3 bunches small thin carrots (not baby carrots, about 2 pounds)
3/4 pound small white onions, halved lengthwise
3 bacon slices, chopped
an 8 rib pork rib roast (about 4 1/2 pounds)
2 garlic cloves, sliced thin about 1/4 cup small leaf clusters from fresh rosemary sprigs
1/4 cup water
1 tablespoon chopped fresh parsley leaves
Garnish:fresh rosemary and parsley sprigs

Steps:

  • Preheat oven to 350°F.
  • In a large roasting pan combine carrots and onions and sprinkle with bacon.
  • Trim fat on pork roast to 1/4 inch thick. With a paring knife make shallow slits in fat about 1 inch apart and in each insert a garlic slice and a rosemary leaf cluster. Season roast with salt and freshly ground black pepper and arrange, fat side up, on vegetables. Roast pork and vegetables 1 hour and 20 minutes, or until pork registers 160°F. on a meat thermometer. Transfer pork to a platter and let stand 15 minutes.
  • Pour off fat from pan. To pan with vegetables add water and cook over high heat, stirring to loosen brown bits, until most liquid is evaporated. Toss vegetables with parsley.
  • Arrange vegetables on platter with pork and garnish with rosemary and parsley sprigs.

1 red onion, large, cut into 1 inch pieces
8 garlic cloves, chopped
2 tablespoons fresh rosemary, chopped
6 tablespoons olive oil
2 tablespoons butter, melted
1 teaspoon kosher salt
1/2 teaspoon black pepper
parsley, chopped
fresh rosemary sprig, as needed

  • Procedures.
  • Pre-heat oven to 350ºF.
  • WASH potatoes and cut into quarters.
  • COMBINE potatoes and onions in large mixing bowl. Add garlic, rosemary, oil, butter, salt and pepper. Toss to thoroughly coat potatoes and onions with seasonings.

2 3/4 pounds tan-skinned sweet potatoes, peeled, cut into 1-inch cubes
8 tablespoons canola oil
3 garlic cloves, minced
2 1/2 teaspoons salt
1 1/2 teaspoons coarsely ground black pepper
1 1/2 pounds red onions (about 3 medium), halved lengthwise, cut crosswise into 1/4-inch-thick slices
1/2 cup freshly grated Parmesan cheese
1 tablespoon chopped fresh rosemary

Steps:

  • Set 1 rack in center and 1 rack at lowest position in oven and preheat to 375°F. Line 2 large baking sheets with foil. Place sweet potatoes on 1 sheet; drizzle with 6 tablespoons oil. Sprinkle with garlic, 1 1/2 teaspoons salt, and 1 teaspoon pepper. Toss to coat, then spread in single layer. Place onions on second baking sheet; drizzle with remaining 2 tablespoons oil and sprinkle with remaining 1 teaspoon salt and 1/2 teaspoon pepper. Toss to coat, then spread in single layer.
  • Place sheet with potatoes on center rack and sheet with onions on lower rack in oven. FOR DOUGH:
1 cup warm water
3/4 teaspoon instant yeast
3 tablespoons extra virgin olive oil, plus more for bowl and plastic wrap
3 cups all purpose flour, plus more for dusting
2 teaspoons coarse salt, plus more for sprinkling
2 teaspoons honey
1/4 cup freshly grated Parmigiano-Reggiano cheese
Olive oil for brushing
Salt & freshly ground pepper
3 tablespoons fresh rosemary leaves
FOR TOPPINGS:
Goat cheese (chevre) sweetened with a bit of honey.
Yellow onions, sliced lengthwise, sautéed until caramelized and browned. (Add a little brown sugar if desired.) Season with salt and pepper.
Red bell peppers, roasted till blackened. Skin pulled off. Quartered and sliced.
Tomatoes seeded and diced. Season with salt 15 minutes before serving. Drain liquid.

Steps:

  • In the bowl of an electric mixer, stir the water and yeast together. If using a stand mixer, attach your dough hook. Add olive oil, flour, salt, and honey and mix on low speed for 1 minute. Switch to medium speed and mix until dough is soft but not tacky, about 2 minutes. Add cheese and mix for 1 minute more. Transfer dough to a lightly floured work surface; knead four or five times, forming into a ball. Cover with lightly oiled plastic wrap; let rest for 10 minutes. Place dough in a lightly oiled bowl and cover with plastic wrap. Refrigerate overnight. Allow dough to warm to room temperature before rolling out. Heat grill to medium. Turn out dough onto a lightly floured work surface. Divide dough into 6-8 pieces. Flatten a bit and sprinkle with chopped fresh rosemary. Roll out thinly with a rolling pin. (Or divide dough into 16 equal pieces. Using a pasta machine, pass dough through the widest setting a couple of times and then pass the dough through the next two thinner settings to #3.) 2 tablespoons extra-virgin olive oil
3 small sprigs rosemary
1/2 teaspoon white-wine vinegar

Steps:
