- In a large bowl, whisk flour, baking powder, lemon zest and salt. In another bowl, whisk eggs, cheese, sugar and extract. Add to dry ingredients, stirring just until moistened., In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls, several at a time, into hot oil. Fry 2-3 minutes or until golden brown. Drain on paper towels. Dust with confectioners' sugar. Serve warm with honey or jam.

- Mix eggs and sugar together. Add ricotta and vanilla. In a separate bowl sift together all- purpose flour, cake flour, baking powder, and salt. Add to egg mixture. Beat until smooth. Fill a pot or deep-fryer half full with oil. Heat until oil gets to 350 degrees F. Drop dough into hot oil by the tablespoonful. Fry until golden brown. Remove from oil, and drain on a paper towel. Dust with powdered sugar, drizzle with warm chestnut honey, and serve immediately.

- Heat 2-inches vegetable oil in a large, wide, heavy saucepan until it registers 370 degrees F. Whisk together the flour, baking powder, zest, and salt in a bowl. Whisk together the ricotta cheese, eggs, granulated sugar, and vanilla in another bowl, then whisk into the flour mixture. Working in batches, gently drop in tablespoons of batter and fry, turning occasionally, until deep golden, about 3 minutes per batch. Transfer with a slotted spoon to paper towels to drain. - Combine the berries and 1/2 cup of the sugar in a bowl and coarsely mash with a potato masher. Transfer berries to a medium saucepan, add lemon juice and cook until thickened, about 5 minutes. Transfer to a bowl, cover and refrigerate until chilled or serve immediately: transfer to a bowl and set the bowl over an ice bath, stirring until jam is cooled.
CITRUS-SCENTED RICOTTA FRITTERS
Astonishingly easy and unbelievably light, that's these dessert fritters. - Heat oil in a low-sided six-quart saucepan over medium-high heat until a deep-frying thermometer registers 360 degrees. Line a baking pan with paper towels.
- Meanwhile, place the ricotta in a medium bowl. Using a rubber spatula, break up the curds, loosening the consistency without completely smoothing.
- In a large bowl, sift together the flour, granulated sugar, baking powder, and nutmeg. Make a large well in the center. Place the eggs, honey, and vanilla in a medium bowl, and whisk to combine. Pour the egg mixture into the well. Using a whisk, gradually draw the flour mixture into the egg mixture, whisking until smooth before drawing in more flour. Continue until all of the flour mixture has been incorporated.
- Add the ricotta, and gently fold into the batter until just combined; the ricotta will remain visible in the batter.
- Carefully spoon the batter, 1 tablespoon at a time, into the hot oil, being careful not to overcrowd the pan. Fry until golden on outside but still slightly runny on inside, about 1 minute, turning after about 30 seconds. Using a slotted spoon, remove fritters from oil, and transfer to lined baking pan. Repeat with remaining batter.
- When cool enough to handle, sift nonmelting sugar over fritters; transfer to a serving platter. Serve with huckleberry compote.

- Stir together ricotta, parmesan, salami, yolks, salt, pepper, and 3 tablespoons bread crumbs until combined. Put remaining 1/2 cup bread crumbs in a shallow bowl.
- Line a large baking sheet with wax paper. Scoop a 1 1/2-tablespoon mound of ricotta mixture into bread crumbs, turning to coat completely, then pat into a 1/2-inch-thick oval with your hands and transfer to baking sheet. Make more ricotta fritters in same manner, arranging in 1 layer.
- Heat 1/2 inch oil in a 12-inch heavy skillet over moderately high heat until thermometer registers 350°F. Fry half of fritters, gently turning over once with 2 spoons, until golden, 2 to 4 minutes. - For the fritters: Place 3 to 4 inches of vegetable oil in a Dutch oven. Heat to 350 degrees F.
- Whisk together the granulated sugar, zest and 1/2 teaspoon kosher salt in a shallow bowl.
- Whisk together the ricotta, eggs, milk and vanilla paste in a large bowl.
- Whisk the flour, baking powder, confectioners' sugar and remaining 1 teaspoon salt together in a medium bowl.
- Whisk the dry ingredients into the wet ingredients.
- Working in batches of about 6, scoop the batter with a 1 1/2-ounce ice-cream scoop and gently drop the dough into the oil. Fry the fritters, turning occasionally, until deep golden brown, 3 to 4 minutes. Remove with a slotted spoon, drain briefly and place directly into the zesty sugar. Roll the fritters to coat them in the sugar. Transfer to a platter and repeat until all the batter is used.
- Meanwhile, for the raspberry jam: Place the raspberries in a deep medium skillet set over medium heat. Stir in the sugar, orange zest and juice and cinnamon stick. Cook until the raspberries begin to break down and become syrupy, 5 to 8 minutes. Remove from the heat. Discard the cinnamon stick and stir in the salt. Serve alongside the fritters for dipping!

