SPAGHETTI AND MEATBALLS WITH RICOTTA



Spaghetti and Meatballs with Ricotta image

1 cup plus 2 tablespoons olive oil or canola oil
4 cloves garlic, finely chopped
1/2 small Spanish onion, finely grated
1/4 cup freshly grated Parmesan
1/4 cup finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh oregano
2 large eggs
Salt and freshly ground black pepper
Salt and freshly ground black pepper
8 ounces ground chuck (80/20)
8 ounces ground pork (80/20)
4 to 6 tablespoons breadcrumbs
2 cups all-purpose flour
3 eggs
Kosher salt
2 tablespoons olive oil
1 small Spanish onion, finely diced
2 cloves garlic, finely chopped
Pinch of red pepper flakes
One 28-ounce can crushed tomatoes
1 teaspoon finely chopped fresh oregano
Kosher salt and freshly ground black pepper

Pinch of sugar, if needed
3 tablespoons chopped fresh basil
Fresh ricotta, for garnish
Parmesan, for grating on top

Steps:

  • For the meatballs: Heat 2 tablespoons of the oil in a small saute pan over medium heat. Add the garlic and onions and cook until soft, about 1 1/2 minutes. Remove from the heat and let cool slightly.
  • Whisk together the Parmesan, parsley, oregano, eggs, 3 tablespoons cold water, the sauteed garlic and onions and some salt and pepper in a large bowl until combined. Add the chuck and pork and gently mix together until combined. Begin adding breadcrumbs a few tablespoons at a time until the mixture just holds together. Cover and refrigerate for at least 1 hour and up to 8 hours. The longer you let the mixture sit, the more the flavor develops.
  • For the fresh pasta: In a food processor, combine the flour and eggs. Pulse until it comes together as a dough. Remove and knead until smooth. Let rest for at least 30 minutes.
  • For the tomato sauce: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 4 minutes. Add the garlic and red pepper flakes and cook for 30 seconds. Increase the heat to high, add the tomatoes and oregano and season with salt and pepper. Cook, stirring occasionally, until slightly thickened, about 15 minutes. Taste for seasoning (adding a pinch of sugar if needed) and stir in the basil.
  • Form the meatball mixture into 1 1/2-inch balls. Heat the remaining 1 cup of oil in a large saute pan over medium-high heat until it begins to shimmer. Add the meatballs and fry until golden brown on all sides.
  • Add the meatballs to the sauce, reduce the heat to medium and continue cooking until the meatballs have cooked through and the sauce has thickened more, about 15 minutes longer.
  • To cook the pasta, bring a large pot of water to a boil and add salt.
  • Roll out the dough in portions using a pasta roller. Cut out spaghetti using a pasta cutter and place the fresh pasta on a tray lined with parchment.
  • Boil the pasta until al dente, 1 to 2 minutes. Toss the pasta with some of the warm sauce and a little bit of pasta water in a saute pan.
  • Transfer the sauced pasta to a platter and top with the meatballs (using a slotted spoon). Ladle the remaining tomato sauce over the spaghetti and meatballs. Dollop ricotta on top and grate lots of Parmesan over the top. Garnish with fresh basil sprigs and parsley leaves.

1/2 teaspoon grated lemon zest, plus 2 tablespoons fresh juice

1 sweet onion, such as Vidalia, thinly sliced (1 1/2 cups)
3 cloves garlic, thinly sliced
12 ounces fresh spinach, tough stems removed, cut into 2-inch pieces (6 cups)
12 ounces spaghetti
1 cup fresh or frozen peas

Steps:

  • In a bowl, combine ricotta, lemon zest and juice, and basil; season with salt and pepper. Heat oil in a large skillet over medium. Add onion and garlic; cook, stirring, until softened, 6 to 8 minutes. Add spinach; season generously and cook, stirring, until just wilted, about 2 minutes.
  • Meanwhile, cook pasta in a pot of salted boiling water 2 minutes less than per package instructions. Add peas; cook 1 minute more. Reserve 1 cup pasta water; drain. Add pasta, peas, and 3/4 cup ricotta mixture to skillet.
  • Reduce heat to low and stir, adding enough reserved pasta water to create a silky sauce; season to taste. To serve, dollop pasta with remaining ricotta mixture, drizzle with more oil, and sprinkle with basil leaves.

1 cup part-skim ricotta cheese
2 teaspoons chopped fresh basil

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink, reserving 2 tablespoons of the cooking water.

Spaghetti Squash with Fresh Tomatoes and Ricotta image

This quick, flavorful and healthy side is done from fridge to table in under 30 minutes. We trim off the top and bottom of the squash, poke it all over and cook it in the microwave in a fraction of the time it would take to roast it. If you wanted to make this a complete meal, juicy turkey meatballs would be a delightful accompaniment to this pasta alternative.

2 cups grape tomatoes, halved lengthwise or quartered if large
1 tablespoon finely minced shallot
1 tablespoon red wine vinegar
1/4 teaspoon red chile flakes
1 small garlic clove, finely grated
3 tablespoons extra-virgin olive oil
2 tablespoons thinly sliced fresh basil
Kosher salt
One 2-pound spaghetti squash
1/3 cup whole-milk ricotta

Steps:

  • Stir together the tomatoes, shallot, vinegar, chile flakes, garlic, 1 tablespoon olive oil, 1 tablespoon basil and 3/4 teaspoon salt in a medium bowl. Set aside to marinate, stirring the tomatoes every 10 minutes, while you prepare the spaghetti squash.
  • Carefully slice off the top and bottom of the squash, trimming just enough so that the inner flesh of the squash is exposed. Use a sharp paring knife to poke ten to twelve 1/2-inch-deep slits all over the squash. Put the squash in to a medium glass heatproof bowl and microwave on high for 5 minutes. Carefully flip the squash over and microwave on high until a fork easily pierces through the flesh that is exposed on the squash, about 5 additional minutes.
  • Allow the squash to cool enough so that you can handle it, then split it in half length-wise. Use a spoon to scoop out the seeds and discard them. Then use a fork to loosen the squash strands and transfer them to a medium bowl. Add the remaining 2 tablespoons olive oil and 1 teaspoon salt. Use your hands to gently work the oil and salt into the squash. Transfer the squash to a serving platter and pour the tomato mixture over the top (along with all of its juices). Top with spoonfuls of the ricotta and garnish with the remaining basil. Serve warm or at room temperature.

SPAGHETTI WITH BROCCOLI AND WALNUT-RICOTTA PESTO

2 tablespoons shelled walnuts (about 3/4 ounce)
1 cup basil leaves
1/4 cup fresh ricotta
2 tablespoons warm water
1/4 cup freshly grated Parmesan, plus additional for sprinkling (Pecorino can be substituted for some of the Parmesan)
2 tablespoons extra virgin olive oil
1 tablespoon walnut oil
Salt to taste
1/2 pound broccoli crowns, broken into small florets
1 pound spaghetti
About 1/4 cup pasta cooking water (more to taste)

Steps:

  • Turn on a food processor fitted with the steel blade and drop in the garlic. When it is chopped and adhering to the sides of the bowl, turn off and scrape down the bowl. Add the walnuts and basil and process to a paste. Add the ricotta, 2 tablespoons warm water, and Parmesan and pulse until well blended. Add the olive and walnut oils and process until smooth and homogenous. You can also make this in a mortar and pestle. Taste and add salt as desired. Transfer to a wide pasta bowl.
  • Bring a large pot of water to a boil. Add the spaghetti and boil 5 minutes. Add the broccoli and continue to boil until the pasta is al dente, about 4 more minutes. Before draining the pasta, remove 1/2 cup of the pasta cooking water. Add 1/4 cup of it to the ricotta mixture and stir until well blended. The sauce should have a creamy consistency (add more of the pasta water if necessary). Drain the spaghetti and broccoli and toss at once with the sauce. Serve, passing Parmesan or Pecorino on the side.

