6 tablespoons shortening
1-1/2 teaspoons buttermilk
2 tablespoons hot water
1 cup all-purpose flour
1/2 teaspoon salt
FILLING:
3 large eggs
1 cup light or dark corn syrup
2/3 cup sugar
1/4 cup butter, melted
1 teaspoon vanilla extract
2 cups fresh or frozen cranberries, thawed
1 cup chopped pecans
Sweetened whipped cream, optional

Steps:

  • Beat shortening and buttermilk until blended. Gradually add water, beating until light and fluffy. Beat in flour and salt. Shape into a disk. Wrap in plastic; refrigerate 4 hours or overnight. , Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond edge of plate; flute edge., In a large bowl, whisk first 5 filling ingredients until blended. Stir in cranberries and pecans. Pour into crust., Bake on a lower oven rack 10 minutes. Reduce oven setting to 350°; bake until filling is almost set, 35-40 minutes. Cool completely on a wire rack. Refrigerate, covered, overnight before serving. If desired, serve with whipped cream.

1 sheet refrigerated pie pastry
4 large eggs
1 cup dark corn syrup
2/3 cup sugar
1/4 cup butter, melted
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1-1/2 cups fresh or frozen cranberries, thawed, chopped
1 cup miniature semisweet chocolate chips
1 cup pecan halves

Steps:

  • Preheat oven to 375°. Unroll pastry sheet into a 9-in. pie plate; flute edge. Refrigerate while preparing filling., Whisk together eggs, corn syrup, sugar, melted butter and spices. Sprinkle cranberries and chocolate chips onto bottom of crust; top with egg mixture. Arrange pecans over filling., Bake on a lower oven rack until crust is golden brown and filling is puffed, 40-50 minutes. Cool on a wire rack. Refrigerate leftovers.

No-roll Pie Crust:
2 cups all-purpose flour
1 cup sugar
1 teaspoon pure vanilla extract
2 teaspoons finely-grated lemon or lime zest
1/2 teaspoon salt
1 cup (1 stick) chilled unsalted butter, or 1/2 cup butter and 1/2 cup Crisco, cut into chunks
Filling:
1/2 cup coarsely chopped walnuts
1/2 cup coarsely chopped pecans
1/2 cup sliced almonds
3/4 cup firmly packed dark brown sugar
1/2 cup light corn syrup
1/4 cup plus 2 tablespoons (3/4 stick) unsalted butter, melted
3 large eggs, room temperature
2 tablespoons unsulfured (light) molasses
1 teaspoon vanilla extract
1/4 teaspoon salt
1-1/2 cups fresh or frozen and thawed cranberries (about 6 ounces)
Garnish: Whipped cream or vanilla ice cream

Steps:

  • Preheat oven to 400 degrees. Place flour, sugar, vanilla, lime zest and salt in a food processor. Start the processor and through the feed tube add the pieces, one at a time. Process until a ball of dough forms on top of the blade. Remove from machine. Pick up chunks of the dough and press them into a well-greased 9-inch glass pie plate. Smooth the pieces together with your fingertips and bring the rim up a little higher than the pan edge. Flute or scallop it, cover and chill thoroughly. Meanwhile, combine walnuts, pecans and almonds on cookie sheet. Place sheet in the oven and toast about 5 minutes or until golden and crisp. Cool. Dock the chilled crust all over with the tines of a fork and bake 12 to 15 minutes or until pastry is just set. In a bowl, combine and whisk together the brown sugar, corn syrup, butter, eggs, molasses, vanilla extract and salt. Stir in the toasted nuts and the cranberries. Pour filing into prepared crust and bake until is set in the center, about 45 minutes. Cool pie on a rack completely before serving. Top each with whipped cream or vanilla ice cream.

1 Buttermilk Pie Crust Dough disk
1/2 cup coarsely chopped walnuts
1/2 cup coarsely chopped pecans
1/2 cup sliced almonds
3/4 cup firmly packed dark brown sugar
1/2 cup light corn syrup
1/4 cup plus 2 tablespoons (3/4 stick) unsalted butter, melted, room temperature
3 large eggs
2 tablespoons unsulfured (light) molasses
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups cranberries (about 6 ounces)

Steps:

  • Preheat oven to 400°F. Roll out pie crust disk on lightly floured surface to 13-inch-diameter round (about 1/8 inch thick). Roll up dough on rolling pin and transfer to 9-inch-diameter glass pie plate. Gently press into place. Trim edges of crust, leaving 3/4-inch overhang. Fold overhang under crust so that crust is flush with edge of pie pan. Crimp edges to make decorative border. Freeze crust until firm, about 15 minutes.
  • Line pie crust with foil, leaving 3-inch overhang. Fill foil with beans or pie weights. Fold extra foil gently over crust edges. Bake until crust is set, about 15 minutes. Remove foil and beans and continue baking until crust just begins to color, piercing with toothpick if crust bubbles, about 10 minutes. Cool. Maintain oven temperature.
  • Meanwhile, combine chopped walnuts, pecans and almonds on cookie sheet. Toast nuts until just golden, about 10 minutes. Cool.
  • Whisk brown sugar, light corn syrup, butter, eggs, molasses, vanilla extract and salt to blend in bowl. Stir in toasted nuts and cranberries. Pour filing into prepared crust. Bake until center of filling is set, about 45 minutes. Cool pie completely.

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup shortening or 1/3 cup butter
2 -4 tablespoons cold water
4 eggs
1 cup brown sugar
1/2 cup maple syrup
4 tablespoons butter, melted
1 tablespoon vanilla
1/2 teaspoon salt
1 1/2 cups pecans
3/4 cup sliced almonds

Steps:

  • Preheat oven to 375.
  • To prepare homemade pie crust, place flour in mixing bowl; add butter and cut in with pastry blender. Add salt and then add COLD water 1 Tablespoon at a time. Mix and toss ingredients together with a fork until dough ball forms. Place in plastic wrap or Ziploc baggie and put into the refrigerator while you make the filling.
  • To prepare filling, whisk the eggs, brown sugar, maple syrup, melted butter, vanill and salt together in a mixing bowl.
  • Whisk.
  • Stir in the pecans and sliced almonds.
  • Once filling is prepared, take the dough ball from the fridge and place on lightly floured surface. Using a lightly floured rolling pin, roll out the crust dough into a circle at least 12 inches in diameter and gently fold pie crust into quarters. Move the folded pie crust from the counter to the pie plate. Unfold in the pie plate. Pour filling into pie shell. Flute edges in your favorite design.
  • Place pie crust shield over the top or use foil to make a shield to keep the crust edges from burning or turning dark brown while baking.
  • Bake at 375 for 40-50 minutes, or until filling has set.
  • Let cool completely on cooling rack. Refrigerate. It's easiest to slice pie when its cold!
  • Serve cool with whipped cream or warm with vanilla bean ice cream. You'll have to imagine the dollop of whipped cream.
