Baked Chicken Wings - Extra Crispy, Like Deep-Fried image

A recipe for the best baked chicken wings that are extra crispy on the outside and very tender and most on the inside.

2 lbs chicken wings ((tips removed, separated into wingettes and drumettes))
1 Tbsp BAKING POWDER ((whatever you do, do NOT use baking soda))
1 tsp kosher salt ((plus more to taste))
1 Tbsp butter ((melted))
1/3 cup hot wing sauce ((e.g. Duff's hot sauce))

Steps:

  • Preheat oven to 450F.
  • Dry chicken with a paper towel really well. Place the wings in a large bowl. Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
  • Line a large baking sheet with aluminum foil. Place a cooling rack (see note) on top and spray with Pam or rub with cooking oil to prevent sticking.
  • Lay the chicken wings on the rack, leaving space between the wings.
  • Place the baking sheet in the oven. Turn the heat down to 425F and set the mode to convection.
  • Bake for 30-40 minutes, until the wings are nicely browned and crisp.
  • Let the wings rest for 5 minutes. This will preserve crispiness of the skin.
  • Meanwhile, prepare the Buffalo wing sauce by combining the butter and the hot wing sauce in a small bowl.
  • Season the wings with salt and whatever other seasonings you like. Toss with the Buffalo sauce or serve with the sauce on the side.

1 teaspoon salt
3 tablespoons olive oil
2 tablespoons garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Remove excess moisture from chicken wings with a paper towel.
  • In a large bowl, stir in baking powder and salt until chicken is thoroughly coated.
  • Bake on a baking rack for 1 hour, or until golden brown and crispy, flipping every 20 minutes. (For best results, place baking rack on a baking sheet covered with parchment paper or foil to catch drippings).

1 pound chicken wings (separated)
2 tablespoons vegetable oil
2 teaspoons herbes de Provence
1 teaspoon roasted garlic powder
1 teaspoon Kosher salt
2 tablespoons butter
2 garlic cloves (minced)
1 teaspoon herbes de Provence
1/8 cup mild honey (such as clover or wildflower)
chopped fresh herbs (such as parsley, basil, rosemary, chives)

Steps:

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, combine wings, vegetable oil, garlic powder, herbs de Provence, and salt. Use tongs to toss and coat evenly.
  • Spread wings onto the prepared baking sheet and bake for 15 minutes. Remove from the oven and use metal tongs to flip. Return to the oven for an additional 15 minutes.
  • While the wings are cooking, make the glaze. Melt butter in a small skillet over medium-high heat. Once melted, add minced garlic and herbs de Provence and cook until fragrant, about 30 seconds. Add honey and stir until smooth.
  • Once fully cooked, remove wings from the oven and change the oven to broil. Flip all wings skin-side up and brush with glaze. Broil for 2-4 minutes until crispy.

Extra-virgin olive oil, for frying
3 sprigs fresh rosemary
12 fresh sage leaves
1 tablespoon whole cumin seeds
1 tablespoon red pepper flakes
1/2 tablespoon whole black peppercorns
1 tablespoon garlic powder
Kosher salt
3 pounds chicken wings, whole or separated as you like

Steps:

  • Prep the rub: Pour about an inch of olive oil into a small pan over medium heat. When the oil begins to shimmer, add the rosemary and cook, turning the sprigs, until the leaves darken and become crispy, about 2 minutes. Transfer to a paper towel-lined plate. Add the sage to the same pan and cook until the leaves darken, slightly curl and stop sizzling, 30 seconds to 1 minute. Transfer to a paper towel-lined plate.
  • In a dry medium pan over low heat, combine the cumin, red pepper flakes, peppercorns and garlic powder. Toast the spices, tossing constantly to avoid burning, until fragrant, about 5 minutes. Remove from the heat and allow to cool completely.
  • Remove the rosemary leaves from their stems, then put the herbs and spices in a spice grinder and pulse until finely chopped and combined. Remove and add 1 tablespoon salt.
  • Prep the wings: Massage the wings with the herb rub and place them on a wire rack set inside a baking sheet. Let the rub set at room temperature, about 30 minutes. While the wings rest, preheat the oven to 400˚.
  • Bake the wings: Transfer the baking sheet with the rack and wings to the oven and bake until the wings are crispy, flipping halfway through, 40 to 50 minutes. Serve warm.