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions. Reserve 1 cup of pasta cooking water and drain.
  • Combine the ricotta, lemon zest, lemon juice and 1/2 teaspoon each salt and pepper in a large bowl. Whisk in 1/2 cup of the reserved pasta cooking water and the baby arugula. 4 ounces diced pancetta
1 tablespoon very coarsely ground pepper
1/2 cup whole-milk ricotta cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs for al dente. Reserve 1 1/4 cups cooking water and then drain.
  • Meanwhile, combine the olive oil and pancetta in a large wide pot over medium-high heat. Cook, stirring occasionally, until the pancetta is golden brown and crisp, 3 to 5 minutes. Stir in 1 teaspoon pepper, then add 3/4 cup of the reserved cooking water and the spaghetti, tossing until combined. Stir in the ricotta and 2 tablespoons pecorino, tossing constantly to evenly coat. (The ricotta will seem thick at first, but as it combines with the hot cooking water it will create a creamy sauce.) Add more cooking water a few tablespoons at a time if the sauce is too thick or dry. Season with salt.
  • Divide the spaghetti among bowls. Sprinkle with the remaining 2 tablespoons pecorino and 2 teaspoons pepper.

1 15-ounce container part-skim ricotta
4 cloves garlic, thinly sliced
1/4 teaspoon cloves garlic, minced
1/4 teaspoon crushed red-pepper flakes
1/4 cup chopped fresh basil, plus 2 sprigs
1/4 cup chopped fresh oregano, plus 2 sprigs
1 large spaghetti squash (about 5 pounds)
1 tablespoon olive oil
1 medium onion, finely diced (2 cups)
2 pints cherry tomatoes, stems cut, halved
1/2 cup white wine
1/2 teaspoon salt
Olive-oil cooking spray

Steps:

  • Wrap ricotta tightly in fine cheesecloth; place in a colander over a bowl. Place a heavy bowl or cans on top; let drain, refrigerated, for 3 hours or overnight.
  • Heat oven to 350 degrees. Place sliced garlic on a baking pan coated with olive-oil cooking spray. Bake 15 minutes; stir every 3 minutes. Remove pieces as they turn golden; set aside. Place drained ricotta, red pepper, 3 tablespoons basil, and 3 tablespoons oregano in a bowl; combine. Cover with plastic wrap; set aside. Halve squash lengthwise; remove seeds. Place a sprig of basil and a sprig of oregano in each half. Coat a baking pan with olive-oil cooking spray; carefully place squash, cut-sides down, on tray. Transfer to oven; bake until skin yields to pressure and flesh is soft, about 1 hour.
  • Heat a large saute pan over medium-high heat. Add olive oil, minced garlic, and onion to pan; cover. Cook until translucent, about 5 minutes. Remove lid; add tomatoes, wine, and salt. Cook uncovered until tomatoes are juicy, about 5 minutes. Stir in remaining basil and oregano. Remove herbs from squash; discard. Pull strands from squash with a fork; transfer to a serving bowl. Top with tomato mixture, ricotta, and garlic slices; serve.

3 garlic cloves, minced

1 head radicchio, quartered, cored, and thinly sliced crosswise

Steps:

  • Heat 1 tablespoon oil in a medium skillet over medium heat. Add garlic, and cook until soft but not browned, 1 to 2 minutes. Add parsley and breadcrumbs; cook, stirring frequently, until breadcrumbs are golden, about 3 minutes. Transfer to a bowl, and set aside.
  • Bring a large pot of water to a boil, and add salt. Add pasta, and cook until al dente according to package instructions. Drain, reserving 1 cup cooking liquid. Return pasta and reserved cooking liquid to pot, and add ricotta and remaining tablespoon oil. Toss to coat evenly. Add radicchio and half the breadcrumb mixture; season with salt and pepper. Toss to combine. Serve immediately, sprinkled with remaining breadcrumb mixture.

