Simple Cod with Sauteed Spinach is a healthy and delicious meal that is fast enough to make any night of the week , and fancy enough to serve on date night!

2 tablespoons olive oil
2) 5 ounce cod filets
ground black pepper {or seasoning of your choice}
1 tablespoon olive oil
2 cloves fresh garlic, minced
10 ounces fresh baby spinach
sea salt and pepper, to taste
1 wedge lemon juice, squeezed

Steps:

  • Heat the olive oil in a large skillet over medium heat. Season the cod with ground black pepper {or seasoning of your choice} and place it in the skillet. Sear the first side and flip over. Cover and cook for 4 to 5 minutes. Remove from pan and set aside.
  • Clean out the skillet and add olive oil. When oil is heated, add the garlic. Cook for one minute, stirring to keep it from burning.
  • Add a handful of spinach and toss to combine. Saute and stir until spinach is wilted.
  • Add another handful of spinach, wilt, and continue until all of the spinach is wilted. Squeeze one wedge of lemon over the spinach and toss to combine. Season to taste with sea salt and pepper.
  • Divide the spinach between two plates, using a slotted spoon to drain off excess moisture. Top with the cod and season with black pepper and lemon strips and serve.

3 slices thick-cut bacon
3 tablespoons extra-virgin olive oil
15-ounce can chickpeas, rinsed
1/4 teaspoon dried hot red pepper flakes
8 cups baby spinach (6 ounce), any tough stems discarded
1 garlic clove, minced

Steps:

  • Bring a 3-quart pot three fourths full of water to a boil. Add bacon and cook 2 minutes. Drain bacon and rinse in cold water. Pat dry and cut crosswise into 1/4-inch pieces.
  • Cook bacon in a 12-inch heavy skillet over moderate heat, stirring, until browned. Leaving bacon in skillet, spoon off all but 1 tablespoon fat. Add 2 tablespoons oil, chickpeas, and red pepper flakes to skillet and saut) over high heat, stirring occasionally, until chickpeas begin to brown, 3 to 4 minutes. Stir in spinach and garlic and sauté, stirring, until spinach is wilted. Season with salt and pepper and drizzle with remaining tablespoon oil.

2 tablespoons olive oil, plus 2 tablespoons
2 shallots, finely diced
1 cup dry white wine
Pinch saffron
6 cups homemade clam or fish stock
1/2 cup cooked white beans
1/2 cup cooked chickpeas
1/2 pound linguica sausage, cut into 1/4-inch slices, and Sauteed
24 cultivated mussels, scrubbed and de-bearded
2 tablespoons cold butter
1 tablespoon fresh lemon juice
3 tablespoons chopped parsley, plus more, for garnish
Salt and freshly ground pepper
4 (6-ounce) cod fillets

Steps:

  • Heat 2 tablespoons olive oil in a medium saucepan over medium heat. Add shallots and cook until soft. Add wine and cook until almost reduced. Add saffron and stock and bring to a boil. Add the beans, chickpeas, sausage, and mussels, cover the pot and cook until the mussels have opened. Add the butter, lemon juice, parsley, and season with salt and pepper, to taste.
  • Heat remaining olive oil in a large saute pan over medium-high heat.
  • Season cod on both sides with salt and pepper. Sear, skin-side down until golden brown. Turn the fish over and continue cooking until just cooked through. Place cod in shallow bowls and ladle linguica-chickpea broth, over and around. Make sure each plate has 6 mussels. Garnish with more parsley.

2 tablespoons butter
½ sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter
1 pound thick-cut cod loin
½ lemon, juiced
¼ cup dry white wine
1 tablespoon chopped fresh parsley
1 tablespoon chopped green onion
1 lemon, cut into wedges

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
  • Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
  • Coat both sides of cod in melted butter in the baking dish.

1 tablespoon olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon cumin seeds, lightly toasted and ground
Salt, preferably kosher salt
Freshly ground black pepper, to taste
1 tablespoon tomato paste
1 (15-ounce) can chickpeas, drained and rinsed
1 cup chicken or vegetable stock, or water
Cayenne, to taste
1 (6-ounce) bag baby spinach

Steps:

  • Heat the olive oil in a large, heavy saucepan over medium heat and add the onion. Cook, stirring, until tender, about five minutes. Add the garlic, cumin, tomato paste and 1/2 teaspoon salt. Cook, stirring for one to two minutes, until fragrant and the tomato paste has turned a darker color. Add the chickpeas, the stock or water, and the cayenne, and bring to a simmer. Cover, reduce the heat, and simmer 10 minutes.
  • Stir in the spinach, a handful at a time, stirring until each addition of spinach wilts. Add salt to taste and simmer uncovered, stirring often, for five minutes. Add lots of freshly ground pepper, taste and adjust salt and cayenne, and serve.

Cod:
4 T Olive Oil plus extra for oiling roasting pan
1 1/2- 1 3/4 Lb. Cod Fillets, 1/2" thick
2 T Fresh Lemon Juice
Kosher Salt and freshly ground black pepper
2 T Chopped Flat Leaf Parsley
Julienned Lemon Peel for garnish, optional
Chickpeas, Spinach & Bacon:
6 Bacon Slices (~5oz.) cut into 1/2" pcs.
Olive Oil
2(15 oz.) Cans Chickpeas, rinsed and drained well
8 C Baby Spinach
2 T Fresh Lemon Juice
Sea Salt, pref. fleur de sel
Freshly Ground Black Pepper

Steps:

  • Arrange a rack at center position and preheat oven to 450. Oil a baking dish that will hold the fillets comfortably in a single layer; add fillets. Drizzle cod with 4T olive oil and 2T lemon juice. Salt and pepper generously. Roast until flesh is opaque and flakes easily when pierced with a sharp knife, 9-12 minutes. (Be alert as to thickness of fillets as cooking time will vary.) While cod is roasting, prepare sauteed vegetables. Fry bacon in a large, heavy skillet over medium heat until golden and crisp, about 3 minutes. Remove with a slotted spoon to drain on paper towels. Discard drippings in pan. Add 2T olive oil to pan and heat over medium heat until hot. Add the chickpeas and cook, stirring until heated through, 2 minutes. Add spinach and cook, stirring, until just wilted, about 2 minutes. Remove skillet from heat and stir in the bacon and 2T lemon juice. Season with salt and pepper. To serve, sprinkle cod fillets with parsley, and if desired, garnish with lemon peel. Serve with the sauteed vegetables.
