RIGATONI WITH SAUSAGE, SPINACH, AND GOAT CHEESE



Rigatoni with Sausage, Spinach, and Goat Cheese image

While this recipe is delicious as is, you can do a couple of things to give it even more flavor. Use a combination of spicy and sweet sausage instead of just sweet and--something I do almost every time I use goat cheese--use a fork to mix into it 1/2 teaspoon each of chopped fresh parsley, chives, and thyme.

Salt to taste
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
3/4 pound sweet Italian sausage or a combination of sweet and spicy, casings removed
3/4 pound rigatoni
1 tablespoon chopped fresh parsley leaves
4 ounces spinach, well washed and dried and coarsely chopped (about 2 cups)
1/2 pint cherry, grape or sungold tomatoes
4 ounces fresh goat cheese
2 tablespoons freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil. Heat the oil in a large saute pan over medium-low heat. Add the onions and a pinch of salt and cook until translucent, about 4 minutes. Add the sausage and use a fork to crumble the sausage into the pan. Increase the heat to medium-high, and fully cook the sausage, adding some of the pasta water to deglaze the pan.
  • Cook the rigatoni until just shy of al dente. Before draining, reserve about 1 cup of the cooking water.
  • Add the pasta to the pan with the sausage, reserving the cooking liquid, and add the parsley. Add the spinach and tomatoes and cook, tossing, until the spinach has wilted. Add some of the reserved cooking liquid, if needed. Remove from the heat. Crumble the goat cheese with a fork and add it along with the Parmigiano-Reggiano. Add a bit more of the cooking liquid if needed and serve.

1/2 pound rigatoni
1/4 pound spicy Italian sausage, casing removed
2 garlic cloves, thinly sliced
1 1/2 cups prepared marinara sauce
1/2 teaspoon dried crushed red pepper
1/4 cup grated mozzarella cheese
2 tablespoons grated Parmesan cheese
1 teaspoon chopped fresh Italian parsley
Extra-virgin olive oil

Steps:

  • Cook rigatoni in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta.
  • Meanwhile, preheat broiler. Cook sausage in heavy large pot over medium-high heat until no longer pink, stirring frequently and breaking up with back of wooden spoon. Add garlic and sauté until soft, about 2 minutes. Drain off excess oil and return pot to medium-high heat. Stir in marinara sauce and crushed red pepper, then pasta. Season to taste with salt and pepper. Divide pasta among four 1 1/4-cup soufflé dishes or custard cups. Sprinkle mozzarella and Parmesan over. Place in broiler until cheese melts and begins to brown, watching closely to prevent burning, about 1 1/2 minutes. Sprinkle rigatoni with parsley, drizzle with olive oil, and serve.

2 (15 ounce) cans tomato sauce
2 teaspoons dried oregano (or to taste)
1/2 teaspoon dried basil
1/2 teaspoon salt

1 lb swiss cheese or 1 lb mozzarella cheese, sliced thin
1/2 cup butter, melted (1 stick)

Steps:

  • Preheat oven to 350°F.
  • In a large pot of boiling salted water, cook rigatoni according to package directions until al dente; drain.
  • Combine tomato sauce with seasonings, and simmer, uncovered, for 10 minuntes.
  • Add sauce to pasta and toss to coat.
  • In a baking dish, arrange pasta and cheese in layers, ending with cheese.
  • Pour melted butter over all.
  • Bake, covered, for 15 minutes.
  • Uncover, and bake for another 15 minutes.
  • To freeze: Undercook pasta by a minute or two. Assemble dish as directed. Wrap with plastic wrap and then foil. Label and freeze.
  • To serve: Thaw in fridge. Remove plastic wrap and recover with foil. Bake as directed for 20 minutes. Then uncover and bake 15 more minutes.

garlic powder, to taste
⅓ cup flour
onion powder, to taste
3 cups milk
2 lb rigatoni, cooked
4 eggs, beaten
24 oz marinara sauce
3 cups shredded mozzarella cheese
½ cup parmesan cheese

Steps:

  • Preheat oven to 375°F (190˚C.)
  • In a skillet, cook and crumble the ground beef with garlic powder, onion, powder, salt, & pepper. Remove from pan and drain.
  • In the same pan, melt the butter, and mix with the flour until it forms a paste.
  • Add the milk gradually, and bring to a boil, until it thickens into a creamy sauce. Set aside.
  • In a bowl, mix the rigatoni with the eggs. Divide between two 9x13 inch (23x33 centimeter) baking dishes.

This gem of a find was originally printed in the Atlanta Journal-Constitution. It is the baked macaroni and cheese recipe created by Dave Roberts for his and Sam's BBQ restaurant in Marietta, Georgia. This rich, creamy and decadent mac 'n cheese is the best I have ever had BAR-NONE! I have always started with a béchamel sauce...

