RICE KRISPIES DATE BALLS (AKA ANGEL COOKIES)
Another recipe from my Aunt's recipe clippings. This one also came from the Sept 19, 1969 Chicago Tribune originally. The clipping is crinkled with old yellow tape holding it together to make sure the recipes stayed intact. :) These are not like the typical angel cookies at all - they are little balls of dates, coconut, and Rice Krispies rolled in powdered. Don't use the prechopped dates as they aren't sticky enough - buy the whole pitted dates and chop them yourself. Also be sure to use the canned coconut..the kind that comes in bags is too dry and you will have a hard time getting the cookies to roll up otherwise.

PEANUT BUTTER AND CHOCOLATE CHIP RICE KRISPIES BALLS
I saw this in Oprah Magazine (December 2008) and thought this would be a great addition to those Christmas cookie platters we all have to make. Very quick and easy to do. This only has 5 ingredients. This uses chocolate-covered toffee candy bars (Heath bars) and looks easy enough for my boys to make for their teacher. This also uses a microwave to make things go even quicker.

Steps:
- Mix everything together, refrigerate for a half hour or longer and then form into balls. Return to fridge and let chill at least an hour (longer would be best). Note: To make it easier to roll in chocolate, freeze for a minimum of 4 hours or overnight. Melt the following together in a double -boiler: one package chocolate chips, one square sweet chocolate. Keep on low so that chocolate remains soft. Drop balls into chocolate mixture one at a time using a fork to roll them so that the chocolate will cover. Let set on parchment paper in fridge. They freeze well. Note: The balls can also refrigerated over night or may be frozen, and then dipped in chocolate.

PEANUT BUTTER BALLS WITH RICE KRISPIES
I actually love these more than Peanut Butter cups. This recipe has been a favorite of many for years. My Aunt usually made them in the shape of eggs at Easter time. I now make them for Easter, and for Christmas. I roll them in red and green sprinkles to be festive for Christmas. I love these so much, and it's nice to make them...

Steps:
- 1. Melt butter in large pan. Mix in the peanut butter until melted. Remove from heat. Mix in confection sugar and Rice Krispies thoroughly. I use gloved hands. Refrigerate for an hour, or longer. The longer you refrigerate. The easier it is to handle. Take out and make mixture in to balls .
- 2. Line cookie sheets with wax paper.
- 3. Melt chocolate chips in double boiler, or stainless steel bowl in a pan of boling water, with a 1/3 block of parra fan wax. Wax is edible. Candy manufacturer's use it in raisinettes, whoppers Etc. you can subsitute 1-2 TB shortening for wax. The balls will not be as shiny.
- 4. Remove chocolate from heat and start dipping balls in chocolate. Make sure entire ball is coated. Spoon on to wax paper sheets. You may dprinkle with colored jimmie. Roll in nuts etc. if desired. let them set on counter or refrigerate. After they set up. I store mine in a cookie tin in refrigerator. That's it!! Enjoy!!!
