The easiest way to bake chicken breasts (and the tastiest too!) Garlic butter baked chicken breasts are seared on the stove and finished in the oven topped with homemade garlic butter and trust me, they are fantastic!

4 chicken breasts (4-5 ounces each)
1 teaspoon salt
½ teaspoon EACH: black pepper, paprika, AND dried thyme
¼ teaspoon EACH: garlic powder AND onion powder
1 tablespoon oil (such as avocado, sunflower, grapeseed)
2 tablespoons butter
1 tablespoon fresh parsley
3 cloves garlic, minced or grated
1 teaspoon EACH: Italian seasoning AND honey
Pinch of red pepper flakes, optional

Steps:

  • PREP: Position a rack in the center of the oven and preheat the oven to 425ºF. Pound the thickest part of the chicken breast using the flat portion of a meat mallet (with a piece of plastic wrap placed on top of the breast.) This will ensure even cooking. Combine the salt, paprika, black pepper, dried thyme, garlic powder, and onion powder in a small bowl. Season both sides of the chicken breasts with this seasoning. You can allow the chicken to sit at room temperature for 5-20 minutes if you have time, or cook it immediately.
  • SEAR: Add the oil to a cast-iron skillet (or any oven-safe skillet) over medium-high heat. When the oil is hot add the chicken breasts in a single layer and sear for roughly 1-2 minutes on each side. You don't want to cook them all the way through, just give it a nice crust on both sides.
  • GARLIC BUTTER: While the chicken is cooking, combine the butter, parsley, garlic, Italian seasoning, honey, and red pepper flakes (if using) in a small bowl. Zap in the microwave in 15-20 second increments until the butter melts and all the ingredients combine.
  • ROAST: Pour the garlic butter over the chicken breasts and place the skillet in the oven for 10-14 minutes OR until the chicken cooks all the way through and reaches an internal temperature of 165ºF. Remove from the oven and allow the chicken to rest for a few minutes before serving.

3 boneless skinless chicken breasts
kosher salt and freshly ground black pepper
1 teaspoon paprika
4 tbsp butter (melted)
1 teaspoon Italian seasoning
1 tablespoon fresh parsley (chopped)
2 cloves of garlic (minced)
1 tbsp. olive oil (extra virgin)

Steps:

  • Preheat oven to 400°F. Season chicken breast with salt, pepper, paprika and set aside.
  • In a small bowl mix together the butter, Italian seasoning, parsley, and garlic. Set aside.
  • In a cast iron skillet, heat olive oil over medium heat. When the skillet is really hot add chicken breast. Sear until golden. It's about 1-2 minutes each side.
  • Pour garlic butter mixture over the chicken breast. Place skillet in the oven and cook until cooked through. It's about 20-30 minutes or until chicken breasts gets to an internal temperature of 165F.
  • Remove from the oven. Using a spoon, pour some of the butter sauce left in the skillet onto the chicken breast before serving.

4 pound (2kg) whole chicken, at room temperature giblets and neck removed from cavity*
1/4 cup unsalted butter, (melted)
3 tablespoons olive oil
1/4 cup white wine, ((OPTIONAL) -- use a dry wine like a Sauv blanc or Chardonnay)
1 lemon, (halved)
Salt and freshly ground pepper, (to taste)
2 tablespoons fresh chopped parsley
4 garlic cloves, (minced)
1 head of garlic roughly peeled and cut in half horizontally (through the middle crosswise)
3 fresh whole rosemary sprigs

Steps:

  • Preheat oven to 430°F | 220°C (400°F or 200°C fan forced). Line a baking tray with foil, or lightly grease a roasting pan.
  • Discard neck from inside the cavity and remove any excess fat and leftover feathers. Pat dry with paper towels.
  • Pour the olive oil, melted butter, wine (if using) and the juice of half a lemon over the chicken, under the skin and inside the cavity. Season chicken liberally on the outside and inside the cavity with salt and pepper. Sprinkle over the parsley.
  • Rub the minced garlic over the chicken, mixing all ingredients together over the chicken and under the skin.
  • Stuff the garlic head into the chicken cavity along with the rosemary sprigs and the squeezed lemon halve. Tie legs together with kitchen string.
  • Place breast-side up into baking tray or roasting pan. Roast for 1 hour and 15-20 minutes, basting half way through cooking time, until juices run clear when chicken thigh is pierced with a skewer.
  • Baste again, then broil for a further 2-3 minutes, until golden.
  • Remove from the oven, cover with foil and allow to stand for 10 minutes before serving. Serve, drizzled with pan juices and remaining lemon half cut into wedges or slices.

1 teaspoon dried oregano
Scant 1/2 teaspoon dried hot red-pepper flakes

2 tablespoons extra-virgin olive oil
4 skin-on, boneless chicken breasts (about 11/2 pounds)
Kosher salt and freshly ground pepper
2 heads garlic
4 sprigs fresh rosemary
4 slices sourdough bread, grilled or toasted
2 tablespoons white wine vinegar

Steps:

  • Preheat the oven to 425 degrees F. Heat the olive oil in a large ovenproof skillet over medium-high heat. Season the chicken with salt and pepper and cook, skin-side down, until browned, about 5 minutes.
  • Separate the heads of garlic into cloves but do not peel. Flip the chicken; add the garlic and rosemary to the skillet and transfer to the oven. Roast until the chicken is cooked through but still moist, 15 to 20 more minutes.
  • Place the bread on a platter and top each slice with a chicken breast. Add the vinegar to the skillet and scrape up any browned bits with a wooden spoon. Add 3 tablespoons water and simmer until the sauce thickens slightly, about 2 minutes. Pour the sauce and garlic over the chicken and bread.
  • Tip: You can squeeze the garlic out of its skin and spread on the chicken or bread.

4 large garlic cloves, minced
1/4 cup freshly squeezed lemon juice
8 tablespoons (1 stick) butter, melted
1 teaspoon dried oregano
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
Pinch cayenne pepper
1 loaf French bread, cut into thick slices

Steps:

  • Position the oven racks so that there is a rack in the center of the oven. Preheat the oven to convection roast at 475°F. Cover a shallow baking pan with foil.
  • Rinse the chicken breasts and pat dry with paper towels. In a small bowl, mix together the garlic, lemon juice, butter, oregano, salt, black pepper, and cayenne and pour into the baking pan.
  • Place the chicken breasts in the garlic-butter sauce and turn them to coat all sides, leaving the cut sides down to absorb more flavor.

4 chicken breasts (trimmed of fat)
2 tablespoons butter or 2 tablespoons margarine
1/2 cup chopped onion
1 teaspoon pepper
2 tablespoons Season-All salt
1 (14 ounce) can swanson roasted garlic chicken broth

Steps:

  • Melt butter in a skillet on medium heat, add onions and saute for two minutes. More butter can be used if desired.
  • Add chicken and season with pepper and season all to taste. Cook until no longer pink.
  • Using a knife, cut a few small slits in each chicken breast. This will allow the flavor to absorb into the chicken.
  • Poor chicken broth over the chicken and simmer for at least 15 minutes, turning occasionally to avoid scorching. More seasoning can be added while simmering if desired. If serving over rice, prepare rice while chicken is simmering.