1 lb (16 oz.) box rigatoni pasta, i use barilla
1 Tbsp salt, I used kosher salt
8 oz extra sharp cheddar, weigh then grate
8 oz monterey jack, weigh then grate
4 oz parmesan, weigh then grate
2 c (1 pint) heavy cream
freshly ground salt to taste
fresh cracked black pepper to taste
*paprika, dried parsley and more pepper for top to garnish

Steps:

  • 1. Preheat oven to 350. In large pot, bring water to boil, add 1 Tbl. salt. Boil rigatoni noodles according to package directions. Once cooked, drain but do not rinse the pasta. While pasta is boiling, grate cheese. (Start while water is heating.) Drain pasta well, shaking and tilting to remove all of the water, then pour pasta into large mixing bowl. Add half the cheddar, monterey jack and parmesan cheeses, and all of the the heavy cream. Stir well to combine, season with pepper and more salt to taste. Transfer the mixture to a 9"x13" casserole dish. Sprinkle the remaining cheeses on top, sprinkle nicely with paprika, pepper and parsley for pretty color, and bake for 30 minutes until golden brown and bubbly.

  • Melt butter in heavy large skillet over medium-low heat. Add flour and stir 3 minutes. Gradually whisk in milk and chicken broth. Bring to boil, stirring frequently. Add tomatoes, red pepper flakes, pepper and oregano and simmer 5 minutes, stirring occasionally. Reduce heat to low. Add cheddar and 1 cup Romano and stir until melted and well blended. Pour sauce over rigatoni. Toss thoroughly. Serve, passing additional Romano separately.

1 tablespoon olive oil
3 cups ground beef
1 onion
1 garlic clove, chopped
1 (14 ounce) can chopped tomatoes

1/4 cup butter
1/2 cup all-purpose flour
1 3/4 cups milk
2 egg yolks

Steps:

  • To make the meat sauce, heat the oil in a large frying pan and fry the beef for 10 minutes, stirring occasionally until browned all over. Add the onion to the pan and cook for 5 minutes, stirring occasionally.
  • Stir in the garlic, tomatoes, herbs and tomato paste. Bring to a boil, cover, and simmer for about 30 minutes.
  • Meanwhile, to make the cheese sauce, melt the butter in a small saucepan, then add in the flour and cook for 2 minutes, stirring constantly.
  • Remove the pan from the heat and gradually pour in the milk, stirring constantly. Return the pan to the heat and bring to a boil, stirring the mixture occasionally, until creamy and thickened.
  • Add the egg yolk, cheese and seasoning, and stir until the sauce is well blended.
  • Preheat the broiler. Meanwhile cook the pasta in plenty of salted boiling water according to the instructions on the package. Drain thoroughly and turn into a large mixing bowl. Pour the meat sauce over and toss to coat.
  • Divide the pasta among four flameproof dishes. Spoon over the cheese sauce and place under the grill until brown. Serve immediately, garnished with fresh basil.

3 1/2 ounces diced bacon
1 ounce diced shallots
5 1/2 ounces diced porcini mushrooms
6 ounces chicken stock
Salt and freshly ground black pepper
3 ounces butter
3 tablespoons bread crumbs, plus extra for sprinkling
1 tablespoon chopped parsley leaves
8 rigatoni shells
1 tablespoon truffle shavings
Parmesan cheese, as needed
2 cups milk, scalded
2 to 3 teaspoons blonde roux, recipe follows
Salt and freshly ground black pepper
4 ounces aged cheddar, grated
2 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • In a saute pan, sweat the bacon to render the fat. Remove the bacon from the pan, then add the shallots to the fat to cook. When tender, add the porcini and cook 5 minutes. Add the bacon back in the pan. Add the chicken stock a little at a time. Season with salt and pepper and add butter. Cook until thick, about 3 minutes. Toss in bread crumbs and parsley and remove from heat. Check seasoning.
  • To make the Mornay:
  • Begin by scalding the milk. Turn heat to low and slowly whisk in the roux. Cook for 5 to 10 minutes over low heat. Season with salt and pepper and add grated cheese. Reserve sauce in baine marie.
  • Preheat oven to 350 degrees F.
  • To make the rigatoni, begin by cooking the rigatoni in well-salted water for 5 minutes. Shock quickly in ice water. Remove from ice water and keep tightly covered until ready to use. When the stuffing has cooled, put it in a piping bag and fill rigatoni, pressing ends clean.
  • Place 4 rigatoni on a tray and spoon the sauce over to completely cover the pasta. Sprinkle with a little fresh bread crumbs and grated Parmesan. Bake for 5 minutes. Finish under broiler, if necessary.
  • Plate on the cooking tray. Garnish with truffle shavings and Parmesan cheese.
  • Melt the butter in a small pan. Whisk in the flour. Cook until the mixture bubbles. Remove from the heat.

My oldest son is the picky eater in the house but this recipe earned seconds on his plate! It has great flavor but it is not overwhelming to those who prefer simple food. Serve with crusty bread and a salad.