SQUID INK SPAGHETTI WITH BELL PEPPER, CALAMARI, SHRIMP, RICOTTA AND COLONNATA LARD

1 red bell peppers
1 yellow bell pepper
3 ounces lardo
2 cloves garlic, thinly sliced
1 fresh chili pepper, chopped
Salt and freshly ground black pepper
16 ounces fresh squid ink spaghetti (or dried if fresh is not available)
9 ounces fresh shrimp, peeled
6 ounces fresh calamari, sliced
2 ounces salted ricotta, grated

Steps:

  • Roast the yellow and red bell peppers directly on the flame of a stovetop until the skins char. Remove from the heat and seal in a container to cool. When cool, peel the peppers under cold running water and slice into thin strips.
  • Cut the lardo into small sticks and saute in a large skillet over medium heat. Slowly increase the heat in order to get the lard crispy. Once the lard is crispy, remove from the skillet and reserve. Discard half the melted fat in the skillet. Using the remaining fat, saute the garlic and chili pepper until lightly browned. Add the bell peppers and saute for 5 minutes.
  • Meanwhile, bring a large pot of salted water (about 5 quarts) to a boil. Add the fresh squid ink spaghetti and cook according to the package directions.
  • When the bell pepper, garlic and chili mixture has cooked, add the shrimp and calamari and saute everything together until cooked, a few minutes. Season with salt and pepper to taste.
  • Add the cooked squid ink spaghetti to the skillet and toss together until creamy. Serve topped with the crispy lard and grated salted ricotta.

EASY RICOTTA SPAGHETTI

This is a fast way to make spaghetti after work. I know lots of people don't care for the prepared sauces, but there are some good ones out there. It makes it so much easier to make. The ricotta dresses up the dish.

3 tablespoons sausage drippings
1 (26 ounce) jar prepared spaghetti sauce (I use Ragu Parmesan and Romano or make your own)
2 tablespoons brown sugar
8 ounces spaghetti, cooked
1 cup ricotta cheese
parmesan cheese

Steps:

  • In a skillet heat the sausage drippings, then brown your hamburger meat.
  • Drain meat and return to skillet.
  • Add spaghetti sauce and brown sugar, heat on low while spaghetti cooks.
  • When pasta is ready, put in warmed bowls, top with sauce, add three tablespoons of ricotta to each bowl, Stir ricotta into the sauce and top with Parmesan cheese.

1/2 teaspoon kosher salt
1 lemon, zested (about 1 teaspoon zest)

One 15-ounce container ricotta cheese
1/2 cup finely grated Parmesan cheese
1/4 cup heavy cream
2 tablespoons unsalted butter

Steps:

  • Prepare the breadcrumbs: Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Immediately add the breadcrumbs and salt. Cook, stirring occasionally, until toasted, about 2 minutes. Transfer to a bowl and let cool for 5 minutes. Add the lemon zest, Parmesan and parsley. Set aside.
  • Meanwhile, cook the pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions, until al dente.
  • While the pasta cooks, combine the ricotta, Parmesan, cream and 1/2 teaspoon salt in a food processor. Process until super creamy, about 30 seconds. Set aside.
  • Drain the spaghetti, leaving behind 1/2 cup of the cooking water in the pot. Add the butter to the pot and bring to a simmer. Add the spaghetti and the ricotta mixture. Remove from the heat and stir vigorously with a pair of tongs until the ricotta and pasta water combine to make a smooth, velvety sauce. Season with a good amount of black pepper.
  • Divide the pasta among serving bowls and top each with a hearty sprinkle of the breadcrumbs.

