MEAT LOAF RING
A flavorful meat loaf from the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Steps:
- Combine the first 8 ingredients; mix well.
- Grease a metal ring mold well and pour ketchup in the bottom.
- Fill mold with meat mixture and bake at 350F for an hour.
- When finished, unmold and fill center with your vegetable of choice.
RING AROUND THE MEATLOAF
Throw together a generic meatloaf with fresh veggies that you have leftover in the fridge, mold it into a ring, plop some 'taters in the middle, and voila! Dinner is served!

Steps:
- Preheat oven to 400 degrees. Fill large saucepan with water & pinch of salt. Put on high heat to boil.
- In large bowl, combine all meatloaf ingredients (except for ketchup) - Mix well with your hands.
- When water is boiling, add peeled potatoes. Boil potatoes for 20-25 minutes or until tender.
- Place meatloaf in shallow 2 quart baking dish sprayed with cooking spray. Form mixture into a ring, leaving an open center. Top with ketchup, if desired.
- Bake meatloaf ring at 400 degrees for 30 minutes.
- While meatloaf is baking, drain cooked potatoes & place in medium bowl. Add remaining ingredients. Mix well with mixer.
- Remove dish from oven when done. Spoon mashed potatoes into the open center of the dish.
- Return dish to oven for 7-10 minutes.
- Add a bit of italian herb seasoning & parsley flakes to top of potatoes when finished.

- 1. Preheat Oven @ 350 Season pans with Cooking spray (see Photos of pans) Muffin tin or 4 1/2 cup ring pan ( small ring)
- 2. Mix all ingredients together. (See photos) Except topping.
- 3. INDIVIDUAL servings: (See Photo) If making individual Meat loaves, Use Muffin tin. Make large Meat balls and place (1) in each muffin cup. Bake 15 min covered, and 5-8 min uncovered. Top with Ketchup, to serve. Freezes well without Ketchup for individual servigs.
- 4. RING of Meatloaf: (see Photo) If making a RING, use Cake ring Pan, Spray well. Mold mixture in sprayed pan. Take a Knife to loosen sides. Turn out on baking pan or pie plate. Bake 15 min, covered and 5-10 min uncovered, Top with Ketchup.
- 5. Fill Center of meatloaf ring with Your Choice of: Green beans, Lima beans, Peas, Peas & carrots, Corn, Mexi-corn, Mashed Potatoes. Use your imagination, the choices are endless.
EASY MICROWAVE MEATLOAF RING
Meatloaf in the microwave, who knew? Use microwave steamer bowl to lower fat content. Great for busy nights when you want something hearty, but don't have the time to wait for the oven.

Steps:
- Mix all ingredients together except barbecue sauce.
- In basket part of steamer, press into a ring. Brush barbecue sauce over top.
- Put about 1/2 cup water in bottom.
- Microwave, uncovered, on high 6 minutes and turn.
- Microwave 6 to 8 more minutes.
- Meatloaf is done when 160 degrees in center.
