CLASSIC CRISPY RICE TREATS



Classic Crispy Rice Treats image

Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. We added a splash of vanilla extract and pinch of salt to give these sweet treats a palatable punch. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

Nonstick cooking spray
4 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
6 cups crispy rice cereal, such as Rice Krispies
1 teaspoon pure vanilla extract
Pinch kosher salt
Decorative toppings, optional (see Cook's Note)

Steps:

  • Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
  • Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
  • Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.

S'MORES CRISPY RICE TREATS



S'mores Crispy Rice Treats image

When I think of trips, I think of camping, and when we go camping, we make s'mores. It's one of my childhood favorites.

One 10-ounce bag mini marshmallows
One 10-ounce bag bittersweet chocolate chips
2 cups crushed graham crackers
Nonstick cooking spray, for the pan
3 tablespoons unsalted butter
6 cups crispy rice cereal, such as Rice Krispies

Steps:

  • Set aside 1 cup marshmallows, 3/4 cup chocolate chips and 1/2 cup crushed graham crackers to top the treats with.
  • Lightly spray an 8-inch square metal baking pan with nonstick spray. Cut out an 8-inch-wide strip of parchment paper and use it to line the pan, leaving enough overhang on the sides so you can use the flaps to lift out the treats. Lightly spray the parchment with nonstick spray.
  • In a large nonstick pot over medium heat, add the butter. Swirl around until melted, then dump in the marshmallows. Stir gently with a spatula until the marshmallows have completely melted, about 90 seconds. Remove the pot from the heat, then add the rice cereal and stir until combined. Let cool slightly, then add the crushed graham crackers and fold in gently. Add the chocolate chips and mix just barely until folded in (if you mix too much, the chocolate will melt completely).
  • Dump the mixture into the lined pan and press down gently so the mixture is evenly distributed in the pan. While still warm, sprinkle with the reserved marshmallows, reserved chocolate chips and reserved crushed graham crackers. Using a creme brulee torch, toast the marshmallows and melt the chocolate evenly, using a sweeping motion so the marshmallows don't catch fire, about 45 seconds.
  • Allow to cool completely, about 30 minutes.
  • Slice into squares using a warm, sharp knife and serve.

Four 10-ounce bags mini-marshmallows

Steps:

  • Line an 8-inch square baking dish with aluminum foil and spray generously with nonstick cooking spray. Combine the cereal with 1 bag marshmallows in a large bowl; set aside.
  • Melt the butter in a large heavy-bottomed pot or stockpot over medium-high heat. Add the 3 remaining bags of marshmallows and cook, stirring occasionally, until they are fully melted, about 5 minutes. Remove the pan from the heat and stir in the vanilla extract. Fold half the cereal mixture into the melted marshmallows until well-coated; fold in the remaining cereal mixture.
  • Scoop the mixture into the prepared pan. Spray another piece of foil with cooking spray and use it to cover the mixture, pressing gently on the foil to evenly spread the mixture out, getting it evenly into the corners and flattening the top (you can dome the top slightly if you have extra mixture). Place in the refrigerator to set, around 1 hour. Cut into 2-inch squares and serve. Leftovers keep in an airtight container at room temperature, 2 days; or wrap in a freezer bag and freeze.

¾ cup dark brown sugar
⅓ cup heavy cream
2 teaspoons flaky sea salt, divided
8 cups mini marshmallows
7 cups rice cereal

Steps:

  • Line a 9-inch (22 cm) square pan with 2 sheets of parchment paper and sprinkle the sugar over the bottom of the pan.
  • In a large nonstick pot, combine the butter, brown sugar, heavy cream, and 1½ teaspoons of flaky salt. Bring to a simmer over medium-high heat, stirring until the mixture is thick enough to coat the back of a spatula.
  • Reduce the heat to low and add the mini marshmallows. Stir until the marshmallows are completely melted, then remove the pot from the heat.
  • Add the rice cereal to the pot and stir to combine. Let cool slightly.
  • Transfer the mixture to the prepared pan and press into an even layer. Sprinkle the remaining ½ teaspoon of flaky salt on top.