SPAGHETTI SQUASH & RICOTTA LASAGNA

1 spaghetti squash
1 lb. fresh ricotta (drained well, using a colander)
2 28 oz. cans chopped tomatoes
1 cup Grana Padano cheese, grated
1 bunch basil, torn
1 tsp dried chili flakes
2 garlic cloves
1/2 cup olive oil

Steps:

  • Step 1: Preheat the Panasonic Convection Oven to 375°F. Step 2: Squash can take quite a long time to roast in the oven so at home I always cook it in the microwave, where it steams from the inside out and takes only 15-20 minutes. Start by piercing the spaghetti squash with a fork and set the microwave on high for 15 minutes. Using a knife to check the squash, when it is finished cooking, it should easily cut to the centre without any resistance. Step 3: Set the Induction Cooktop to heat level 6 and sauté the garlic and chilies in the olive oil. Once the garlic has become translucent, add the chopped tomatoes, a generous amount of salt and cook for an additional 10 minutes. Step 4: Once the ricotta has drained, place it in a separate bowl and incorporate a little olive oil, salt and pepper. Step 5: Once the spaghetti squash has cooked and cooled slightly, cut it in half and using a fork, pull away at the strands of cooked squash. You'll see its resemblance to spaghetti as you do. Reserve in a bowl. Step 6: Using a Pyrex or other baking dish, build the lasagna in this order: squash, tomato sauce, then ricotta. Don't forget to add some torn basil into the dish as you assemble it. Since the layers for this dish are thicker than traditional lasagna, you should only need 2-3 layers. Step 7: Top with grated Grana Padano cheese and bake for 15 minutes.

1/2 bunch of fresh thyme (1/2 ounces)
4 cloves of garlic
1/2-1 fresh red chile
1 lemon
1 pound mixed-color cherry tomatoes, on the vine
8 ounces best-quality ricotta salata cheese
11 ounces dried spelt spaghetti
4 handfuls of arugula
Optional: balsamic vinegar

Steps:

  • Preheat oven to 350°F. Pour 3 tablespoons of oil into a small bowl. Run the bunch of thyme under a hot tap for 3 seconds to reawaken it, then shake dry and strip the leaves into the oil. Peel the garlic, then finely slice it with the chile and add to the bowl. Finely grate in the lemon zest, add a pinch of sea salt and black pepper, and mix together. Lay the cherry tomatoes in a 12-x 16-inch baking dish. Rub the flavored oil all over the ricotta and place in the center of the dish, then gently rub the remaining oil over the tomatoes. Add a splash of water to the dish, place in the oven, and roast for 45 minutes, then remove. With 10 minutes to go, cook the spaghetti in a pan of boiling salted water according to the package instructions.
  • Lift the ricotta out of the baking dish, then shake the tomatoes off the vines, discarding the stalks. Add half a cup of pasta water to the dish and gently shake to loosen all the sticky goodness from the base. Drain the spaghetti and toss straight into the dish with a squeeze of lemon juice, season to perfection, then break that beautiful ricotta over the top. Sprinkle over the arugula, toss together well, then serve. My missus likes this with a little drizzle of balsamic too.

An upside-down spaghetti pie filled with Italian tomato sauce, ricotta, mozzarella, spinach, provolone cheese, and ground beef for the meat-eaters.

1/2 pound 8 ounces spaghetti noodles
2 eggs
1/2 cup + 1/4 cup Parmesan cheese (grated)
3 cups Italian tomato sauce or marinara sauce (jarred or homemade both work great)
1 cup whole-milk ricotta cheese
1 1/2 cups about 12 ounces frozen spinach, thawed and squeezed dry
1 cup mozzarella cheese (shredded)
1/8 teaspoon ground nutmeg or more to taste
4 ounces 4 - 6 slices Provolone cheese
1/2 cup panko-style breadcrumbs
Kosher salt & freshly ground black pepper
1 pound lean ground beef

Steps:

  • Heat oven to 350 degrees Fahrenheit. Place four large (Approx. 12 ounces for one large serving per person) or six medium (10 ounces or so for one slightly more reasonable serving per person) ramekins on a baking sheet.
  • Boil spaghetti noodles in a large pot until al dente, according to package directions. Drain and return to pot. Set aside to cool.
  • Beat the eggs and add them to the noodles, along with 1/2 cup Parmesan. Toss until all the spaghetti is covered with the egg and cheese.
  • Brown ground beef and drain any fat. Add 1 cup of the Italian tomato sauce or marinara and stir. Set aside.
  • In a medium bowl, mix together the ricotta cheese, spinach, mozzarella cheese, nutmeg, and a few turns of freshly ground black pepper.
  • In a small bowl, stir together the 1/2 cup bread crumbs and 1/4 Parmesan cheese with a spoon.
  • Divide the ingredients among the prepared ramekins. Start with the Italian tomato sauce or marinara with or without ground beef. Drop 3 - 4 tablespoonfuls of the ricotta mixture into each ramekin, adding an extra tablespoonful to the vegetarian versions if making both. Lay one slice of provolone over the top of each, then divide the spaghetti noodle mixture evenly between each ramekin. Using clean hands, gather and press the noodles firmly into the ramekin, taking care not to squeeze out any of the contents. Spoon the breadcrumbs over the top of each pot pie.
  • Bake at 350 degrees for 25 - 30 minutes or until bubbling and the spaghetti topping is golden brown around the edges.
  • Let cool for 5 - 10 minutes until the ramekins have cooled a bit. Serve.

1 eggplant, chopped into small pieces
1 red onion, quartered lengthwise and thinly sliced
1 cubanelle pepper, halved lengthwise, seeded and sliced
2 ribs celery, chopped
4 garlic cloves, finely chopped
1/2 tsp. crushed red pepper
15 ounce can tomato sauce
1/4 cup finely chopped parsley
8 ounces ricotta salata cheese, crumbled
1/2 cup shredded basil

Steps:

  • Cook spaghetti. Drain; reserving a ladleful of the pasta cooking water. Return the pasta to the pot. While the pasta is working, in a large, deep skillet, heat the EVOO over medium-high heat. Add the eggplant, onion, cubanelle pepper, celery, garlic and crushed red pepper; season wtih salt and pepper and stir well. Cover the pan and cook, stirring occasionally, until vegetables are softened, about 10 minutes. Stir in the tomato sauce and parsley and simmer over low heat until the pasta is ready. Add the sauce to the pasta and toss, adding the reserved pasta cooking water as necessary to make a nice consistency. Toss well. Top with ricotta salata and basil.

Steps:

  • Preheat the oven to 375°F. Prepare the spaghetti according to the directions on the box. Cook to al dente. Drain. Lightly spray nonstick cooking spray inside a 13x9-inch baking pan or 2 9-inch round pans. Toss the spaghetti together with the sauce and pour it into the pan. In a medium mixing bowl, combine the Ricotta, parmesan, mozzarella, egg, and spices. Spread the cheese stuff over top of the spaghetti. Cover with foil. Bake at 375°F for 45 minutes or until cheese is bubbly. Or, cook it at 375°F for 20 minutes and then turn the broiler on high for about 3 minutes. You'll end up with that pizza-like cheese on top. If using the broiler method, keep a close eye on the dish, and remove when the cheese is browned and bubbly. Allow to cool and rest for about 15 minutes, then serve.

