BAKED TILAPIA WITH TOMATOES AND POTATOES

Steps:
- Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
- Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
- Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.
BAKED LEMON-GARLIC TILAPIA AND POTATOES IN FOIL
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Spray foil with cooking spray.
- Place equal amounts of diced potato and red bell pepper in the middle of each piece of foil and sprinkle with 1/2 of the seafood seasoning. Dot 1 1/2 teaspoons of butter on top of the potatoes.
- Add 1 tilapia fillet to each packet of potatoes. Sprinkle fillet with remaining seafood seasoning. Dot remaining 1 1/2 teaspoons butter on top of the fillets.
- Cut 1/2 of the lemon into thin slices and place 1 to 2 lemon slices on top of each fillet. Seal foil packets and crimp edges tightly.
- Bake in the preheated oven until tilapia flakes easily with a fork, about 25 minutes.
- Open packets carefully and vent steam. Squeeze remaining lemon juice over the tilapia and serve immediately.

ROASTED POTATO-WRAPPED TILAPIA
This is a recipe that I found in a newspaper that I tweaked to my liking. I served it with a side of green beans. It was just yummy!

Steps:
- 1. Heat oven to 400 degrees. Add oil to a skillet and place in the oven to heat up.
- 2. Peel and slice the potatoes very thin. Set aside.
- 3. In a small bowl mix the mustard and mayonnaise. Set aside.
- 4. Remove the skillet from the oven and carefully cover the bottom with a single layer of potatoes, overlapping the edges slightly. Season with salt, pepper and thyme.
- 5. Pat dry the Tilapia and then brush the top and bottom with the mustard & mayonnaise mixture.
- 6. Place the Tilapia over the potatoes in the skillet, then arrange a second layer of potatoes over the fish, covering it entirely. Season with salt, pepper and thyme, then mist with cooking spray.
- 7. Place the skillet back into the oven and bake for 14 minutes. Increase the oven to broil and cook for another 2 or 3 minutes or until the potatoes are nicely browned. Let sit for a few minutes before serving.
SHEET-PAN TILAPIA AND VEGETABLE MEDLEY

- Preheat oven to 450°. Line a 15x10x1-in. baking pan with foil; grease foil., In a large bowl, combine the first 5 ingredients. Add melted butter, garlic salt and pepper; toss to coat. Place vegetables in a single layer in prepared pan; bake until potatoes are tender, about 20 minutes., Remove from oven; preheat broiler. Arrange vegetables on 1 side of sheet pan. - Preheat the oven to 425 degrees F (220 degrees C). Spray a baking dish with nonstick cooking spray.
- Place potatoes, bell pepper, garlic, oil, and 1/2 teaspoon salt in the prepared dish; toss to coat.
- Bake in the preheated oven for 30 minutes. Add tomatoes. Place tilapia fillets on top of vegetables and sprinkle with remaining salt, pepper, and lemon zest. Continue to bake until fish flakes easily with a fork, about 10 minutes.
- Squeeze lemon juice over fish and serve.

EASY ROASTED TILAPIA
I like Tilapia especially for its nutty flavors. This is a very easy and fast recipe to roast Tilapia, which brings out all the delicious flavors of tilapia. Serve with pasta, salad or bread.

- Drizzle lemon juice over Tilapia fillet. Salt and pepper to taste.
- Heat oil in a pan. Add thyme and garlic.
- Roast fillet on medium high heat on each side for about 3 minutes. Do not overcook.
- Remove fillet from pan and drain on paper towels.
- Add onion slices to pan and cook until soft for about 1-2 minutes.
- Serve fillet with onion slices.
- NOTE: Can easily be adapted for more than 1 serving. Just increase the amount of ingredients to your needs, but use as less oil as possible and do not use more than 8 sprigs thyme and 2 cloves garlic for one pan.

BAKED WRAPPED TILAPIA

- Preheat oven to 400°F. Combine all topping ingredients in a bowl. Season with salt and pepper to taste. Place a fillet on each banana leaf and divide topping evenly among them, spreading it over the top. Fold each banana leaf over to form a packet around each fillet and seal the edge of each packet with a small piece of aluminum foil, crimping it tightly. Place on a baking sheet and bake 25 to 30 minutes.

- Preheat oven to 400 degrees Fahrenheit.
- On a large rimmed baking sheet, toss the potatoes, lemon, thyme, 2 tablespoons olive oil and 1/4 teaspoon salt and pepper.

TILAPIA FOIL PACKETS

- Preheat the oven to 375 degrees F (190 degrees C). Lay 4 sheets of aluminum foil on a work surface.
- Place 1 tilapia fillet in the center of each piece of foil, and top with 1/2 tablespoon butter. Sprinkle each fillet with dill, garlic powder, pepper, and salt. Fold foil over top and roll up edges to create a sealed packet. Place packets on a baking sheet.
- Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.
