1 head garlic
1 tablespoon olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the top third of the garlic head off so that the tops of the cloves are exposed. Place the garlic head, unpeeled, into a small ovenproof dish and drizzle with the oil.
  • Cover with foil and bake for 30 minutes. Uncover and bake for 30 to 40 minutes more, until garlic is soft and golden brown.
  • Serve with toasted bread.

2 whole garlic bulbs
1 foot aluminum foil
1 tablespoon olive oil
1/4 cup pine nuts
1 sourdough baguette, cut into 1/2-inch slices
4 ounces strong goat cheese
6 sprigs Italian parsley

Steps:

  • Preheat oven to 400 degrees F.
  • Slice 1/2-inch off the pointed end of the garlic bulb to expose each clove. Place garlic on aluminum foil. Pour 1 teaspoon of olive oil over the top of each bulb and let it sink into the cloves.
  • Wrap foil around garlic bulbs and bake for approximately 1 hour, or until exposed cloves are golden brown.
  • In a dry saute pan over medium-high heat, toast pine nuts for approximately 5 minutes, or until golden brown.
  • Toast baguette slices in oven or toaster oven.
  • To serve, place garlic, cheese, pine nuts and parsley on a serving plate along side crostinis. Instruct guests to extract individual garlic cloves from bulb with a small fork, spread on toast, and top with goat cheese, pine nuts and parsley leaves.

1 head garlic
2 teaspoons olive oil
1 small sourdough baguette (14 inches, cut in 1/2 inch thick slices)
1 tablespoon pine nuts
2 ounces soft fresh goat cheese, cut in 6 rounds
6 sprigs fresh Italian parsley

Steps:

  • Trim tip off garlic head to expose cloves; place head on piece of foil.
  • Drizzle oil over top; wrap in foil.
  • Bake in 400°F oven until cloves are softened and caramelized, about 1 hour.
  • Meanwhile, toast baguette slices on baking sheet in 400°F oven until golden, about 8 minutes.
  • Spread pine nuts on small baking sheet; toast alongside baguette slices until lightly browned, about 5 minutes.
  • To serve, arrange baguette slices, garlic, pine nuts, goat cheese and parsley on serving plate.
  • Using small fork, remove 2 roasted cloves from garlic bulb; spread on baguette slice.
  • Top with goat cheese round, pine nuts and parsley.

1 garlic bulb
1 tsp olive oil

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.
  • Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.

2 tablespoons extra-virgin olive oil, plus more for storing

Steps:

  • Preheat oven to 425 degrees. Cut a thin (1/4-inch) slice from the top of each head of garlic; discard. Place garlic in a small baking dish. Drizzle with oil. Cover with parchment paper-lined foil; roast garlic until soft and golden, about 1 hour and 15 minutes. To store, squeeze out unused cloves into jar and add enough olive oil to cover. Store closed jar in the refrigerator for up to one week.

3/4 cup rice vinegar
2 garlic cloves, minced

1/8 teaspoon cayenne pepper
1 cinnamon stick
1 1/2 pounds Granny Smith apples, peeled, cored, cut into -inch pieces (about 4 cups)
1 cup golden raisins
1 cup diced seeded plum tomatoes
1 tablespoon chopped fresh mint
1 French-bread baguette, cut into 1/3-inch-thick slices

12 ounces soft fresh goat cheese (such as Montrachet), room temperature

Steps:

  • Stir sugar and vinegar in heavy large saucepan over medium heat until sugar dissolves. Add next 4 ingredients and simmer until mixture is syrupy and reduced to 1/2 cup, about 8 minutes. Mix in apples and raisins. Increase heat to high and boil until apples are tender, stirring frequently, about 10 minutes. Cool to room temperature. (Chutney can be made 3 days ahead; cover and refrigerate.) Mix in tomatoes and mint.
  • Preheat oven to 450°F. Arrange baguette slices on baking sheet and brush with olive oil. Bake until golden and crisp, about 8 minutes. Spread each toast with roasted garlic; top with goat cheese and chutney.

GARLIC CROSTINI

I purchased a box of 'garlic chips' the other day. I arrived home only to discover my four dollar box of bread slices were all broken. It was then that I decided I'd simply make my own...less expensive with better flavour. Crostini are multi-use flavoured and baked thin bread slices. I've used them to float cheese in onion soup, broken into giant croutons for salads, and my favourite...as a base for flavourful spreads and appetizers. Don't discount their use plain, as a crunchy snack either. Recipe #415921 is an easy and tasty spread that goes well with these. I recommend using day old baguettes to make slicing easier.

1/4 cup olive oil, I use a mix of regular and light olive oils
1 teaspoon garlic, minced
1 baguette, sliced 1/4-inch - 1/2-inch thick
kosher salt, sprinkling (optional)
fresh ground black pepper (optional)

Steps:

  • Mix olive oil and minced garlic in a heat-proof measuring cup. Microwave at half power for 30 seconds. Set aside.
  • Note: depending on the size of your baguette, you may have to double the garlic oil ingredients.
  • Preheat oven to 375*. Line a large baking sheet with parchment paper.
  • Slice the baguette, on the diagonal, into 1/4" to 1/2" thick slices.
  • Using a pastry brush lightly wipe both sides of the bread slices with garlic oil. Arrange on the baking sheet.
  • Sprinkle (one side only), lightly with kosher salt and black pepper (if using).
  • Bake for 10 minutes. Turn slices over and continue to bake for another 5 - 10 minutes or until golden in colour and crispy. The baking time will depend on the thickness of the slices and the amount of garlic oil used.
  • Remove from the baking sheet and let cool in a single layer on a cooling rack.
  • You can use these immediately, or allow to cool completely for storage in an airtight container.
