Rice and Ham Salad image

This salad has a flavorful dressing and includes plenty of vegetables. Try serving this with sliced avocado or shredded lettuce.

3 cups cooked long grain white rice
¼ cup French salad dressing
¾ cup mayonnaise
1 tablespoon chopped green onion
½ teaspoon curry powder
½ teaspoon dry mustard
½ teaspoon salt
ground black pepper to taste
1 ½ cups cooked ham, cut into thin strips
1 cup chopped cauliflower
1 cup frozen peas, thawed
½ cup chopped celery
½ cup sliced radishes

Steps:

  • In a large bowl, combine the rice, salad dressing, mayonnaise, green onion, curry powder, dry mustard, salt and pepper. Mix well and refrigerate until chilled.
  • To the rice mixture, add the ham, cauliflower, peas, celery and radishes. Mix well and serve with sliced avocado or shredded lettuce.

5 cups cooked wild rice
1/2 cup Western salad dressing
1 cup cubed fully cooked ham
1 cup cubed cooked turkey
1 cup thinly sliced celery
1 cup frozen peas, thawed
2/3 cup thinly sliced radishes
1/2 cup finely chopped onion
1 cup mayonnaise
2 teaspoon prepared mustard
1/4 to 1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine rice and dressing; cover and chill overnight. Add ham, turkey, celery, peas, radishes and onion. Combine mayonnaise, mustard, curry, salt and pepper; mix well. Stir into salad. Cover and refrigerate for at least 2 hours.

3/4 cup golden raisins
1-1/2 cups hot water
4 cups cooked wild rice
2 cups julienned fully cooked ham
4 green onions, thinly sliced
1/3 cup olive oil
1/4 cup cider or white wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Lettuce leaves and toasted pecan halves

Steps:

  • In a large bowl, soak the raisins in water for 5 minutes; drain. Add rice, ham and onions. In a small bowl or jar with tight-fitting lid, combine oil, vinegar, salt and pepper; mix well. Pour over rice mixture and toss to coat. Cover and refrigerate for at least 1 hour. Serve on lettuce; garnish with pecans.

Taste the rice as it nears the end of its cooking time; it should be cooked through and toothsome, but not crunchy. Be careful not to overcook the rice or the grains will "blow out" and fray. 1 1/2 cups long grain white rice or 1 1/2 cups basmati rice
1 1/2 teaspoons table salt
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 small garlic clove, minced (about 1/2 teaspoon)
1 teaspoon table salt
1/2 teaspoon ground black pepper
1/2 cup frozen peas, thawed
6 ounces cherry tomatoes, quartered and seeded (about 1 cup)
1 ounce deli ham, deli-style baked (thin-sliced or prosciutto, chopped fine, about 1/4 cup)
1 ounce parmesan cheese, shredded (about 1/4 cup)
1/4 cup fresh basil, shredded (fresh)

Steps:

  • For Boiled Rice:
  • Bring 4 quarts water to boil in large stockpot. Meanwhile, heat medium skillet over medium heat until hot, about 3 minutes; add rice and toast, stirring frequently, until faintly fragrant and some grains turn opaque, about 5 minutes.
  • Add salt to boiling water and stir in toasted rice. Return to boil and cook, uncovered, until rice is tender but not soft, 8 to 10 minutes for long-grain rice or about 15 minutes for basmati.
  • Meanwhile, line rimmed baking sheet with foil or parchment paper. Drain rice in large fine-mesh strainer or colander; spread on prepared baking sheet. Cool while preparing salad ingredients.
  • For Salad:
  • Stir together oil, vinegar, garlic, salt, and pepper in small bowl. Combine rice, peas, tomatoes, ham, Parmesan, and basil in large bowl; drizzle oil mixture over and toss thoroughly to combine.
  • Let stand 20 minutes to blend flavors and serve.

1 1/2 cups wild rice (10 ounces)
Kosher salt
2 1/2 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon curry powder
1 teaspoon ground cumin
Pinch of cayenne pepper
1/4 cup extra-virgin olive oil
One 19-ounce can chickpeas, drained and rinsed
1/4 pound smoked ham, diced
4 small scallions, white and light green parts, thinly sliced
1/4 cup golden raisins
Freshly ground pepper
Hot sauce

Steps:

  • 1. Fill a large saucepan three-quarters full of water and bring to a boil. Add the wild rice and 1 tablespoon of salt and simmer over moderate heat until the rice is tender and most of the grains have just split, 50 minutes. Drain and rinse the rice under cold water, then drain again. 2. Meanwhile, in a large bowl, whisk the lemon juice, vinegar, mustard, honey, curry powder, cumin and cayenne. Add the olive oil and whisk until combined. Toss in the chickpeas, ham, scallions, raisins and wild rice. Season the salad with salt, pepper and hot sauce, transfer to a bowl and serve.