4 cups crispy rice cereal
4 cups marshmallows (fruit flavored mini marshmallows)
1/4 cup marshmallows (plain mini marshmallows)
3 tablespoons butter

Steps:

  • Take a pan or baking dish approximately 13x 9 x2 inch size.
  • Lay aluminum foil (or parchment paper or waxed paper) across your pan leaving the ends folded over the edges to to work as handles for when removing your crispy rice cereal treats when finished.
  • Spray inside pan (including lining) with non-fat cooking spray.
  • Use a large heavy saucepan to melt the butter over LOW HEAT for 2 minutes.
  • Add half of the marshmallows and stir constantly over LOW HEAT to melt them. Be careful not to let them stick or burn to the bottom of the pan. It is essential that you do not rush this step!
  • Remove the pan from the heat. Add to the pan half of the crispy rice cereal, then the other half of the marshmallows, and finally the other half of the crispy rice cereal.
  • Stir gently but quickly with buttered or silicone spatula.
  • Pour crispy rice mixture into prepared pan.
  • Using waxed paper or buttered spatula or disposal gloves sprayed with cooking spray, firmly press the hot cookie mixture into the pan (the gloves truly work the best).
  • Let crispy rice cereal mixutre cool until firm (approximately 45 minutes).
  • Turn treats out of pan, peel off foil/paper and cut into squares.
  • Store in an airtight container.
  • TIp: Although I substitute low-fat and low-calorie products for almost everything that I make, this dish definitely turns out best using real butter, and premium quality marshmallows.
  • Tip: If fruit flavored is not your thing, but chocolate and/or peanut butter is, you can substitute the fruit flavored marshmallows with plain mini-marshmallows and then add 3/4 cup of smooth peanut butter and/or 3/4 cups of chocolate chips when adding the second half of the marshmallows.
  • Tip To speed up cooling place in freezer 15 minutes.
  • Tip: Will last 2 days at room temperature or 6 weeks in the freezer.

About 12 vanilla- or chocolate-flavored candy chews, such as Tootsie Rolls

Steps:

  • Coat a wooden spoon and 1/3-cup dry measuring cup with cooking spray. Line a baking sheet with parchment, and coat lightly with cooking spray.
  • Melt the butter in a medium saucepan over medium heat. Add the marshmallows, honey, vanilla and a pinch of salt, and stir with the prepared wooden spoon until the marshmallows have completely melted, 4 to 5 minutes. Remove from the heat, add the cereal and stir until the mixture is fully combined.
  • Use the prepared measuring cup to scoop out the mixture onto the prepared baking sheet in mounds. Let them cool for a few seconds to make them easier to work with. Spray your hands with cooking spray, and firmly press and pat each mound into a football shape. Let the treats sit at room temperature to harden slightly, about 20 minutes.
  • Cut the candy chews lengthwise into quarters. Roll the pieces into thin ropes and cut into short and long lengths to make laces. Arrange the candy on top of each football, pressing in to help them adhere. Store at room temperature in an airtight container for up to 3 days.

4 tablespoons (1/2 stick) unsalted butter, plus more for dish
10 ounces jumbo marshmallows
3/4 cup creamy, common brand peanut butter (recommended: Jif or Skippy)
6 cups crispy rice cereal (recommended: Rice Krispies)
6 ounces semisweet chocolate chips

Steps:

  • Melt the butter over low heat in a large pot. Stir in the marshmallows and cook until fully melted and no marshmallow white remains. Stir in the peanut butter until combined. Stir in the cereal until distributed evenly through the marshmallow mixture. Pour out onto a lightly greased rectangular baking dish (9 by 13 inches). Smooth out the top of the treats by moistening your hands with a little water and using the palms of your hand to press down gently. Don't press down too hard or else your treats will be too dense. Set aside to cool.
  • Once the treats have cooled, melt the chocolate over low heat. Cut the treats into even squares and quickly just shallowly dip the top side of the treats into the chocolate. Turn chocolate side up and set in a baking dish or on a rack until set.

