Surprisingly easy and extremely flavorful. The curry powder does not add an actual curry taste, just a nice rich flavor, so give it a try even if you aren't a curry fan.

3 cups chicken broth
2 tablespoons olive oil
4 stalks celery, chopped
½ large onion, diced
4 green onions, white and green parts separated and sliced
3 cloves garlic, minced
1 teaspoon curry powder
½ teaspoon salt
1 ½ cups uncooked white rice
½ cup golden raisins

Steps:

  • Bring chicken broth to boil in a saucepan over medium-high heat; continue simmering while preparing remaining ingredients.
  • Heat olive oil in a large skillet over medium heat. Cook and stir celery, onion, green onion white portions, garlic, curry powder, and salt in the hot oil until vegetables are tender, about 5 minutes. Transfer vegetables to a bowl.
  • Cook and stir rice in the same skillet until lightly toasted, about 3 minutes.
  • Stir toasted rice into boiling chicken broth. Reduce heat to medium-low; continue simmering until rice is tender and broth is absorbed, about 15 minutes.
  • Remove rice from heat and stir in raisins, green onion tops, and celery mixture until well blended.

This Moroccan pilaf is simple to make but turns out delicious every time. Basmati rice is cooked with raisins, dried fruit and spices for an unforgettable experience! Suitable for a vegan, vegetarian and gluten-free diet.

2 tablespoons olive oil
1 medium onion, finely chopped
1/2 teaspoon cumin
1/4 teaspoon allspice
1/8 teaspoon ground cloves (or 2-3 whole cloves)
1/4 teaspoon cardamom (or 5-6 cardamom pods)
1 stick cinnamon
2 bay leaves
Salt and pepper to taste
2 cups Basmati rice
3 cups vegetable stock or water (you can also use chicken stock if you're not vegan)
1/4 teaspoon saffron
3 dates, finely chopped
3 dried apricots, finely chopped
1/4 cup raisins, chopped
1/4 cup roasted almonds, crashed

Steps:

  • Saute: Place the onion and the olive oil in a large pot and sauté under medium heat for 2-3 minutes. Add cumin, allspice, cloves, cardamom, cinnamon stick, bay leaves, pepper and rice and stir until rice gets a white color, about 2-3 minutes.
  • Simmer: Add the stock (or water), salt and saffron, cover the pot and wait until it starts to boil. Reduce heat to a gentle simmer and cook covered until almost all of the water is absorbed, about 5 - 10 minutes.
  • Rest: Turn off the heat, add the dried fruits and almonds and stir/fluff up gently with a fork. Cover the pot and let the pilaf rest for 15-20 minutes.

1 cup apple cider
1 cup golden raisins
¼ cup apple cider vinegar
1 ¼ cups jasmine rice
1 teaspoon white sugar
1 teaspoon brown sugar
¼ teaspoon ground cinnamon
1 tablespoon extra-virgin olive oil
1 Granny Smith apple - peeled, cored, and diced
1 small sweet onion, diced
1 stalk celery, diced
¼ teaspoon ground white pepper
⅛ teaspoon salt
1 dash ground cinnamon
¼ cup blanched slivered almonds

Steps:

  • Combine water, apple cider, and golden raisins in a pot. Bring to a boil; add rice. Cook, stirring often, until most of the water is absorbed, about 17 minutes. Mix in white sugar, brown sugar, and 1/4 teaspoon cinnamon; continue cooking until rice is tender, about 3 minutes more. Remove from heat.
  • Heat olive oil in a large skillet over medium heat. Cook and stir apple, onion, and celery in the hot oil until softened, about 5 minutes. Season with white pepper, salt, and a dash of cinnamon. Stir in almonds; cook until starting to brown, 3 to 5 minutes.
  • Fold apple and almond mixture into rice. Let stand until flavors combine, about 5 minutes.

2/3 cup wild rice
2 cups apple cider, fresh
1 cup water
1/4 cup butter
1/4 cup pecans, chopped or 1/4 cup sliced almonds
1/4 cup golden raisin
1/8 cup currants
1/8 cup dried cranberries, halved
2 tablespoons candied ginger
1 large shallot, french, thinly sliced
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 apple, ida red, peeled, cored & chopped

Steps:

  • Wash rice three times, drain well.
  • Combine rice, cider and water in pan. Bring rice mixture to boil, reduce heat to low and cover and simmer 45 - 60 minutes.
  • In a large frying pan, melt butter on low, add pecans, raisins, currants, and cranberries, ginger and shallots, stirring for 5 minutes.
  • Next add the salt, pepper, cinnamon, nutmeg, fresh apple and wild rice. Cook on low for 2 minutes until heated, serve warm -- enjoy.

3/4 cup long grain brown basmati rice
1/4 cup sliced almonds or 1/4 cup cashew pieces
2 teaspoons curry powder
1 medium granny smith apple, cored, peeled and chopped
1/2 cup raisins
1/4 cup green onion, sliced

Steps:

  • Cook the basmati rice until tender and liquid absorbed. (If using leftover rice, heat thoroughly.) Do not add any oil or salt to the rice. Keep warm.
  • In a saucepan over medium heat, toast the almonds until light golden brown, stirring frequently to avoid burning.
  • Next add the curry powder, cooking for about 1-2 minutes or until curry powder is fragrant, again being careful not to burn.
  • Add the Granny Smith apple, raisins and green onion. Stir gently and heat through.
  • Season with salt to taste.

2 cups apple juice
2 cups enriched long-grain instant rice

  • In a medium saucepan, melt butter and saute onion and apples over medium heat until soft. Add apple juice, increase heat to high, and bring to a boil. Stir in rice. Cover and remove from heat. Let stand for 5 minutes. Remove cover and stir in toasted almonds. Serve.

1 medium onion, chopped
2 teaspoons olive oil
1 cup basmati rice
2 cups chicken stock or 2 cups broth
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup fresh parsley, chopped
1/3 cup golden raisin

Steps:

  • In a heavy saucepan, warm the olive oil.
  • When warm add the onion and rice; cook stirring constantly until onion is transparent and rice begins to brown.
  • Stir in the broth, turmeric, cinnamon and salt.
  • Bring to a boil, reduce heat, cover and simmer until most of the liquid is absorbed, about 20 minutes.
  • The last 5 minutes, stir in the raisins.
  • Remove from heat, stir in parsley, cover and let stand, covered for 5 minutes.
