Brazilian Sweet Banana and Rice Dish image

This is a Brazilian dish that has an odd ingredient, bananas. The bananas are almost a dessert on their own but are eaten along with rice in a dish that can be varied to one's taste.

2 cups lemon juice
1 cup white sugar
1 tablespoon butter
1 tablespoon rum
6 ripe bananas, halved lengthwise
7 cups water
3 ½ cups brown rice
2 (15 ounce) cans black beans, drained
1 (14.5 ounce) can diced tomatoes
2 teaspoons vegetable oil
2 (4 ounce) links sausage
2 pinches dried dill
2 pinches dried basil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
  • Combine lemon juice, sugar, butter, and rum in a saucepan. Bring to a simmer over low heat, stirring occasionally, until sugar is dissolved and sauce thickens slightly, about 10 minutes.
  • Arrange bananas cut-side down in the baking dish. Pour enough sauce over bananas to cover, reserving any extra sauce for serving.
  • Bake in the preheated oven until bananas are soft and sticky, about 30 minutes.
  • Bring water and brown rice to a boil in another saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • Combine black beans and diced tomatoes in a skillet over low heat; heat until warmed through, about 10 minutes.
  • Heat oil in a large skillet over medium heat. Add sausage links; cook, flipping often, until no longer pink in the center, about 10 minutes. Slice sausage into small pieces.
  • Scoop rice into a large bowl. Pour black beans on top. Sprinkle dill and basil on top. Add sausage; mix gently to combine. Serve bananas alongside.

These bananas are sold from street stalls and floating markets in Thailand. You can enjoy the banana pieces either hot or at room temperature as is, or by dipping them into golden or maple syrup. The recipe, found on Luxury Thailand Travel, is slightly modified.

5 large bananas (not overly ripe)
2 cups self-rising flour
1/2 cup rice flour
2 cups water
1 teaspoon salt
1 tablespoon roasted sesame seeds (0ptional)
vegetable oil (for deep frying)

Steps:

  • Peel the bananas and cut the very end off both sides then cut the banana in half and then again lengthwise.
  • Sift the self-rising flour, the rice flour and salt into a bowl. Add enough water to make a smooth batter then mix in the roasted sesame seeds.
  • Heat vegetable oil in a wok or deep fryer to 375 degrees Fahrenheit. Dip each banana piece into the batter until fully coated then fry a few pieces at a time until crisp and golden. Remove the banana pieces with a large slotted spoon or a wire basket and drain on some paper towels.
  • You can enjoy the banana pieces either hot or at room temperature as is, or by dipping them into golden or maple syrup.

I haven't tried this, but it sounds very interesting. The brown rice is cooked with tomato juice, topped with an onion sauce and garnished with golden fried bananas. You make the sauce and fry the bananas while the rice cooks. Sounds like a yummy meal to me! From Angola, Africa. From wiki.

2 cups brown rice
2 cups tomato juice
2 cups water
2 medium onions
2 medium green peppers
1/2 cup peanut oil
1 tablespoon curry powder
1 teaspoon salt
1/4 teaspoon pepper
3 medium tomatoes, chopped
1/2 cup peanut butter
2 medium bananas (you can use regular bananas-ripe but still firm or plantains-ripe and black)

Steps:

  • Pour the brown rice, tomato juice, and 2 cups water in a 2-quart pot over high heat.
  • When the mixture comes to a boil, cover, reduce heat and simmer until rice is done (45 to 50 minutes).
  • Meanwhile, slice onions and green peppers and sauté in 1/4 cup peanut oil until onions are soft.
  • Add curry powder, salt, and pepper; mix well, heat for 1 minute.
  • Add 1/4 cup water, tomatoes, and peanut butter.
  • Simmer for 5 minutes.
  • In a large skillet heat the remaining 1/4 cup peanut oil.
  • Peel bananas and cut into 1/2-inch slices.
  • Saute bananas until lightly golden on both sides.
  • To serve, place the rice in a serving platter, pour the onion sauce over the rice and top with the fried bananas.

This is one of my favorite recipes. I have it every time I go to a Thai restaurant topped with coconut ice cream or drizzled with honey. If you have never tried it, now is the time, it's so good! I use Nam, a variety of banana which can be found at most Asian Markets. You can also use sweet potatoes in this recipe.

3/4 cup rice flour
1/4 cup tapioca flour
2 tablespoons white sugar
1 teaspoon salt
1/2 cup shredded coconut
1 1/4 cups water
10 bananas
3 cups oil (for frying)

Steps:

  • In a medium bowl, mix rice flour, tapioca, sugar, salt and coconut. Stir in water, a little at a time, and mix to form a thick batter.
  • Peel the bananas and cut each lengthwise into 3 or 4 pieces. Heat oil in deep-fryer or deep wok to 375 degrees F (190 degrees C).
  • Completely coat each banana slice in batter, then fry in hot oil until golden. Drain on paper towels. Serve at once.
  • Serve with Coconut Ice Cream (vanilla ice cream with honey will do if coconut ice cream is not available).

This is blatant takeoff of one of Dave Lieberman's recipes. I have changed it to suit our taste. I hope you will try it the next time you're craving a great rice recipe. You won't regret it.

5 tablespoon(s) olive oil
2 medium green bananas
2 teaspoon(s) granulated sugar
1 medium onion
1 pinch(es) ground cinnamon
1 pinch(es) ground allspice
1 cup(s) uncooked wild rice
2 cup(s) stock (vegetable, cicken or fish)

Steps:

  • NOTE: It is important that bananas are green and firm; otherwise they will become soggy
  • Place liquid stock in medium size saucepan over medium high heat. Bring to a boil. Add rice and a pinch of salt, cover tightly and turn heat to low. Simmer the rice for 18-20 minutes just until tender and remove from heat. Keep covered and set aside to cool.
  • Slice 2 bananas into 1/2 inch slices and place in a bowl with sugar. Toss gently so that all banana pieces are coated with sugar.
  • Peel onion and finely dice. (Using food processor is easier and quicker). Set aside.
  • Place 2 tablespoons of oil in large heavy skillet over medium high heat. When oil is shimmering, add the bananas in a single layer to the hot oil. Cook 1 or 2 minutes on each side until bananas are nice and brown. Transfer bananas to a plate and set aside.
  • Add the 3 remaining tablespoons of oil to the pan, allow to heat for 1 minute, then add the onion. Sauté a few minutes until the onions are softened and translucent. Season with the cinnamon and allspice.
  • Add the cooked rice to the onions and cook until heated through, stirring with a wooden spoon constantly. Remove from heat, add the bananas and fold into rice mixture with the wooden spoon.
  • An excellent side dish for just about any kind of meat.