4 1/2 cups milk
1/2 cup butter
8 tablespoons flour
1/2 teaspoon nutmeg
1/4 cup parmesan cheese, grated (or your favorite hard cheese blend)
16 ounces rigatoni pasta
1 cup fresh mozzarella cheese, cubed in 1/2-inch pieces (a ball)
1/2 lb cubed ham (1/2-inch pieces)
1/4 cup breadcrumbs (I prefer the Panko but you can use any kind you like)

Steps:

  • Butter a 2 quart baking dish and lightly sprinkle 1 tsp bread crumbs over butter. Just sprinkle it with your finger tips like you would sprinkle salt over plate. It will be very sparse.
  • Pour milk into a medium saucepan. Using a seive, whisk in flour. Squash out any lumps.
  • Place saucepan on high heat for 2 minutes to get the milk warm then turn down to just above medium to avoid boiling. When the milk is warm, add the butter, nutmeg, grated parmesan and a dash of salt. (be careful because your ham will be salty as well) Stir gently. Continue to stir until the sauce thickens, 15 - 20 minutes. (this is a long way to get a bechamel sauce but it comes out nice).
  • Cook your pasta just to al dente, it will continue to cook in the oven.
  • When the sauce is thick and creamy remove it from the heat.
  • Put your pasta in a large bowl, add the sauce over top. (all of it, it looks like a lot but it makes a nice creamy dish) Mix gently.
  • Add ham and mozzarella cubes, fold all together. Pour into baking dish and top with breadcrumbs and grated parmesan to your liking.
  • Bake at 350 degrees for 25 minutes, sauce should be bubbly and tips of pasta will be golden.

1/2 pound rigatoni pasta, uncooked
1/4 pound spicy italian sausage, casing removed
2 garlic cloves, thinly sliced
1 1/2 cups prepared marinara sauce
1/2 teaspo dried crushed red pepper
1/4 cup grated mozzarella cheese
2 tablespo grated parmesan cheese
1 teaspoon chopped fresh italian parsley
extra-virgin olive oil

Steps:

  • 1. Cook rigatoni in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta.
  • 2. Meanwhile, preheat broiler. Cook sausage in heavy large pot over medium-high heat until no longer pink, stirring frequently and breaking up with back of wooden spoon. Add garlic and sauté until soft, about 2 minutes. Drain off excess oil and return pot to medium-high heat.
  • 3. Stir in marinara sauce and crushed red pepper, then pasta. Season to taste with salt and pepper.
  • 4. Put pasta in oven-proof dish. Sprinkle mozzarella and Parmesan over. Place in broiler until cheese melts and begins to brown, watching closely to prevent burning, about 1 1/2 minutes. Sprinkle rigatoni with parsley, drizzle with olive oil, and serve.

8 ounces rigatoni pasta, uncooked
1/2 cup chopped celery
1/2 cup chopped onion
1/3 cup margarine or 1/3 cup butter
1/3 cup all-purpose flour
2 tablespoons instant chicken bouillon granules
4 1/2 cups milk
1 1/2 cups sharp cheddar cheese
3 cups cubed chicken
1 (2 ounce) jar pimientos, drained, chopped
1 (3 ounce) can French-fried onions (optional)

Steps:

  • Cook pasta according to package directions. Preheat oven to 350. In large skillet, over medium heat, cook celery and onion in margarine until tender. Stir in flour and boullion. Gradually stir in milk. Cook and stir until thickened and bubbly. Remove from heat. Add cheese; stir until melted. Stir in pasta, chicken, and pimento. Spoon into a greased 9x13 baking dish. Cover. Bake 30 minutes or until hot and bubbly. Uncover; top with French fried onions, if desired. Bake 5 minutes longer. Let stand 10 minutes.

RIGATONI WTH SPINACH AND RICOTTA CHEESE



Rigatoni wth Spinach and Ricotta Cheese image

2 c rigatoni pasta, uncooked
14 1/2 oz can tomato sauce
14 1/2 oz can diced tomatoes
1 Tbsp garlic, minced
1/2 tsp crushed red pepper flakes
1 1/2 Tbsp italian seasoning
2 Tbsp all purpose flour
1/2 c ricotta cheese
1/2 c mozzarella cheese, freshly shredded
1 box frozen spinach

Steps:

  • 1. In a sauce pan, heat 2 tablespoons oil. Add all-purpose flour and cook for about 1 minute (until flour become light brown). Stir in ½ cup milk and cook until it thickens to sauce consistency. Add salt and black pepper. Set aside.
  • 2. Cook rigatoni according to package direction. (I prefer it little under cooked) Cook frozen spinach according to package directions.
  • 3. In a large sauce pan heat 2 tablespoons oil. Add garlic and cook 30 seconds. Add diced tomato and tomato sauce. Add Italian seasoning and crushed red pepper. Cook for about 10 minutes. Remove from heat.
  • 4. Add cooked spinach. Add white sauce and ricotta cheese and mix it well.
  • 5. Add salt and pepper according to your taste. Set aside 1 cup of sauce. Mix cooked pasta and sauce in a large baking dish.
  • 6. Sprinkle mozzarella cheese on top. Cover it with aluminum foil (poke couple of hole to allow steam to escape). Bake it in 350-degrees for 15 minutes remove foil and broil until cheese is golden brown (about 4 minutes). Serve hot with garlic bread. Serve remaining sauce as a dipping sauce with garlic bread.