¼ cup heavy cream

1 stick unsalted butter
16 oz mini marshmallows
1 tablespoon McCormick® vanilla extract
8 cups puffed rice cereal
1 tablespoon flaky sea salt

Steps:

  • Make the salted caramel sauce: In a small saucepan fitted with a candy thermometer, stir together the sugar, water, and salt until no clumps remain, brushing any sugar granules from the sides of the pot. Turn the heat to medium and cook the sugar mixture without stirring until the temperature reaches 350°F (180°C) and the color turns light amber brown, 10-15 minutes.
  • Gently whisk in 1 piece of butter at a time until melted and incorporated.
  • Remove the pot from the heat. Slowly pour in the heavy cream, whisking continuously to prevent the caramel from overflowing. Use caution as the mixture bubbles. Let the sauce cool completely, then transfer to an airtight container and store in the refrigerator for up to 1 month.
  • Make the crispy rice treats: Grease a 9 x 13-inch glass baking dish with nonstick spray and line the bottom with parchment paper.
  • In a large saucepan, melt the butter over medium heat until lightly browned, 3-4 minutes.
  • With a rubber spatula, stir in the marshmallows until completely melted. Stir in the vanilla. Turn off the heat, add the puffed rice cereal, and stir until well coated.
  • Spread half of the crispy rice mixture evenly in the prepared pan. Freeze for 15 minutes.

Two 12-ounce bags marshmallows
6 tablespoons unsalted butter, cut into tablespoons
Green gel food coloring
Purple gel food coloring
9 cups crispy rice cereal
1/2 cup semisweet chocolate chips
Halved chocolate-covered peanuts or black or orange jellybeans, for decorating

Steps:

  • Line a 9-by-13-inch baking dish with foil to overhang by an inch or two. Spray with cooking spray.
  • Remove half the marshmallows from one bag and set aside. Divide the remaining 1 1/2 bags of marshmallows evenly between 2 large microwave-safe bowls. Divide the butter between the two bowls.
  • Microwave one bowl until the marshmallows begin to melt, about 45 seconds. Stir well and microwave again until completely melted, about 30 seconds more. Add green gel food coloring and stir to turn the marshmallow mixture an even, vibrant green (see Cook's Note). Add half the rice cereal (4 1/2 cups), stirring well to coat the cereal completely and evenly. Repeat the melting process with the second bowl of marshmallows and butter, tint with purple gel food coloring and mix in the remaining 4 1/2 cups rice cereal.
  • Grease your hands with cooking spray (or use disposable gloves). Using one hand for each color, dollop blobs of the cereal mixture in the prepared pan, randomly distributing it to make several mottled layers. Once you have used all of the cereal, press the mixture into the pan to even it out and smooth the top. Let cool and set completely, at least 1 hour.
  • Use the foil overhang to lift the treats from the pan. Peel back the edges, flattening the foil to create a work surface for decorating. Trim the treat edges with a serrated knife to neaten if desired and cut into 9 rectangles. Separate the treats on the foil so there is a little space between each.
  • Put the remaining half bag of marshmallows in a large microwave-safe large bowl. Microwave until the marshmallows begin to melt, about 45 seconds. Stir and microwave again until completely melted, about 30 seconds more. Stir until smooth. Set aside until the marshmallows are just cool enough to touch.
  • Wearing disposable gloves, pull out a handful of the marshmallows and rub between your hands until you can pull long web-like strings when you separate them. Pull the strings and let them drape over the treats, scooping up more marshmallows as needed. Pull from different directions over the treats to create a web-like pattern.
  • Melt the chocolate chips in a double boiler or in the microwave at 50-percent power in 30-second intervals, stirring well with a rubber spatula between each, until completely melted and smooth. Transfer to a piping bag fitted with a small, plain tip. Pipe 8 spider legs together on a treat and place a chocolate-covered peanut or jellybean, cut side down, on top of the legs to create a spider body. Make a spider on each treat.

