- Combine sugar, cocoa, and water in small saucepan. Bring to a boil over medium heat, stirring constantly.
- Add milk and heat to serving temperature. Do not boil.
- Add vanilla; serve in mugs and top with spoonful of wihhpped cream or marshmallows.
- Stir or blend in flavor variations if desired.

Steps:
- Measure water into a 2-quart sauce pan. Add sugar, cocoa and salt. Heat water over medium heat. Stir mixture until cocoa dissolves completely. Gently bring mixture to a boil. Reduce the heat to a fast simmer and simmer it for about 5 minutes. Finally add the evaporated milk and stir to blend. Reheat briefly, but don't boil. Pour the hot chocolate into small mugs.
- This recipe makes 4 6-ounce size servings.
- I added a spoonful of whipped topping on the top of each filled mug. It was delicious!

RICH STOVE TOP HOT COCOA
Delicious creamy and rich hot cocoa. Perfect for a chilly day to keep cozy and warm! Use 3 cups total milk for a more darker chocolate flavor, and add an extra cup to make it more milk-chocolate--still delicious! From the kitchen of Rosanna Pansino.

Steps:
- Mix cocoa, sugar and salt into a small bowl.
- Put water in small pot to boil.
- Once boiling, add cocoa mix and stir with whisk until well blended. When bubbly, continue to stir for another 2-3 minutes.
- Slowly add in milk (or both milk and cream). Occasionally stir until milk is on the verge of boiling.
- Stir in vanilla and remove from heat. Pour into your favorite cocoa mug! It may need time to cool. Enjoy!
- **If there's extra, you can store in the fridge for 1-2 days. Just reheat and stir and will still be good!

RICH DARK HOT COCOA
I was experimenting with stove-top cocoa (seeking an alternative to the packet mix and all those nasty additives). The end result is creamy, and thick. I love the body this cocoa has, and it's a satisfying snack that soothes a chocolate craving.

Steps:
- 1. In a medium saucepan, add the cold milk, coconut oil and whisk in the cornstarch and mix well. Set on medium-high heat. Whisking constantly, add cocoa powder, sugar and sea salt. Continue whisking - bring the mixture up to a moderate bubble, and turn off heat, but leave pot on the burner and continue cooking and stirring. The cocoa will have thickened. Add the vanilla and mix well. Taste the mixture & adjust sugar if needed. To serve, I pour the mixture into a one-quart Pyrex measuring cup to facilitate pouring. Top with marshmallows or whipped cream, if desired.
