ROASTED RATATOUILLE

Roasted Ratatouille image

Ratatouille is usually a savoury vegetable stew cooked on top-of-the-stove ... but roasting in the oven intensifies the flavours. For a main course, serve this with salad and crusty bread. (I enjoy it on top of shredded lettuce with a dollop of yogurt cheese.) The recipe comes from Bonnie Stern's MORE HEARTSMART COOKING.

CORNMEAL-CRUSTED ROASTED RATATOUILLE TART

Cornmeal-Crusted Roasted Ratatouille Tart image

Provided by Ellie Krieger

Categories     side-dish

Time 1h35m

Yield 8 servings

Number Of Ingredients 17

2/3 cup yellow cornmeal
1/3 cup whole-grain pastry flour
1/4 teaspoon salt
2 tablespoons butter
2 tablespoons canola oil
3 tablespoons water
2 tablespoons plus 1 teaspoon olive oil
2 shallots, thinly sliced (about 1/3 cup)
Nonstick cooking spray
1/2 pound thinly sliced eggplant rounds (about 1/3 medium eggplant)
1 zucchini, sliced into 1/8-inch rounds (about 8 ounces)
3 medium tomatoes, sliced thinly
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 ounces shredded part-skim mozzarella cheese
1/4 cup shredded fresh basil leaves
1/4 cup freshly grated Parmesan

Steps:

  • For the crust: Preheat the oven to 350 degrees F.
  • Combine cornmeal, pastry flour, and salt in the bowl of a food processor. Pulse to incorporate. Add butter and oil and pulse about 20 times, until mixture resembles small pebbles. Add water and pulse until mixture forms a loose dough. Remove dough from processor and press into bottom and about 1/8-inch up the sides of a 9-inch tart pan with a detachable rim. Press aluminum foil into the bottom and sides of the pan on top of the dough and weigh down with uncooked rice or pie weights. Place tart pan on a baking sheet and bake for 10 minutes. Remove from oven and remove rice and foil. Return to oven and bake for an additional 5 minutes, or until no longer shiny and wet. Remove from oven and let cool.
  • For the filling: Increase the oven to 400 degrees F. Heat 1 teaspoon of olive oil in a nonstick pan over medium heat; saute shallots until soft, about 5 to 6 minutes. Spray 2 baking trays with cooking spray. Arrange the eggplant, zucchini and tomato slices on the trays in a single layer and brush with the remaining olive oil. Season with salt and pepper, and roast the vegetables until soft but not browned, about 15 minutes. Remove the vegetables from oven and cool.
  • Lower the oven temperature to 350 degrees F. Lay the eggplant slices in 2 layers on the bottom of tart; cover with 1/3 of the mozzarella cheese and some of the shredded basil. Add the zucchini and shallots, top with another 1/3 of the mozzarella and basil, then the tomatoes. Top with rest of the mozzarella cheese and the Parmesan. Bake for 25 to 30 minutes, or until cheese is melted and vegetables have further wilted. Remove from oven, let cool for 5 minutes, and cut into 8 slices. Serve warm.

500g pack all-butter shortcrust pastry
flour , for dusting
1 aubergine , cut into 2.5cm
1 courgette , thickly sliced
1 yellow pepper , deseeded and cut into strips
1 red onion , thickly sliced
3 large garlic cloves , unpeeled
3 tbsp olive oil
250g cherry plum tomato
300ml pot double cream
3 eggs
½ small bunch basil , leaves only, plus a few extra leaves to serve
150g pack hard goat's cheese
handful toasted pine nuts (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the aubergine, courgette, pepper and onion together with the garlic, olive oil and some seasoning. Tip onto a large baking tray (you may need to use 2 trays) and roast for 20 mins. Toss through the tomatoes and roast for a further 15-20 mins or until the vegetables are tender and beginning to caramelise.

  • While the vegetables cool, reduce oven to 190C/170C fan/gas 5. Prick the base of the tart case with a fork, line with baking parchment and fill with baking beans. Pop on a baking tray and bake for 15 mins, then remove the beans and parchment. Bake for 10-15 mins more until the pastry is lightly golden.
  • Reduce oven to 160C/140C fan/gas 3. Squeeze the garlic from their skins into a jug and mash with a little salt to form a paste. Slowly whisk in the cream, followed by the eggs and some seasoning. Toss the basil through the cooled vegetables, then tip two-thirds into the pastry case, spreading out to an even layer. Crumble over three-quarters of the goat's cheese, then pour over the cream mix. Top with the remaining veg and cheese. Bake for 40-50 mins until the tart is just set, with a slight wobble in the centre. Serve warm for lunch or cold on a picnic, scattered with extra basil leaves, and some toasted pine nuts, if you like.

1 clove garlic, peeled and minced
1/4 cup tomato paste
1 red pepper, roasted, peeled and diced
1 yellow pepper, roasted, peeled and diced
2 Roma tomatoes, peeled, seeded and diced
Salt and pepper, to taste
1/4 cup lemon juice
3 zucchini
6 cloves garlic, peeled, triple blanched
1 tablespoon olive oil
1/2 cup chicken stock
1/4 cup cream
1/8 pound fresh, clean spinach (about a handful)

Steps:

  • Take halibut fillets and, in a 6-inch, oven-safe pan with olive oil, saute 1 side of halibut for 3 minutes over high heat. Remove and turn over halibut in pan. Place the pan with fish into a preheated 400-degree oven and bake for six minutes. Remove from oven.;

In a medium pan, add olive oil and zucchini, allowing time for zucchini to sweat. Then, add chicken stock, cover, and let simmer for 15 to 20 minutes. Add triple blanched garlic and cream, cook further for 5 minutes. Blend in a blender, adding fresh spinach. Strain into a bowl resting in an ice bath and let cool immediately.

EASY ROASTED RATATOUILLE

Easy Roasted Ratatouille image

This is my simple, cheap & easy version of ratatouille. I wanted to try it for myself, and found many recipes that were completely loaded with odd creamy ingredients and so many flavors you wouldn't be able to taste anything. Mine may not be "classic" but it's good. Sometimes I use it as a main dish, others as a side,...

Number Of Ingredients 8

1 large eggplant
2 medium zucchini
1 small onion
6 roma tomatoes
2 Tbsp olive oil
1/2 c marinara sauce
1/8 c mozzarella cheese, shredded
salt

Steps:

  • 1. Slice eggplant into circles about 1/3 inch thick. Sprinkle liberally with salt and set them in a colander to drain for 1-2 hours. This will remove most of the bitterness eggplant can have along with the juices, so it won't be a mushy mess after cooking. Don't worry, we'll be rinsing the salt off.
  • 2. Slice the zucchini and onion also around 1/3 inch thick and set aside.
  • 3. Heat a pot of water to boiling. Add the Roma tomatoes and blanch for about a minute. Remove, drop them in ice water. They should now peel easily. Remove peels. Slice tomatoes in half lengthwise and gently squeeze out the watery seeds. Cut the remaining tomato into bite-size squares, I just cut each half into a quarter.
  • 4. After 1-2 hours, some brown liquid should be under the colander. Dump the liquid and give the eggplant slices a quick rinse in cold water to remove any remaining salt. Shake or pat dry.
  • 5. In a large baking dish, alternate the eggplant, zucchini, tomato and onion in rows. Drizzle with olive oil.
  • 6. Bake at 350 for 30 minutes. Top with a bit of marinara and a couple thin slices of mozarella cheese. Put back into the oven to melt the cheese.