- For the Fritters: In a small bowl combine the ricotta, smoked mozzarella, salt, and pepper. In another bowl pour the panko. In a third bowl lightly beat the eggs. Put the flour in a fourth bowl. Line a tray with parchment paper.
- Scoop a 1 1/2 tablespoon ball of the cheese mixture into the flour and roll to coat. Transfer the ball to the eggs and roll to coat. Transfer the cheese ball to the panko and again roll to coat. Transfer the ball to the parchment-lined tray. Continue with the remaining cheese mixture.
- Meanwhile heat 3 inches of vegetable oil in a large skillet to 350 degrees F. Fry fritters in batches, being careful not to overcrowd the pan, until golden, about 1 to 2 minutes. Remove with a slotted spoon to paper towel to drain. Sprinkle with thyme. Serve warm with Balsamic Dipping Sauce.
- For the Balsamic Dipping Sauce: Combine the vinegar, lemon juice, mustard, and honey in a blender. Blend until combined. Add the oil in a steady stream while the machine is running. Season with the salt and pepper. Serve in a small bowl alongside the fritters.

SPRING ONION AND RICOTTA FRITTERS WITH AVOCADO SALSA
A deliciously-different entree adapted from one of my favourite cookbooks: 'The Onion Cookbook: cooking with onions, garlic, leeks, spring onions, shallots and chives' by English chef Brian Glover. Not liking spicy food, when I've made this recipe I've omitted both the chilli and Thai fish sauce, but I've included them here for those who like their food spicy. Instead of the chilli, I add sweet red pepper. If the salsa needs more liquid, add a little more lime juice or lemon juice.

- THE SALSA: Peel, stone and dice the avocados. Place in a bowl with the red onion, lime rind and juice. Add chilli, to taste (or sweet red pepper if you don't like spicy food), the tomatoes, mint and coriander. Season with salt, freshly ground black pepper, sugar and Thai fish sauce (omit this if you don't like spicy food). Mix well and set aside for 30 minutes.
- THE FRITTERS: Beat the ricotta until smooth, then beat in the egg and flour, then the flour, to make a smooth, thick batter. Then beat in the spring onions and coriander and season with salt and freshly ground black pepper. Heat the oil in a non-stick pan over a medium heat. Add spoonfuls of the batter mixture to make fritters (about 7.5 centimetres or 3" across) and lightly sauté for about 4-5 minutes on each side until the batter mixture has set and is a golden brown.
- SERVING: Taste the salsa and adjust the seasoning, adding more lime juice and/or sugar to taste. Serve the fritters with the salsa and dollops of crème fraiche. Garnish with coriander sprigs and lime wedges.

- 1. Press ricotta through a food mill, potato ricer or a fine mesh strainer into a large bowl. Put the eggs, sugar and vanilla in another bowl and whisk til pale and light. Fold into ricotta.
- 2. Sift flour with baking powder and salt into a bowl, then fold it into the cheese and egg mixture.
- 3. Heat vegetable oil in a deep fryer to 375. Have a tray lined with paper towels and a slotted spoon or strainer at the ready.
- 4. drop level tablespoons of mixture into hot oil in batches of 6. fry for 2 to 3 minutes or til puffed and deep brown all over. You may have to turn them in the oil. Drain and serve at once, dusted with powdered sugar. Serves 4 to 6
SWEET POTATO RICOTTA FRITTERS
Steps:
- Combine all the ingredients in a mixer fitted with a paddle attachment and mix until smooth. Form into 1 1/2-inch balls (the size of a walnut) and set aside on a cookie sheet.
- Heat 2 to 3 inches of oil in a deep heavy pot fitted with a deep-frying thermometer to 365 degrees F.
- Working in batches to avoid crowing the pot, fry the balls until golden brown all over, moving them around in the oil to make sure they brown evenly. Remove from the oil and drain on paper towels. (Let the oil return to 365 degrees F between batches.)
- Dust with confectioners' sugar and serve warm.

RICOTTA & SPINACH FRITTERS
This recipe was created when I was trying to think of something to use my leftover ricotta cheese and spinach mixture from the previous day.

- 1. Using a medium sized skillet, fill about 1/4 with extra-virgin olive oil and let heat on medium-high heat.
- 2. In a medium sized bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese and spinach. Add garlic salt and mix together well with clean hands. Gently fold in the chopped tomatoes.
- 3. Meanwhile, set up breading station using a small to medium bowl for the eggs, one plate with Italian bread crumbs and another plate for the Panko crumbs. Make cheese mixture into 2-inch balls and gently pat down to a "patty"; dip the fritter into the Italian bread crumbs then dip into egg mixture. Dip the fritter into the Panko crumbs. Repeat until all tomato slices are breaded. (For better results with the fritter staying together, you may want to put these in the freezer for 10-15 minutes before doing any further).
- 4. Preheat oven to 350 degrees.
- 5. Place three to four fritters into the oil and fry for 1 to 2 minutes and gently turn over using tongs. Allow to cook for 1 to 2 minutes longer or until golden brown.
- 6. Place fritters on a baking sheet sprayed lightly with non-stick cooking spray. Bake for 15 minutes or until heated through.
GREEN PEA AND RICOTTA FRITTERS
These are simply delicious! I serve them with slices of roasted lamb sitting on a bed of spinach, mashed potato, roasted tomatoes and basil pesto. Gorgeous!!

- Mix the batter ingredients together.
- It should be lumpy, giving you a lighter batter.
- Cook peas in boiling salted water.
- Puree using blender or food processor.
- Add the ricotta cheese and chopped fresh thyme.
- Mix well.
- Add some grated Parmesan cheese and stir in.
- Season with salt and freshly ground black pepper.
- Refrigerate mixture until set.
- Roll the pea and ricotta cheese mixture into small balls, allowing 3 per person/portion.
- Dust with flour.
- Dip into tempura batter and deep fry until lightly golden in colour.
