This recipe is low-calorie and low in carbohydrates to meet the needs of my Ideal Protein® diet plan. I use this as a substitute for potatoes.

6 cloves garlic, crushed
3 tablespoons olive oil
1 large head cauliflower, coarsely chopped
1 teaspoon kosher salt
1 teaspoon dried parsley
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place garlic in a casserole dish and drizzle with olive oil.
  • Roast garlic in the preheated oven until tender and fragrant, about 15 minutes.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
  • Mash cauliflower and roasted garlic with olive oil together in a bowl. Stir salt, parsley, and pepper into mashed cauliflower until completely incorporated. Spread cauliflower mixture into casserole dish.
  • Bake mashed cauliflower in the preheated oven until hot and flavors blend, about 15 minutes.

2 medium heads cauliflower, broken into florets
1/4 cup olive oil
6 garlic cloves, minced
2 teaspoons Greek seasoning
1 cup shredded sharp cheddar cheese
2/3 cup sour cream
1/2 cup crumbled cooked bacon
1/3 cup butter, cubed

Steps:

  • In a large bowl, combine the cauliflower, oil, garlic and Greek seasoning. Transfer to a greased 15x10x1-in. baking pan. Bake, uncovered, at 425° for 15-20 minutes or until tender, stirring occasionally., Transfer cauliflower to a large bowl. Mash cauliflower with cheese, sour cream, bacon and butter. Transfer to a greased 8-in. square baking dish. Bake at 350° for 25-30 minutes or until heated through.

1 large cauliflower head, chopped
1 celery root bulb peeled and cubed
2 cup coconut milk
2 cup bone or chicken broth or water low-sodium
3-5 clove low-sodium roasted, minced

Steps:

  • Combine everything except the garlic in a large pan and bring to a boil. Simmer for 20-25 or until celery root is tender. Strain but reserve the liquid. Mash the vegetables with a potato masher to desired consistency. Add splashes of the reserved hot liquid until as smooth or chunky as you like. Stir in the garlic and serve sprinkled with fresh chopped herbs. TIPS AND NOTES: Add other flavors such as a dash of parmesan or a chipotle pepper. For a vegan version, omit the milk and stir in a drizzle of extra virgin olive oil at the end.

1 head garlic, skin on
2 teaspoons vegetable oil
2 cups sweet onions, sliced
2 teaspoons brown sugar, packed
1 teaspoon balsamic vinegar
1/2 teaspoon cinnamon
1 1/2 lbs cauliflower florets, chopped
1/4 cup chicken stock (or vegetable)
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon ground pepper

Steps:

  • Preheat oven or toaster oven to 425.
  • Wrap the garlic in aluminum foil. Bake for 25 minutes or just until tender. Cool then squeeze out the garlic. Set aside.
  • In a skillet, heat the oil over medium high heat and cook the onions for 5 minutes. Stir in the brown sugar, vinegar and cinnamon. Reduce the heat to medium low and cook until the onions are golden, about 10 minutes.
  • Steam or broil the cauliflower just until tender about 5 - 7 minutes. Drain and place in a food processor with the stock, olive oil, salt and pepper. Puree until smooth. Stir in the onions and garlic until combined.
  • Garnish with parsley.

1 medium head cauliflower
½ lb green beans
1/2 lemon
¾ lb salmon fillet
black pepper
extra virgin olive oil
parsley flakes
salt
virgin coconut oil

Steps:

  • 1. Preheat oven to 425°F. 2. Fill a medium saucepan halfway with water and bring to a boil. about 7 cups water 3. Wash green beans and trim ends. Transfer to a sheet pan. Drizzle with oil and season with salt and pepper; toss to coat. ½ lb green beans ½ tbsp extra virgin olive oil ¼ tsp salt ⅛ tsp black pepper 4. Spread out evenly and place in the oven. Tossing once halfway through, roast until tender-crisp, 10-15 minutes. 5. Wash and remove leaves from cauliflower; cut into bite-sized florets. 1 medium head cauliflower 6. Once water in saucepan is boiling, add cauliflower. Reduce heat to medium, cover, and cook until very tender, 12-15 minutes. 7. Heat a skillet over medium heat. 8. Season salmon fillet with salt, pepper, and parsley flakes. ¾ lb salmon fillet 1 pinch salt 1 pinch black pepper 1 pinch parsley flakes 9. Coat bottom of skillet with oil. Add salmon and cook until opaque, 3-4 minutes per side. about 1 tbsp virgin coconut oil 10. Drain cauliflower and return to saucepan. Add oil, parsley flakes, salt, and pepper. Mash until smooth. 2 tbsp extra virgin olive oil ½ tsp parsley flakes ¼ tsp salt ⅛ tsp black pepper 11. Cut lemon into wedges. ½ lemon 12. To serve, place cauliflower mash on a plate, add salmon on top, and have green beans on the side. Garnish with lemon wedges. Enjoy!

1 medium potato,peeled, cut into cubes
2 tbsp. olive oil, divided
1 garlic bulb
2 tbsp. butter, softened
1/2 cup milk, warmed
Shredded Parmesan (optional)

Steps:

  • 1. Preheat oven to 375°F. In a large bowl combine cauliflower and potato. Drizzle with 1 tablespoon of the oil, and season with salt and pepper to taste; toss to combine. Place on a rimmed baking sheet; set aside. 2. Cut the top of the garlic bulb to expose the cloves. Place garlic, cut side up, on a sheet of foil, drizzle with remaining oil. Bring sides of foil together to enclose garlic; crimp to seal. 3. Place garlic and baking sheet with potatoes in oven. Roast 20 minutes or until softened. Let cool slightly. 4. Cut or squeeze garlic from peel and place in a blender; discard peel. Add two-thirds of the cauliflower mixture to blender; pulse several seconds. In a large bowl coarsely mash remaining cauliflower mixture with a fork. Add blended cauliflower to bowl; stir to combine. Add butter and milk; stir to combine. Season with salt and pepper to taste. Place in a serving bowl and (if desired) sprinkle with Parmesan. Serve warm. Serves 4
