ROASTED GRAPE CHUTNEY

This recipe for chutney turns grapes into a sweet and tangy side dish to compliment your Thanksgiving roasts.

1 cup seedless red grapes, cut in half
1 cup seedless green grapes, cut in half
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 teaspoon dried thyme leaves
1/2 teaspoon kosher (coarse or sea) salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 425°F. Line cookie sheet with foil.
  • In medium bowl, stir together all ingredients. Spread mixture in single layer on cookie sheet.
  • Bake 20 minutes or until grapes begin to shrivel. Cool 30 minutes. May be stored in refrigerator up to 3 days.

5 cups seedless red grapes
2 tablespoon olive oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Put the grapes on a baking sheet and toss with the olive oil. Roast until the grapes burst and get soft, wilted and a little charred, 25 to 30 minutes.
  • Serve on peanut butter toast or crostini with cream cheese, or add them to a salad. Store in an airtight container in the refrigerator for up to 1 week.

Steps:

  • Serve these syrupy grapes with cheese for dessert: Grease an ovenproof skillet with 2 tablespoons butter. Add 1 pound seedless grapes and 3/4 cup walnuts; sprinkle with 2 tablespoons sugar. Roast about 25 minutes in a 500 degree F oven. Transfer to a bowl using a slotted spoon. Simmer the juices with 1 tablespoon honey on the stove until syrupy, 6 to 7 minutes. Off the heat, add a squeeze of lemon juice and a pinch of pepper. Pour the syrup over the grapes.

1 tsp cumin seed
1 tsp coriander seed
1 tsp mustard seed
2 green chillies , deseeded and finely chopped
3 onions , finely chopped
2 tsp powdered ginger
400ml cider vinegar
1kg apple , peeled, cored and chopped
300g seedless white grape
450g granulated sugar

Steps:

  • Toast the cumin and coriander seeds in a dry frying pan until aromatic. Tip into a mortar and coarsely grind with the pestle. Toast the mustard seeds in the same pan until they start to pop, then add to the other spices. Tip the spices into a large pan with the chillies, onions, ginger and vinegar. Bring to the boil, then simmer for 10 mins until the onions are softened.
  • Add the chopped apples, grapes, sugar and 1 tsp salt, and bring to the boil, stirring. Boil hard, stirring from time to time, for about 15-25 mins until the mixture is thick and pulpy.
  • Pot into warm sterilised jars (see tip, below), seal and label. Store in a cool, dry place for up to 1 year.

3 cups seedless red or green grapes, halved lengthwise
2 tablespoons sherry vinegar or rice vinegar
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 teaspoon grated orange zest
24 slices French bread baguette (cut diagonally 1/2 inch thick)
1/2 cup shaved Manchego or Romano cheese
Thinly sliced fresh basil leaves

Steps:

  • Preheat oven to 400°. Toss first five ingredients; spread in a greased 15x10x1-in. pan. Roast until grapes are lightly browned and softened, 30-35 minutes. Stir in orange zest., Preheat broiler. Arrange bread slices on an ungreased baking sheet. Broil 3-4 in. from heat until lightly browned, 1-2 minutes per side. Top with warm grape mixture; sprinkle with cheese and basil.

30 garlic cloves, peeled
1/2 cup olive oil
3/4 teaspoon ground thyme
1 1/2 cups seedless grapes, halved
1/4 cup ruby Port
1 teaspoon chopped fresh rosemary
1 baguette, cut diagonally into 24 slices, toasted
8 ounces Brie cheese, rind removed, room temperature
Fresh rosemary sprigs

Steps:

  • Preheat oven to 325°F. Combine garlic and oil in small baking dish. Bake until garlic is tender, about 30 minutes. Drain, reserving 3 tablespoons oil. Transfer garlic to processor. Add thyme and reserved oil; puree. (Can be made 1 day ahead. Chill. Bring to room temperature before using.)
  • Mix grapes, Port and 1 teaspoon rosemary in bowl. Let stand 15 minutes.
  • Spread each toast slice with 1 teaspoon garlic. Spread 2 teaspoons Brie over. Top with grapes and herb sprigs.
