4 potatoes, peeled and cut into quarters (approx. 2 pounds)
4 tablespoons olive oil
1 quart green beans (I use frozen)
1 cup cherry tomatoes, halved
3 garlic cloves
salt and pepper

Steps:

  • Preheat oven to 400^.
  • Spray a jellyroll pan with non-stick cooking spray.
  • Toss potatoes in a zip-top bag with 2 T. olive oil.
  • Scatter on pan and sprinkle with salt and pepper.
  • Roast until tender, approximately 50 minutes, turning occasionally.
  • In the meantime, cook the green beans in a large saucepan of boiling salted water for 3 minutes.
  • Drain beans and pat dry.
  • Place beans, tomatoes, and garlic in another zip-top bag.
  • Add 2 T. olive oil and shake to mix.
  • When potatoes are tender, add the bean mixture and roast another 8 minutes.

One of my favourite late summer dishes. I serve it as a stew, with fresh bread and butter, or else I ladle it over steamed rice. I guess you could serve it as a side dish but I think of it as a nice vegetarian supper. Reheats beautifully. If you can find decent green beans in the winter, you can make this with canned crushed tomatoes - 2 or 3 cups depending on how soupy you would like it.

2 cups green beans (450g) or 2 cups wax beans (450g)
4 large tomatoes
1 medium onion
2 large potatoes
1 tablespoon olive oil
1/4 teaspoon hot pepper flakes
1/4 teaspoon fennel seed
1/4 teaspoon salt & pepper
1/2 teaspoon ground cumin

Steps:

  • Wash and trim the beans, and cut them into bite sized pieces.
  • Wash, trim and cut the potatoes in 1 cm dice.
  • Boil the potatoes and the beans separately until just tender.
  • Peel and chop the tomatoes and the onion.
  • SautĂ© them in the olive oil until the tomatoes fall apart and the mixture thickens slightly.
  • Add the seasonings and the drained potatoes and beans, and simmer for 10 to 15 minutes to amalgamate.

  • Put a baking sheet in the oven and preheat to 450 degrees F. Cut 1 1/2 pounds large red-skinned potatoes lengthwise into eighths. Toss with 2 tablespoons olive oil, 1 pint cherry tomatoes, 3 sprigs rosemary, 3 smashed garlic cloves, and salt and pepper. Put cut-side down on the hot baking sheet and roast 15 minutes. Flip the mixture and roast 10 more minutes.

This makes for a pretty dish and is easy to assemble. If you don't have the fresh vegetables on hand, you can easily adapt with canned goods. I get requests for the recipe all the time.

1 1/2 lbs green beans
1 tablespoon butter
3/4 teaspoon garlic salt
1 tablespoon sugar
1/2 teaspoon basil
salt
pepper
1/2 pint cherry tomatoes, cut in half

Steps:

  • Cook beans in water, until tender.
  • In a fry, melt butter and add garlic salt, sugar, basil, salt and pepper.
  • Swish cherry tomato halves around until barely soft and heated, but not squishy.
  • Add the drained beans and mix well.
  • (TO SAVE TIME, you can use drained canned green beans instead of fresh green beans and canned stewed tomatoes instead of fresh cherry tomatoes. Just add the canned vegetables to the butter/basil mixture and heat through. I do this frequently and it works o).

3 tablespoons olive oil, divided
2 cups cherry tomatoes
2 cups 1-inch cut fresh green beans
4 cloves garlic, minced
2 teaspoons dried basil
1 teaspoon flaked sea salt (such as Maldon®)
1 (15 ounce) can garbanzo beans, drained and rinsed
2 teaspoons olive oil, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a jelly roll pan with aluminum foil.
  • Toss potatoes with 1 tablespoon olive oil in a medium bowl. Pour into the prepared pan.
  • Roast in the preheated oven until tender, about 30 minutes.
  • Toss cherry tomatoes, green beans, garlic, basil, and sea salt with 2 tablespoons olive oil.
  • Remove potatoes from the oven, push them to one side of the pan, and add the tomato and green bean mixture. Roast until tomatoes start to wilt, 15 to 20 minutes more.
  • Remove from the oven and pour into a serving dish. Stir in garbanzo beans, add 2 teaspoons olive oil, and season with salt and pepper.
