Roasted Baby Potatoes with Chive Oil image

The roasted baby potatoes are crispy on the outside and soft on the inside, served with a bit of bright green chive oil and sour cream.

1 pound baby potatoes
2 cloves garlic
2 tablespoons olive oil
½ teaspoon kosher salt
Fresh ground black pepper
1 bunch chives or green onions
¼ cup olive oil
2 pinches kosher salt
Creme fraiche, sour cream, or Greek yogurt, to serve (or vegan sour cream or cashew cream)

Steps:

  • Preheat oven to 450°F.
  • Wash the potatoes and cut any larger potatoes in half. Mince the garlic. In a medium bowl, combine potatoes, garlic, olive oil, kosher salt, and plenty of fresh ground black pepper.
  • Place the potatoes on a baking sheet lined with parchment paper (for easy cleanup). Roast for about 35 to 40 minutes, stirring frequently.
  • To make the chive oil, place the chives (or substitute 1 bunch green onions, top green parts only) in the bowl of a food processor and process briefly to chop. Add the olive oil and kosher salt and process again until fully combined. Pass through a fine mesh sieve. (Chive oil can be stored refrigerated for up to 5 days.)
  • Serve potatoes with chive oil and creme fraiche.

1 1/2 pounds baby potatoes
Kosher salt
1/4 cup canola oil
2 tablespoons chopped rosemary leaves
Freshly ground black pepper
8 strips bacon
1 cup sour cream
1 tablespoon spicy brown mustard
2 tablespoons chopped chives, divided

Steps:

  • Put the potatoes into a large pot and cover with cold water. Bring to a boil over medium heat and add a generous pinch of salt. Cook for 8 minutes so they are tender but still slightly firm. Strain and let them cool. When they are cool, cut them in half and carefully scoop out the insides using a teaspoon or melon baller to form a cup. (Reserve the scooped out insides for Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing).
  • Preheat the oven to 400 degrees F.
  • Put the potato cups into a large bowl, add the oil, rosemary and season with salt and pepper, to taste. Carefully toss the potato cups to coat them with the oil. Arrange the potatoes, cut side up, on a baking sheet and bake until the cups are browned and crisp, about 15 to 20 minutes.
  • While the potatoes are baking, put the bacon into a cold skillet and cook over medium heat until crisp. Drain the bacon well on a baking sheet lined with a brown paper bag. (Reserve 2 pieces of bacon for Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing.) Chop the remaining 6 pieces.
  • In a bowl stir together the sour cream, mustard, 1 tablespoon chives, the chopped bacon, and salt and pepper, to taste. Arrange the potatoes onto a serving plate and fill each with a spoonful of the sour cream and bacon mixture. Garnish with the remaining chives and serve immediately.

2 tablespoons olive oil
2 cloves garlic, minced

1 lb baby red potatoes, unpeeled, scrubbed, halved
2 tablespoons olive oil
1 teaspoon fresh rosemary, minced
nonstick vegetable cooking spray
3 slices bacon, coarsely chopped
3/4 cup creme fraiche or 3/4 cup sour cream
chopped fresh chives

Steps:

  • Preheat oven to 400°F Toss potatoes, olive oil, and rosemary in large bowl to coat. Sprinkle with salt and pepper; toss again.
  • Coat large rimmed baking sheet with nonstick spray. Transfer potatoes, cut side down, to prepared sheet. Roast until brown on bottom, about 15 minutes. Using metal spatula, turn potatoes over and roast until tender, 5 to 10 minutes longer. DO AHEAD Can be made 4 hours ahead. Let stand on sheet at room temperature. 1 cup dry white vermouth
3 cups water
4 sprigs fresh parsley
3 sprigs fresh tarragon
1 (1 by 2-inch) piece of lemon zest
1 tablespoon kosher salt
6 small red-skinned potatoes (about 8 ounces)
1 teaspoon extra-virgin olive oil
3 ounces fresh soft goat cheese, at room temperature
2 tablespoons creme fraiche or sour cream
1 tablespoon minced fresh flat-leaf parsley
2 teaspoons minced fresh tarragon
2 teaspoons paper-thin rounds fresh chive, plus 12 1-inch pieces for garnish
2 teaspoons minced fresh chervil or 1 teaspoon minced fresh dill
Freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the potatoes: In a medium saucepan combine the vermouth, water, parsley, tarragon, lemon zest, and salt. Set aside.
  • Cut the potatoes in half horizontally. Slice a small portion off of the rounded ends-- so the potatoes stand up without rolling around -- and discard. Add the halved potatoes to the saucepan. Bring to a boil over medium heat; adjust the heat to maintain a gentle simmer and cook until just fork tender, about 8 minutes. Set the potatoes aside to cool in the liquid for 5 minutes.
  • Drain the potatoes, reserving 2 teaspoons of the cooking liquid. Discard the herbs and lemon zest. With a small spoon or melon baller, scoop out a little of each potato, to make a little "bowl" for the cheese.
  • Toss the potatoes with the oil in a small bowl, and stand them up on a baking sheet. Bake until lightly browned, about 15 minutes.
  • Meanwhile, make the filling: In a medium bowl, cream the cheese with the creme fraiche and the 2 teaspoons of reserved cooking liquid. Fold in the minced parsley, tarragon, chives, and chervil. Season with pepper, to taste.
  • Remove the potatoes from the oven and let cool slightly. While the potatoes are still warm, spoon a dollop of the cheese mixture into each potato. Set the potatoes on a platter and top off with the chive segments to garnish. Serve.

6 lbs yukon gold potatoes, peeled and halved
2 cups whole milk
3/4 cup unsalted butter, divided
1 tablespoon kosher salt
1 cup creme fraiche
1/2 cup finely chopped chives
freshly ground black pepper and kosher salt, to taste

  • In a large pot, cover the potatoes with cold water and bring to a boil over high heat.
  • Cover and cook over med-high heat until the potatoes are tender to a fork, about 20 minutes; Drain.
  • Press the potatoes through a ricer (for very smooth mashed potatoes) into a large saucepan over low heat.
  • Meanwhile, in a small saucepan, combine the milk with 10 tablespoons of the butter and 1 tablespoon of salt and cook over medium heat until the butter is melted, about 3 minutes.
  • Pour the hot milk over the riced potatoes and cook over medium heat, stirring occasionally, until blended - about 2 minutes.