4 tablespoons unsalted butter, plus more for greasing pan
One 10-ounce bag mini marshmallows
2 teaspoons pure vanilla extract
Kosher salt
6 cups crispy white cereal
1/3 cup multicolored sprinkles, plus more for decorating
2 cups mini marshmallows
4 tablespoons unsalted butter, at room temperature
1/2 cup confectioners' sugar
Butter a 9-inch round cake pan.

Steps:

  • For the "cake": Melt the butter in a large pot over medium heat. Add the marshmallows, and cook, stirring occasionally, until they melt completely, about 5 minutes. Remove the pot from the heat, and stir in the vanilla and a pinch of salt. Add the cereal and sprinkles, and stir with a rubber spatula, scraping up from the bottom, until the cereal is completely coated. Transfer the cereal to the prepared cake pan, and pat it down into an even layer. Let sit at room temperature until firm, about 30 minutes. Invert onto a serving plate.
  • For the frosting: Heat the marshmallows and butter in small saucepan over medium-low heat, stirring constantly, until completely melted. Remove the saucepan from the heat, and stir in the confectioners' sugar.
  • Spread the frosting over the top of the "cake" in an even layer. Decorate with sprinkles. Cut into wedges, and serve. (The frosted "cake" can be stored in an airtight container at room temperature for up to 3 days.)

I got this from the rice crispy website. They look like great little treats for the children during christmas. You can also use a christmas tree cookie cut out and make christmas tree treats! I think that I will also drizzle some melted semi-sweet chocolate on top of these little presents!

4 cups miniature marshmallows
6 cups rice, krispies
canned frosting or decorating gel
assorted candy
red string licorice

Steps:

  • In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  • Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.
  • Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray and/or lined with waxed paper. Cool. Cut into 2-inch squares.
  • Use frosting to fasten stacks of two squares together. Decorate with additional frosting and/or candies. Tie bows on packages with licorice, if desired. Best if served the same day.

Nonstick cooking spray, for the baking dish
3 tablespoons unsalted butter, cut into tablespoons
One 10-ounce bag mini marshmallows
5 1/4 cups crispy rice cereal, such as Rice Krispies
1/2 teaspoon blue gel food coloring (see Cook's Note)
1/2 teaspoon red gel food coloring
1/4 cup mixed red, white and blue sprinkles

Steps:

  • Line a 9-by-9-inch baking dish with aluminum foil, leaving a 2-inch overhang on two opposite sides. Spray the foil lightly with cooking spray.
  • Divide the butter and marshmallows among 3 medium microwave-safe bowls (1 tablespoon of butter and about 2 cups of marshmallows per bowl). Microwave 1 bowl until the butter has melted and the marshmallows have puffed, about 60 seconds. Stir in the blue gel food coloring until the mixture is smooth and no streaks of food coloring remain.
  • Working quickly, add 1 3/4 cups of the rice cereal to the bowl and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Set aside.
  • Microwave another bowl of butter and marshmallows in the same manner. Stir together until smooth and combined (this will be the "white" layer). Stir in another 1 3/4 cups of rice cereal until evenly coated. Place on top of the blue cereal treat layer, pressing until even and compact.
  • Repeat with the remaining bowl of butter and marshmallows, microwaving until melted and smooth. Stir in the red gel food coloring until the mixture is smooth and no streaks of food coloring remain. Add the remaining 1 3/4 cups rice cereal to the bowl and stir until evenly coated. Place on top of the white cereal treat layer, pressing into an even, compact layer. While still warm, top evenly with the sprinkles, pressing gently so they adhere.
  • Let sit at room temperature until firm, about 30 minutes. Cut into 16 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.