2 teaspoons baking powder
¼ teaspoon salt
1 tablespoon butter
1 tablespoon garlic, minced
2 tablespoons dried italian herb blend

Steps:

  • Preheat oven to 250˚F (130˚C).
  • Place wings in a large bowl and pat dry.
  • Add the baking powder and salt to the wings. Stir to coat.
  • Spray a baking rack with nonstick cooking spray and place on top of a foiled sheet pan. Distribute wings evenly on top, making sure none of them touch and they are all face-up.
  • Bake for 35 minutes, then increase the temperature to 425˚F (220˚C) and bake for an additional 45 minutes, or until wings are crisp and golden. (Do not remove the wings from the oven when increasing temperature.)
  • For sauce, in a hot pan, melt butter. Add garlic and stir. Cook for 30 seconds, being careful not to burn the garlic.
  • Stir in Italian herb blend and salt. Cook for an additional 20 seconds.
  • Add in fresh parsley and wings. Stir to coat.

Grilled wings are my go-to when I don't want to deal with the hassle of frying. Not only do they get super crispy on the grill, they also get an incredible charred flavor you can't get any other way. I toss them hot off the grill in a bright lemony herb sauce and finish with freshly grated Parmesan cheese.

3 pounds chicken wings, a mix of drumettes and wingettes
Grapeseed oil, for greasing and drizzling
Kosher salt and freshly ground black pepper
1 large lemon, zested and cut into wedges
1 clove garlic, grated
1/2 cup packed basil leaves
1/4 cup packed flat-leaf parsley leaves
1/4 cup packed dill fronds
1/4 cup extra-virgin olive oil
Wedge of Parmesan, for grating

Steps:

  • Preheat the grill to 400 degrees F. Clean and lightly oil the grill grates.
  • Place the chicken wings in a large bowl and drizzle with 1 to 2 tablespoons grapeseed oil and add a large pinch each of salt and pepper. Toss to coat.
  • Arrange the wings on the grill, cover and cook for 10 minutes. Flip the wings and grill until cooked through, golden brown and the skin is crispy, 5 to 10 minutes.
  • While the wings grill, make the garlic and herb mixture: In a small food processor, combine the lemon zest with the garlic, basil, parsley, dill, olive oil and a pinch each of salt and pepper.

ROASTED HERB WINGS

Of all the wing recipes I've ever created for my game-day parties, this is definitely the crowd pleaser--it always seems like I never make enough! I like to marinate the wings a day in advance so all the flavors have a chance to fully come together, then I cook them an hour before kickoff.

2 pounds (910 grams) chicken wings
1/4 cup (60 milliliters) extra-virgin olive oil, plus more for the skillets
1/4 cup (25 grams) grated Parmesan-Romano cheese blend
Leaves from 12 fresh thyme sprigs
2 tablespoons finely chopped fresh flat-leaf parsley, plus more for garnish
2 teaspoons minced garlic
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 teaspoon kosher salt
1 teaspoon Italian seasoning
1 teaspoon hot paprika
1/2 teaspoon coarsely ground black pepper
4 tablespoons unsalted butter
1 tablespoon fresh lemon juice
1/4 cup (20 grams) finely shredded Parmesan cheese

Steps:

  • Prepare the wings: Preheat the oven to 400 degrees F (204 degrees C). Rinse the chicken wings under cold water, then pat dry with paper towels. Make sure the wings are completely dry, then break the wings down.
  • Use a sharp chef's knife to break down each wing into three separate pieces. Using your finger, locate the joint connecting the drumette to the wingette (flat), then use the tip of your knife to cut the skin so the joint is visible. Firmly press your knife in between the pieces to separate them. Next, use your finger to locate the joint connecting the wingette (flat) to the wing tip. You don't need to cut the skin, just press your knife through the joint, reserving the wing tips to make stock.
  • In a large bowl, combine the olive oil, Parmesan, thyme, parsley, garlic, lemon zest, lemon juice, salt, Italian seasoning, paprika, and pepper. Add the wings and toss to completely coat. Make sure you don't overcrowd the skillet or the wings will steam rather than bake and won't be crispy.
  • Transfer the wings to two large cast-iron skillets lightly greased with oil and roast, flipping every 10 to 12 minutes, until you can cut into the wing and the juice runs clear, about 40 minutes.
  • Make the tossing sauce: In a small saucepan, combine the sauce ingredients over medium heat. Once the butter melts, reduce the heat to low, stirring occasionally.
  • Remove the wings from the oven (leave the oven on) and toss with the warm sauce in a large bowl, making sure to cover each morsel. Return the wings to the cast-iron skillets, drizzle with any leftover sauce, return to the oven, and roast for 5 more minutes. Serve hot, garnished with parsley.
