GRANDMA'S RICE PUDDING

My sisters and I always loved the recipe for rice pudding our grandma made. After she passed away, I took it upon myself to try and find the secret to her rice pudding. It took quite a bit of experimentation, but I finally got it right! And I'm glad to share this easy recipe here. -Margaret DeChant, Newberry, Michigan

1-1/2 cups cooked rice
1/4 cup raisins
2 large eggs
1-1/2 cups whole milk
1/2 cup sugar
1/2 teaspoon ground nutmeg
Additional milk, optional

Steps:

  • Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

2 cups rice, cooked
3 cups milk, divided
¼ cup sugar
salt, to taste
1 egg
¼ teaspoon nutmeg
¼ teaspoon ground cinnamon

Steps:

  • In a medium sauce pot, combine the rice, 2 cups (470 ml) of milk, sugar, and a pinch of salt. Bring to a gentle simmer over medium heat. Cook for 15 minutes, or until thick and creamy.
  • In a small bowl, combine remaining milk and the egg. Whisk well.
  • Add the egg mixture to the pot of rice. Stir well and cook for 3 minutes.
  • Add the nutmeg and cinnamon, and mix well.
  • Enjoy!

This rice pudding is lovely served warm. It has the appeal of homemade comfort food.

1 cup uncooked white rice
2 cups water
3 eggs, beaten
2 cups milk
½ cup white sugar
1 teaspoon vanilla extract
½ teaspoon salt
⅓ cup raisins
1 pinch ground nutmeg

Steps:

  • Place uncooked rice in a 3 quart saucepan, and add water. Bring to a boil. Reduce heat, and simmer for 25 to 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, combine beaten eggs, milk, sugar, vanilla extract, and salt. Mix well. Stir in rice and raisins. Pour into a 10x6x2 inch baking dish.
  • Bake uncovered for 30 minutes; stir pudding and sprinkle with nutmeg. Bake additional 30 minutes or until a knife inserted halfway between the edge and the center comes out clean.

HEALTHY SPICED RICE PUDDING

Make a rice pudding infused with hot cross bun flavours for a special (and healthy) Easter treat for the family. Use semi-skimmed milk for 2-5 year olds

1 tsp butter
1l semi-skimmed milk + 100ml
200g wholegrain rice
1 orange , finely zested
1 tsp mixed spice
1 tsp cinnamon
A grating of nutmeg
1 tbsp orange segments
honey and raisins, to serve

Steps:

  • Butter the slow cooker all over the base and half way up the sides. Heat the milk to a simmer. Mix the pudding rice and the milk and pour into the slow cooker. Add the orange zest, and spices. Cook for 4 hours on low and stir once or twice if you can. If after 3 hours the rice pudding is beginning to stick to the base of the cook, add a splash of water. The rice will be tender when cooked. Add 100ml milk to loosen the pudding, if necessary.
  • Serve topped with orange segments and honey, fruit and raisins, if you like.

CREAMY RICE PUDDING WITH STEWED PLUMS

Give your guests a nostalgic hit with this nursery pudding of the highest order

200ml port
200ml red wine
1 cinnamon stick
1 star anise
100g clear honey
zest and juice 2 oranges
500g plums , halved and pitted
1l full-fat milk
250ml double cream
1 vanilla pod , split
1 cinnamon stick
100g caster sugar
200g pudding rice
50g salted butter
250g tub mascarpone

Steps:

  • Heat oven to 140C/120C fan/gas 1. Bring the Port and wine to the boil in a pan, with the cinnamon and star anise. Reduce by half, then add the honey, orange zest and juice.
  • Pour the liquid over plum halves in a roasting tin, cover with wet baking parchment and very gently poach in the oven for 30 mins until soft but not exploding. Allow to cool in the liquid, gently removing the skins if you like, but it's not necessary.
  • Meanwhile, make the rice pudding. Put the milk, cream, vanilla pod, cinnamon stick and sugar in a pan. Bring to the boil, then remove from the heat and leave to infuse for 1 min.
  • Place pan back on the heat, pour in the rice and stir. Simmer for 40 mins, stirring frequently, until the rice is soft. Remove from heat and keep warm. When ready to serve, remove vanilla pod and cinnamon. Stir in the butter and mascarpone. Spoon into large coffee cups or bowls and top with some of the stewed plums.

3/4 cup Arborio rice, rinsed
6 cups whole milk
1/2 vanilla bean, split and scraped
1/2 cup sugar
Pinch of salt
1/4 cup heavy cream
1 teaspoon freshly grated orange zest

Steps:

  • In a medium saucepan, combine rice, milk, vanilla bean and seeds, sugar, and salt. Bring to a boil over medium-high heat; reduce heat and simmer, stirring frequently, until rice is tender and liquid has absorbed, about 40 to 45 minutes.
  • Remove vanilla bean; stir in orange zest and heavy cream. Rice pudding may be served at room temperature or chilled.
