SPICY FETA DIP

Number Of Ingredients 5

6 ounces roasted red pepper, drained and dried
1/2 teaspoon Calabrian chile paste
1/4 teaspoon kosher salt
1 clove garlic, grated
8 ounces French feta (or other good-quality feta)

Steps:

  • Add the roasted red pepper, Calabrian chile paste, salt and garlic to the bowl of a food processor. Pulse until the mixture is chunky and evenly chopped. Using your hands, break the feta up into large chunks and add it to the food processor. Pulse the mixture until the feta is incorporated into the pepper mixture. (The mixture should remain slightly chunky.) Refrigerate for at least 30 minutes for the flavors to come together. Serve with crackers, veggies, on sandwiches or burgers. Spicy feta dip will keep, refrigerated in an airtight container, up to 1 week.

4 bell peppers (any color)
1 egg beaten
1 cup crumbled feta cheese
2 tablespoons chopped parsley
1 minced Hungarian hot pepper

Steps:

  • Place peppers on grill and char. Remove from grill and place in bowl and cover with plastic wrap for 10 minutes. Cut peppers in half and remove skin and seeds. Mix eggs, feta, parsley, and chiles. Fill peppers evenly and place under broiler until golden brown.

14 ounces roasted red peppers, either store-bought or homemade
1 medium clove garlic
1/4 teaspoon kosher salt
2 tablespoons olive oil
2 tablespoons minced Italian parsley
1 tablespoon lemon juice
2 teaspoons capers, drained

Steps:

  • Arrange the peppers on a double layer of paper towels, and let dry.
  • Smash and peel the garlic. Then in a small bowl mash to a paste with the salt.
  • Combine the garlic mixture, oil, parsley, lemon juice and capers in a food processor, and process until chopped fine. Add the peppers, and process until they are coarsely chopped. Store, covered, in the refrigerator for up to 5 days. Serve at room temperature.

4 red bell peppers
1/4 cup extra-virgin olive oil
2 garlic cloves, peeled
2 cups crumbled feta cheese

Steps:

  • Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and quarter peppers. Puree peppers, oil, garlic, and cheese in processor. Season with salt and pepper. Chill at least 3 hours or overnight.

Roasted Sunflower Seed Feta Dip With Bell Pepper image

This is a recipe my sis and me came up with as a quick and healthy dip for a busy weeknight. It is creamy and has a lovely fresh taste from the bell pepper, while the roasted sunflower seeds add a great depth of flavour. I hope you enjoy!

1/3 cup sunflower seeds, shelled (organic preferred)
1/2 large red bell pepper, diced
80 g feta cheese, diced (fat-reduced is fine)
1/8 teaspoon garlic powder
1 teaspoon fresh rosemary (optional)
black pepper

Steps:

  • Heat a frying pan til quite hot. Dont add any oil or fat.
  • When the pan is hot add in the sunflower seeds and roast them for a few minutes until they start to brown. They will smell roasty when theyre ready and have a nice brown shimmer.
  • Set aside.
  • In a high rimmed bowl combine feta cheese, garlic powder, bell pepper and rosemary if using. Add sunflower seeds. Puree using a hand held blender until it has a nice creamy consistency. There will still be chunks, but thats ok.
  • Season with freshly ground black pepper to taste.
  • Enjoy!
