MIDDLE EASTERN RICE WITH RAISINS



Middle Eastern Rice With Raisins image

Rice cooked in olive oil with onions and enriched with pine nuts, currants/raisins and allspice, cinnamon and black pepper.

3 tablespoons olive oil
2 tablespoons pine nuts
1 small onion, chopped
1 cup rice, rinsed well
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon black pepper
1 teaspoon allspice
1/4 teaspoon cinnamon
2 tablespoons currants/raisins
1 and 1/2 cups hot water
1/4 cup parsley
1-2 tablespoons pine nuts

Steps:

  • Heat olive oil in a pan. Add in 2 tablespoons of pine nuts and onions. Cook until onions become translucent.
  • Add in rice, salt, sugar, cinnamon, allspice and raisins. Cook for 5 minutes stirring occasionally.
  • Pour 1 and 1/2 cups hot water and let it cook covered over medium heat until it boils.
  • Bring the heat to the lowest when it starts to boil and let it simmer until the rice is soft and all the water is gone.
  • When there isn't any water left in the pan, remove from the heat. Uncover, put a paper towel on the top and put the lid back. Let it sit for about 15 minutes. Uncover and add parsley. Give it a gentle stir.
  • For the optional topping, put pine nuts in a pan in a single layer without adding oil. Toast until golden brown.
  • Serve the rice with toasted pine nuts on the top.

1 1/2 cups basmati rice (rinsed)
2 tablespoons olive oil
3 tablespoons pine nuts
1 onion (finely diced)
4 tablespoons sultanas (golden raisins)
1 3/4 cups boiling water
3/4 teaspoon salt
1/2 teaspoon saffron threads

Steps:

  • Soak the rice in tepid water for 10 minutes; drain. While the rice is soaking, put half a kettle of water on to boil.
  • Add the oil to a medium, thick-bottomed lidded saucepan over medium heat. Add the pine nuts and cook until golden brown, about 1 to 2 minutes, stirring constantly. Transfer the pine nuts to a small bowl and set aside.
  • Add the onion to the saucepan you cooked the pine nuts in, and cook until softened and just starting to brown, about 5 to 7 minutes, stirring occasionally. Add the rice and cook 2 minutes, stirring frequently. Stir in the sultanas, boiling water, salt, and saffron (or turmeric), turn the heat up to high, and bring it to a rolling boil.
  • Give the rice a stir, then cover the saucepan, turn the heat down to very low, and cook until tender, about 10 minutes (do not open the lid during this time). Turn the heat off and let the rice sit (covered) 15 minutes, then fluff with a fork.
  • Transfer to a serving dish and sprinkle the toasted pine nuts on top; serve.
  • Optional: Add two pods of cardamom, two whole cloves, and one 2-inch (5 cm) piece of cinnamon stick at the same time that you add the rice.

1 cup uncooked white rice
2 tablespoons raisins
1 ½ cups chicken broth

¼ cup sliced almonds

Steps:

  • Melt butter in a medium saucepan over medium heat. Saute onion, stirring, until tender. Stir in the rice, raisins, broth, salt and pepper. Bring to a boil.
  • Reduce heat to low, cover and simmer 15 to 20 minutes, or until rice is cooked and liquid is absorbed. Stir in almonds before serving.

1 cup converted rice
1 cup raisins
1/4 cup pine nuts
1 1/2 cups water
1 tablespoon butter

Steps:

  • Add the olive oil to a saucepan, and then the onion and garlic. Cook over medium heat, stirring, until wilted. Add the rice, raisins and the pine nuts.

1/2 cup finely chopped onion
1/2 teaspoon turmeric
1/4 teaspoon ground coriander
2 tablespoons unsalted butter
1 cup long-grain rice
2 cups chicken broth
4 tablespoons pine nuts, toasted
4 tablespoons golden raisins, soaked in boiling water for 1 minute and drained

Steps:

  • In heavy saucepan cook the onion with the turmeric and coriander in the melted butter until the onion is softened.
  • Add the rice and stir to coat. Add the broth, bring the liquid to a boil and simmer, covered, for 17 minutes or until the liquid is absorbed and the rice is tender.

3 tablespoons ghee (see note)
1/2 cup onion, finely minced
1 teaspoon fresh ginger, minced
1/2 teaspoon fresh garlic, minced
3 whole cloves
3 cardamom pods
one 2-inch cinnamon stick
2 cups basmati rice, rinsed and drained
1 teaspoon ground turmeric (see note)
2 1/2 cups water
1/2 cup coconut milk
1/2 cup golden raisin
1/2 cup finely dried apricot, diced
1/2 cup toasted pine nuts
coarse salt

Steps:

  • Heat the ghee in a heavy-bottomed medium saucepan over medium heat. Add the onion, ginger, garlic, cloves, cardamom pods and cinnamon stick and sauté for 5 minutes. Stir in the rice and turmeric and continue to sauté for about 3 minutes, or until the rice is shiny.
  • Raise the heat and add the water, coconut milk and salt. Bring to a boil. Immediately reduce the heat to low and cover the saucepan. Cook for 10 minutes; then stir in the raisins and apricots. Cover again and cook, without lifting the lid, for 10 more minutes. Remove the pan from the heat and, without lifting the lid, allow the rice to steam for 5 minutes. Remove the lid and stir in the pine nuts. Remove the whole spices if you wish before serving.

Bell Peppers Stuffed with Rice, Raisins, and Pine Nuts image

1 large onion, finely chopped
6 tablespoons extra virgin olive oil
1 1/4 cups short-grain or risotto rice
Salt and pepper
1 to 2 teaspoons sugar
3 tablespoons pine nuts
3 tablespoons currants or tiny black raisins
1 large tomato, peeled and chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
2 tablespoons chopped mint
2 tablespoons chopped dill
2 tablespoons chopped flat-leaf parsley
Juice of 1 lemon
6 medium green or red bell peppers
To serve: 1 cup plain whole-milk yogurt mixed with 1 garlic clove, crushed (optional)

Steps:

  • For the filling, fry the onion in 3 tablespoons oil until soft. Add the rice and stir until thoroughly coated and translucent. Pour in 2 cups water and add salt, pepper, and sugar. Stir well and cook for 15 minutes, or until the water has been absorbed but the rice is still a little underdone. Stir in the pine nuts, currants or raisins, tomato, cinnamon, allspice, mint, dill, parsley, and lemon juice, as well as the rest of the oil.
  • Retaining the stalk, cut a circle around the stalk end of the peppers and set to one side to use as caps. Remove the cores and seeds with a spoon and discard. Fill the peppers with the rice mixture, and replace the caps.
  • Arrange the peppers side by side in a shallow baking dish, pour about water into the bottom, and bake in the oven preheated to 375°F for 45 to 55 minutes, or until the peppers are tender. Be careful that they do not fall apart.
  • Serve cold, accompanied, if you like, by a bowl of yogurt beaten with or without crushed garlic.
