• 1 lb baby red or Yukon gold potatoes
• 1 large onion, thinly sliced
• 1 packet dry Onion Dip mix (I used Lipton's)
• 1 tsp olive oil
• Salt & pepper to taste

Steps:

  • 1. Preheat oven to 425 degrees. Line a baking sheet with aluminum foil, and lightly spray with non-fat cooking spray. 2. Wash and scrub potatoes, and cut into quarters or bit sized pieces. 3. Place all ingredients in a large Ziplock bag, and shake well to evenly coat the potatoes and onions. 4. Pour onto baking sheet, and spread out evenly. Sprinkle with a bit of salt and pepper. Place in oven and cook for about 30 minutes, or until potatoes are browned well and soft.

An awesome, full of flavour, vegetarian soup! Roasting the onions adds a rich flavour. *Recipe modified 13-Apr-09* I realized after Tea Jenny's review that I messed up the ingredients and forgot the thyme, the wine said 1 tbsp instead of 1 cup, and the soy sauce was missing completely - no doubt it didn't turn out well! The recipe has been adjusted and is now correct.

1 tablespoon vegetable oil
1 large onion, chopped coarsely
12 garlic cloves, cloves separated, but unpeeled, just smashed
12 cups water
2 -3 carrots, peeled and chopped
1 large potato, chopped
2 -3 celery ribs, chopped
2 portabella mushrooms, chopped
2 bay leaves
1/4 teaspoon whole black peppercorn
1/2 teaspoon salt
6 whole cloves
4 -5 large Spanish onions
12 garlic cloves, crushed
1 teaspoon salt
2 tablespoons olive oil
4 bay leaves
1 teaspoon dried thyme
1 cup dry white wine
2 tablespoons soy sauce
salt & freshly ground black pepper

Steps:

  • In a large soup pot, heat vegetable oil. Add onions and garlic and sautee until lightly browned, 8-10 minutes Add all ingredients up to and including cloves, cover, bring to a boil. Lower heat and simmer for about 50 minutes, until vegetables are very soft. Strain through colander or sieve.
  • Preheat oven to 375°F
  • In two shallow nonreactive baking pans large enough to accommodate all of the onions, combine onions, garlic, salt, olive oil, bay leaves, and thyme. Roast for 45 to 50 minutes, stirring every 15 minutes, until the onions have softened and lightly browned (cover with foil if getting too brown). Remove from oven, add wine to the baking pans, and stir well to deglaze.
  • Add the onions and soy sauce to the stock. Cover and bring to a boil; lower heat and simmer for 30-50 minutes. Discard bay leaves and add salt and pepper to taste.

I saw this recipe on the Rachael Ray show and it is delicious! It is a combination of French dip sammy and French onion dip. Be sure that the onions are well-carmelized, the sweetness is really worth the wait!

1 head garlic
2 tablespoons extra virgin olive oil, divided
2 tablespoons butter
2 large onions, thinly sliced
1 bay leaf
1 teaspoon dried thyme
salt and black pepper
2 cups beef stock
1 1/2-2 lbs sliced deli roast beef or 1 1/2-2 lbs italian roast beef
4 -6 steak rolls

Steps:

  • Preheat oven to 400ºF.
  • Cut about a quarter of an inch off the top of the garlic head and place it onto a square of aluminum foil. Drizzle with about 1 tablespoon extra virgin olive oil and close the foil up around the garlic. Transfer to the oven and roast until golden brown and tender, about 40 minutes. Remove from the oven and let cool.
  • While the garlic is roasting, place a large skillet over medium heat with 1 turn of the pan of olive oil, about 1 tablespoon, and the butter. Add the onions, bay leaf and thyme to the pan and cook gently until the onions are well caramelized, about 30 minutes. Season with salt and pepper, and reserve.
  • When the garlic is cool enough to handle, place a medium pot over medium-high heat with the beef stock. Squeeze the roasted garlic cloves out onto a cutting board, mash it into a paste with your knife and whisk it into the warm beef stock.
  • To assemble the sammies, dip the roast beef slices into the roasted garlic jus. Divide the meat between the four rolls and top each with some of the caramelized onions. Serve with additional jus on the side for dipping.

Homemade roasted onions are the star in this easy to make dip. Serve with veggies or chips.

4 medium - to large onions 2 tablespoons oil 16 oz. cream cheese 8 oz. cream cheese at room temperature 1 - 2 cloves of garlic minced 1 1/2 teaspoons salt 1 teaspoon pepper

Steps:

  • Cut onions up into bite size pieces. Heat the oil in a pan large enough to hold all of the onions that can go in the oven. Saute onions for about 5 minutes with the garlic.
  • Preheat oven to 350 degrees. Place pan in oven covered. Stir about every half hour. It will take about 3 hours for the onions to caramelize. Remove from oven and let cool.
  • When onions are cool combine the sour cream, cream cheese, salt and pepper. Stir in about 1/3 of the mixture. Taste to adjust seasonings.
  • Divide the remaining onions in half. Put in freezer bags and freeze until next time you need to make dip.

My mother gave me this recipe. She states she saw it on a cooking show. I decided to give it a try and fell in love with it. I love onions any way -- roasted, carmelized and even fresh. I am giving her credit and putting it here for others to enjoy!

1 large fresh onion
2 -3 teaspoons beef bouillon granules
2 tablespoons butter or 2 tablespoons margarine
1 ounce mozzarella cheese or 1 ounce swiss cheese

Steps:

  • Cut the ends off the onion, just enough that it will rest flat on its root end.
  • Peel off outer dry layers.
  • Cut into wedges leaving the root end intact.
  • Place on a square of heavy foil.
  • Top with boullion and butter.
  • Wrap securely, be sure that you do not poke holes in the foil-- you want the juices to stay in there with the onion.
  • Bake at 350 for 45 min to 1 hour.
  • Remove from foil into a serving bowl and top with cheese while HOT.
  • Enjoy with a piece of crusty french bread.
