1 tablespoon butter
1 garlic clove, grated
1/2 cup couscous, uncooked
1 cup chicken stock
1 tomatoes, skinned, deseeded and cut into small dice
salt and pepper
1/4 cup pine nuts, toasted

Steps:

  • In small pot, melt the butter and saute the garlic until fragrant.
  • Add stock and bring to a boil.
  • Add couscous and stir.
  • Take off the heat and let stand 10 minutes.
  • Fluff with fork and then combine with the tomato along with the pine nuts. Season with salt and pepper to taste.

Couscous is the best! It is fast and tastes great. This recipe is savory and goes great with chicken.

1 cup couscous
1 cup boiling water
3 tablespoons olive oil
1 clove garlic, minced
¼ cup diced red bell pepper
4 green onions, sliced
1 cup cherry tomatoes
1 cup fresh basil leaves
1 pinch salt
1 pinch ground black pepper
1 dash balsamic vinegar
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir couscous into boiling water and return water to a boil. Cover and remove pot from heat. Let stand 5 minutes, then fluff with a fork.
  • While the couscous is cooking, heat oil in a large skillet over medium heat. Stir in garlic, green onions and peppers; saute briefly. Stir in tomatoes, basil, cooked couscous, salt and pepper. Mix together and transfer to a 1 1/2 quart casserole dish. Splash some balsamic vinegar on top.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes. Sprinkle with Parmesan cheese while still warm.

1 1/4 cups water or 1 1/4 cups broth
1 cup couscous
1 teaspoon butter or 1 teaspoon margarine (optional)
1/2 teaspoon salt (optional)
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon dried thyme leaves
1/2 teaspoon paprika
1/4 teaspoon black pepper, freshly ground

Steps:

  • Bring water to a boil.
  • Add couscous, butter and salt.
  • Remove from heat and let stand 5 minutes.
  • Topping: In a shallow pan, heat oil.
  • Cook garlic until it begins to brown.
  • Add rest of spices, cook for 30 second and remove from heat.
  • (Alternately, you could use ready made"roasted garlic olive oil", and add the thyme and pepper).
  • Mix topping with couscous, serve immediately.

1/2 cup minced onion
2 cups uncooked couscous
1 (14 1/2 ounce) can diced tomatoes, drained
3 cups vegetable broth
1 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1/2 teaspoon ground coriander

Steps:

  • Preheat the oven to 375 degrees.
  • Heat the oil in a saute pan.
  • Saute the onions in oil about 5 minutes, until they are soft and golden.
  • In a bowl, combine the onions and the remaining ingredients.
  • Transfer the mixture into a 2-quart casserole.
  • Bake for 20 minutes.
