes out clean.
  • Cool in pan 15 minutes.
  • Remove.
  • Cool on rack.
  • If desired, dust with confectioners sugar.
  • Makes 12 servings.

1 c chocolate hazelnut spread

TOPPING
1/2 c miniature marshmallows
1/3 c honey roasted peanuts
1/4 c milk chocolate chips

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Grease sides and bottom of 8-inch round cake pans with cooking spray. Flour lightly.
  • 3. Blend cake mix, water, oil and eggs in large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes. Add peanut butter chips. Pour batter into pans and bake immediately.
  • 4. Bake for 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cakes cool completely and remove from the pans.
  • 5. In a small bowl, combine marshmallow creme and peanut butter; stir well.

2 c all-purpose flour
1 1/2 c sugar
1 c water
1/2 c unsweetened cocoa
1/2 c butter, softened
3 large eggs
1 1/4 tsp baking powder
1 tsp baking soda

2 c miniature marshmallows
1/4 c butter
3 oz package cream cheese
1 oz unsweetened chocolate
2 Tbsp milk
3 c powdered sugar
1 tsp vanilla
1/2 c coarsley chopped salted peanuts

Steps:

  • 1. Heat oven to 350*. Combine all cake ingredients in large mixer bowl. Beat at low speed, scraping bowl often, until all ingredients are moistened. Increase speed to high. Beat, scraping bowl often, until smooth (1-2 minutes).
  • 2. Pour batter into greased and floured 13x9 baking pan. Bake for 30-40 minutes or until toothpick inserted in center comes out clean. Sprinkle with marshmallows. Continue baking 2 minutes or until marshmallows are softened.
  • 3. Meanwhile, combine 1/4 cup butter, cream cheese, chocolate and milk in 2 qt. saucepan. Cook over medium heat, stirring occasionally, until melted 8-10 minutes. Remove from heat, stir in powdered sugar and 1 t. vanilla until smooth. Pour over marshmallows and swirl together. Sprinkle with peanuts.

There's melted ice cream in the batter! This is an adapted recipe from the Cake Mix Doctor (She used Ben and Jerry's Cherry Garcia). My friends loved this cake so much they all had TWO pieces! It is fluffy and a bit sticky with a light chocolate flavor. I make it in as a sheet cake but I bet it would make a lovely bundt cake! The topping is all mine. Marshmallow cream , hot fudge, nuts--need I say more? Try your own ice cream flavors and let me know how they turn out!

1 (18 1/4 ounce) box white cake mix
2 cups melted rocky road ice cream (you'll need to start out with at least 2 1/2 c frozen ice cream)
3 eggs
1 (7 ounce) jar marshmallow cream
1 (11 3/4 ounce) jar hot fudge, halved
1/2 cup chopped nuts

Steps:

  • Preheat oven to 350°F.
  • Grease and flour 9x13-inch pan (I like to use my glass casserole dish).
  • Place about 2 1/2 cup ice cream in microwave-safe dish then melt in microwave.
  • You may need to add more to get it to 2 cups melted ice cream.
  • Combine cake mix, melted ice cream and eggs; mix on low speed for 1 minute.
  • Scrape down the sides of the bowl and mix on medium another minute or two until well blended.
  • Pour into pan and bake 30-35 minutes or until you can press on the top and it springs back slightly.
  • You don't want it to rise so much that it cracks, you'll have a dry cake.
  • Set on rack until cool or almost cool.
  • Heat the jar of hot fudge.
  • Pour half of the hot fudge onto cake and spread out.
  • Let it soak into the cake.
  • Microwave the marshmallow cream a TINY bit to loosen it up (10-20 seconds).
  • Pour onto the cake and spread out.
  • Drizzle the rest of the hot fudge over the marshmallow cream in stripes, zig zags or swirls.
  • Sprinkle nuts to garnish.
  • Cook time does not include cooling time.

225g self raising flour
2 teaspoons baking powder
4 tablespoons unsweetened cocoa powder
pinch of salt
225g unsalted butter
250g caster sugar
4 eggs, beaten
6 tablespoons buttermilk
2 teaspoons vanilla extract
35 chocolate covered caramels or malteasers
3 tablespoons milk
125g mini marshmallows
100g walnuts, chopped

Steps:

  • preheat the oven to 180 c / 350 f / gas mark 4. Grease 2 20cm round cake tins.
  • for the cake , sift the flour , baking powder , cocoa powder and salt in a bowl. In a seperate bowl , beat the butter untill pale and fluffy. Add the sugar and beat for a further 2 minutes. Gradually add the eggs, beating well after each additon, then stir in the buttermilk and vanilla extract.
  • Stir in the dry ingredients , mixing well. Spoon the mixture into the prepared tins, dividing it evenly, and level the surface. Bake in the oven for 30-35 minutes, or untill firm to touch. Turn the akes out onto a wire rack and leave to cool.
  • Cut small slits into the top of each sponge cake and set aside. For the filling and topping, put the chocolate caramels or malteasers into a saucepan with the milk and 25g of the marshamallows and heat gently untill melted.
  • Pour the chocolate sauce mixture over the cake slices and pour the marshmallows and walnuts over the cake evenly and serve

300g dark chocolate , roughly chopped
100g butter
125g golden syrup
2 tsp vanilla bean paste
125g rich tea biscuits , broken into a mixture of small and large pieces
30g popcorn , sweet and salty
50g rice crispies
150g raisins
1 x 80g bag M&M's Eggs ® (you'll need 25 eggs)
2 tsp multicoloured sprinkles

Steps:

  • Line a 20 x 20cm tin with baking parchment. Melt the chocolate, butter and syrup in a heatproof bowl over a pan of just simmering water, stirring frequently until smooth, or use the microwave, stirring between 30 second blasts.
  • Remove the chocolate from the heat, then stir in the vanilla, biscuit rubble, popcorn, rice crispies and raisins. Mix well until everything is well coated in the chocolate. Transfer to the tin, packing it in and smoothing over the surface. Press the M&M's mini chocolate eggs into the top in rows of five (so that there's an egg for every one of 25 bites), then scatter over the sprinkles, also lightly pressing them in. Chill for at least 2 hours before cutting into 25 squares.
