Turkey Cutlet Sandwiches with Smoked Paprika Mayo and Roasted Bell Peppers image

2/3 cup mayonnaise
2 teaspoons smoked paprika
1 pound turkey cutlets
4 5-inch-long baguette pieces, halved horizontally, toasted
2 12-ounce jars tricolor roasted bell pepper strips, drained

Steps:

  • Mix mayonnaise and paprika in small bowl.
  • Place cutlets on work surface. Using meat mallet, pound to 1/4-inch thickness. Spread 2 tablespoons paprika mayo over both sides of cutlets. Sprinkle with salt and freshly ground black pepper.
  • Heat heavy large nonstick skillet over medium-high heat. Add turkey cutlets to skillet and cook cutlets until browned and just cooked through, about 3 minutes per side.
  • Spread mayo over cut side of toasted bread halves. Top each bottom half with cutlets, then 1/4 of peppers. Cover with top halves.

8 slices hearty whole grain bread of choice, sliced sandwich style
3 T basil pesto
½ to ¼ lb roasted turkey breast, thinly sliced
1 roasted red bell pepper, stemmed, skinned, seeded, cut into strips
4 slices Colby-Jack cheese
Fresh black pepper, if desired
1 T extra-virgin olive oil

Steps:

  • 1. Arrange slices of bread on a flat work surface. Using a small spoon, divide pesto evenly among one side of slices. 2. Place even amounts of turkey, roasted red pepper strips, and cheese on 4 bread slices. Season with pepper, if desired. Top with remaining 4 bread slices. Lightly brush each sandwich with olive oil. 3. Heat a large skillet over med-high heat. When the skillet is hot, add sandwiches, and cook until bread is lightly toasted and cheese is melted, pressing occasionally with a large metal spatula or bottom of small heavy saucepan, about 4 min per side. Remove sandwiches from pan; slice in half on diagonal, serve immediately.

1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
1/4 teaspoon garlic powder
8 slices sourdough bread, 1/2 inch thick
8 large spinach leaves
1/2 lb sliced oven roasted turkey breast
1/2 cup chopped drained roasted red bell peppers (from 7-oz jar)

Steps:

  • In small bowl, mix mayonnaise, basil and garlic powder. Spread on one side of each bread slice.
  • Layer spinach, turkey and bell peppers on 4 slices of bread. Top with remaining bread.