Olive oil
1 pound asparagus
1 medium lemon
3/4 cup ricotta
1 clove garlic, unpeeled
1 teaspoon fresh thyme leaves, from 4 to 5 sprigs

3 tablespoons pine nuts, toasted

Steps:

  • Preheat oven to 375°F. Carefully cut the squash in half, scrape out the seeds, and brush with olive oil. Place cut-side down on a baking tray and place in the oven to roast for about 35 minutes. Meanwhile, prep the asparagus by snapping off the woody ends and slicing the stalks on a diagonal into 2-inch pieces. Combine the lemon zest, 2 tablespoons of lemon juice, thyme leaves, and ricotta in a large bowl. Sprinkle with salt and several grinds of the pepper mill. Taste and adjust seasonings, adding more lemon juice, salt, and pepper as needed. Set aside. After the squash has roasted for about 35 to 40 minutes, add the asparagus to the tray and tuck the clove of garlic beneath one of the squash halves. Return the tray to the oven and roast another 10 minutes, until the asparagus is bright green and starting to char in places and when the squash is easily pierced with a fork. Take the baking tray from the oven and carefully remove the garlic clove from beneath the squash. It should be a little soft from its time in the oven. Snip off one end and squeeze the garlic from the peel into the ricotta and mix well. Transfer the asparagus to the bowl with the ricotta. Let the squash cool for another 5 minutes. Pull a fork through the flesh to separate and remove the strands from the shell. Add to bowl with ricotta mixture. Mix squash, asparagus, and ricotta mixture, season to taste with salt and pepper, and spoon into a serving dish.

1 lb italian sausage, mild casings removed
1 medium onion, chopped
1 medium bell pepper, chopped
2 clove garlic, chopped
1 Tbsp carmelized tomato paste
1 can(s) 28 oz can of crushed tomatoes
1 Tbsp italian seasoning
1 Tbsp oregano, dried
1 Tbsp paprika
1/4 tsp cayenne pepper
1 tsp nutmeg
1 Tbsp brown sugar
1 small rine of parmigiano-reggiano
3/4 lb cooked speghetti drained
1 15 oz of ricotta cheese
1/2 c parmesan cheese grated
1 tsp garlic powder
mozzarella cheese

Steps:

  • 1. In a large pan over med-high heat, brown italian sausage in olive oil, add chopped onions and bell peppers. Season with salt and pepper. Saute until onion and peppers are soft, add garlic and cook for a minute, add tomato paste and suate until fragrant. Add the crushed tomatoes, the spices and the parmigiano-reggiano rine. Simmer stirring ocasionally for 10 minutes. Add the brown sugar and stir until melted. Set aside.
  • 2. In a small bowl combine ricotta and parmesan cheese. Shread mozzarella cheeses and add a little garlic salt or italian seasonings and toss.
  • 3. Remove the parmigiano-reggiano rine from meat mixture. In a 9x13 pan cover the bottom with a little of the meat sauce. Combine the remaining meat sauce with the cooked spaghetti. Place half of the spaghetti mixture in the 9x13 pan, sprinkle with mozzarella cheese,pack down. Spread the ricotta mixture, and add the remaining spaghetti mixture, pack down.Sprinkle with remaining mozzarella cheese. Spray tin foil with pam and cover the dish. Bake at 350 F for 30 minutes, take foil off the last 5 minutes of baking.

350 g dried spaghetti
3 tablespoons butter
2 tablespoons fresh flat-leaf parsley, chopped
1 tablespoon pine nuts
salt and pepper
1 sprig fresh flat-leaf parsley, to garnish
115 g freshly ground almonds
115 g ricotta cheese
1 pinch of freshly ground nutmeg
1 pinch ground cinnamon
150 ml creme fraiche
2 tablespoons olive oil
125 ml hot chicken stock

Steps:

  • Bring a large pan of lightly salted water to the boil over a medium heat. Add the past and cook for about 8-10 minutes until al dente.
  • Drain the pasta, return to the pan and toss with the butter and parsley. Keep warm.
  • To make the sauce mix the almonds, ricotta, nutmeg, cinnamon and creme fraiche together in a small pan over a low heat. Stir until it forms a thick paste. Gradually stir in the oil. Then slowly pour in the stock until smooth. Season to taste.
  • Transfer the pasta to a large, warmed serving dish, pour the sauce over it and toss together well with 2 forks. Sprinkle over the pine kernels, garnish with a parsley sprig and serve.
