3 cups cooked chicken breasts, cut into 1/2 inch pieces
1 (6 ounce) package long grain and wild rice blend (Uncle Ben's Original Recipe)
1/2 cup onion, chopped
1 (4 ounce) can sliced mushrooms, drained
1 (8 ounce) can sliced water chestnuts, drained and chopped fine
1 (10 3/4 ounce) can cream of celery soup
2 (14 ounce) cans French style green beans, drained
1 (2 ounce) jar chopped pimiento, drained
1/4 teaspoon black pepper
2 tablespoons snipped parsley
1 -2 tablespoon fresh lemon juice (juice from 1/2 lemon)
1/2 cup mayonnaise
1/4 cup sliced almonds
1 1/2 cups seasoned stuffing mix
1/2 cup butter, melted

Steps:

  • Preheat oven to 350 degrees F.
  • Cook rice according to package directions, adding the chopped onion in to the pot during the last few minutes of cooking time.
  • In a buttered 13 x 9 inch baking dish, stir together the rice & onion mixture, the chicken, mushrooms, chestnuts, soup, beans, pimiento, pepper, parsley, lemon juice, mayonnaise, and sliced almonds.
  • Spoon the topping mixture evenly over the casserole.
  • Bake uncovered at 350 degrees for 35 to 45 minutes, until hot and bubbly.
  • Note: Also good using 1 1/2 cups shredded sharp cheddar cheese as a topping (in place of the stuffing mixture), add the cheese during the last 15 minutes of baking.

1-1/2 cups uncooked long grain rice
2 cups chicken broth
1 cup hot water
2 tablespoons each chopped onion, celery and green pepper
2 tablespoons minced fresh parsley
2 tablespoons butter, melted
1 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon pepper

Steps:

  • In a greased 1-1/2-qt. baking dish, combine all ingredients. Cover and bake at 350° for 1 hour or until rice is tender. Fluff with a fork before serving.

This is one of my favorite dishes that my mom made. My kids love it too. The rice is wonderful and the chicken stays moist because of the slow cooking.

1 -1 1/2 lb chicken, cut-up (I prefer thighs and bone-in breasts)
1 1/2 cups Minute Rice
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup water
seasoning salt, to taste
pepper, to taste

Steps:

  • Mix all ingredients except chicken and spread in a greased, (I use non-stick spray.)13x9 inch pan.
  • Place chicken on top (skin side up).
  • Season the chicken pieces with salt and pepper.
  • Cover tightly with foil.
  • Bake at 300 degrees for 2 hours.
  • Remove foil. You can place under broiler for a few minutes to brown chicken pieces if you like (my mother did not, but I like my chicken browned so I added this step).

1 pkg long grain and wild rice mix (6 oz.)
1/4 c butter or margarine
1/3 cup c chopped onion
1/3 c all purpose flour
1 c half and half
1 c chicken broth
1/2 tsp salt
1 dash(es) pepper
2 c cubed cooked chicken
1 tsp chopped parsley

Steps:

  • 1. Prepare rice according to package directions.
  • 2. Melt butter in a heavy saucepan; add onion and cook until transparent. Blend in flour and cook for 1 minute. Gradually add half and half and chicken broth; cook, stirring constantly until thickened. Stir in salt and pepper.
  • 3. Combine cooked rice, chicken, and cream sauce. Add parsley. Spoon mixture into a lightly greased 2-quart casserole. Bake at 425 degrees for 30 minutes or until hot and bubbly.

1 1/2 cups miniature marshmallows
1 (8 ounce) can crushed pineapple, drained (save the juice)
1 (3 ounce) package lemon gelatin
1 cup boiling water
whipped topping

Steps:

  • Wash and steam 1 1/4 cups rice (can use rice cooker). Drain off any liquid. Add marshmallows, crushed pineapple, drained (save the juice) and cool in refrigerator. Dissolve gelatin in boiling water. Add chilled pineapple juice. Cool until slightly thickened and add to rice. Add whipped topping to make desired creaminess.

2 1/2 cups of basmiti rice (uncooked)
4 cups of water for cooking rice
1 tablespoon olive oil
4 (5 ounce) cans albacore tuna (drained) or 20 ounces of any kind tuna (drained)
1 medium sweet onion, chopped small
2 stalks celery, chopped small
1 cup frozen sweet peas
2 teaspoons salt
1 (10 ounce) can Campbell's Cream of Mushroom Soup
1 (10 ounce) can of campbells cream of celery soup
1 (10 ounce) can of campbells cheddar cheese soup
1 empty soup can whole milk

Steps:

  • Bring the water to a boil & add 1 tbs. of olive oil and the rice.
  • Stir once then put heat on low & cover tightly with lid and do not remove lid
  • during cooking for15 minutes Set aside when done.
  • Meanwhile, saute your chopped onions and celery together in a little olive oil for a few minutes to soften a little. Set aside.
  • Put all 3 of the soups in a large mixing bowl and blend together with the milk using a large spoon. Then add all of the rest of the ingredients(except the rice) and blend together. Blend in the cooked rice last.
  • Now, transfer the mixture to a large 13x9 lightly greased baking dish, If you like, you can sprinkle parmesan cheese on top.
  • Bake at 350 degrees for 40 minutes uncovered. Enjoy.
  • SERVES 8-10.

1 c wild rice, rinsed
1/2 t salt
3 c water or stock
1 lb seasoned sausage
8 oz mushrooms, sliced
1/2 c onion, chopped
1/4 c butter
1/4 c flour
2 c milk
1/2 t worchestershire
1/4 c buttered bread crumbs

Steps:

  • Cook wild rice in water/stock and salt according to pkg directions. Do not over cook. Saute and drain sausage in large skillet. Saute mushrooms and onions in butter 10 min/soft and given up liquid. Add four and stir until smooth. Gradually add milk and stir until thick and smooth. Add worchestershire and S&P to taste. Pour into buttered casserole and top with breadcrumbs. Bake 375 for 30 minutes. Possible to prepare and freeze or chill until ready to bake. This recipe is flexible and can be adapted to use wine/stock instead of milk. Canned mushrooms are also easy sub.

4 - celery stalks, sliced thin
4 - green onions sliced thin
1/2 cup - fresh mushrooms, sliced thin
1 - 4oz pkg slivered almonds
oil and vinegar dressing

Steps:

  • Toss cooked wild rice with olive oil and chill thoroughly. Combine sprouts, parsley, green pepper, onions, celery and mushrooms and chill. At serving time combine rice, chopped and sliced ingredients, almonds, salt and pepper and dressing. Toss. Garnish with any of the following: chopped, hard-cooked egg, capers, diced tomatoes or crumbled bacon.

This is my husband's grandmother's broccoli casserole and it is his absolute favorite! The original recipe calls for cheese whiz, but personally I prefer velveeta. You could substitute any kind of cream soup, but I like the cream of mushroom for this recipe. Enjoy!

1 rope kielbasa-cut in pieces
1/2 medium onion -diced
1 large yellow sqash-diced
1 medium zucchini- diced
11/2 c arborio rice
3 c chicken or beef broth

Steps:

  • 1. In a deep non-stick Skillet on medium/high heat, brown Kielbasa and Mushrooms, and onion until browned. Add in Cut Veggies.
  • 2. Stir everything until veg is translucent. Add in Arborio Rice. Stir again to combined. Bring to a boil, the reduce heat to a simmer for 20 min. or until all liquid is absorbed
