2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon finely grated lemon zest
4 (5-ounce) salmon fillets
Salt and ground black pepper
Cooking spray

Steps:

  • In an oiled shallow baking dish, combine lemon juice, Dijon, honey, and lemon zest. Stir together. Season both sides of salmon fillets with salt and pepper and place in the baking dish. Flip salmon to coat in glaze. Bake immediately or cover with plastic wrap and refrigerate for up to 3 hours.
  • When ready to cook, preheat oven to 400 degrees F. Bake 10 minutes or until fish is fork-tender.

1 1/4 lbs salmon fillets or 1 1/4 lbs salmon steaks, skin on
salt and pepper
1/2 cup Dijon mustard
1/2 cup honey
2 tablespoons water
2 tablespoons fresh lemon juice
1 teaspoon mustard powder (optional, I find it too hot)
1 teaspoon garlic powder
2 tablespoons fresh dill, chopped

Steps:

  • preheat the oven to 400°F Coat a shollow baking dish with cooking spray. Season both sides of salmon with salt and pepper. Place salmon in prepared baking dish.
  • Combine Dijon mustard, honey, water, lemon juice, mustard powder and garlic in a medium bowl. Reserve 1/2 cup, and pour remaining sauce over the fish in the pan. roast the salmon, uncovered, until fork-tender, about 15 minutes.
  • Stir the dill into the reserved sauce and serve with salmon.

1 1/2 pounds skin-on salmon fillet, preferably center-cut

1/4 cup fresh lemon juice
1 tablespoon rice wine (mirin)

2 cloves garlic, minced
2 teaspoons freshly chopped rosemary leaves

1 ½ cups apricot nectar
⅓ cup chopped dried apricots
2 tablespoons honey
2 tablespoons reduced sodium soy sauce
1 tablespoon grated fresh ginger
2 cloves garlic, minced
⅛ teaspoon cayenne pepper
¼ teaspoon ground cinnamon
1 (3/4 pound) salmon filet without skin

Steps:

  • Preheat your oven's broiler, and grease a broiling pan.
