My family- husband, children and grandchildren- all look forward to this easy seafood side dish. It's one I've made for well over 30 years.

2 cups crushed butter-flavored crackers (about 50)
1/2 cup butter, melted
1/2 teaspoon salt
Dash pepper
1 pint shucked oysters or 2 cans (8 ounces each) whole oysters, drained
1 cup heavy whipping cream
1/4 teaspoon Worcestershire sauce

Steps:

  • Combine cracker crumbs, butter, salt and pepper; sprinkle a third into a greased 1-1/2-qt. baking dish. Arrange half of the oysters over crumbs. Top with another third of the crumb mixture and the remaining oysters. , Combine cream and Worcestershire sauce; pour over oysters. Top with remaining crumb mixture. Bake, uncovered, at 350° for 30-40 minutes or until top is golden brown.

1-1/2 cups crushed butter-flavored crackers (about 38 crackers)
1/2 cup butter, melted
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 pint shucked fresh oysters, drained
1/3 cup condensed cream of mushroom soup, undiluted
2 tablespoons milk

Steps:

  • In a small bowl, toss the cracker crumbs and butter. In another bowl, combine the salt, nutmeg and pepper. In a greased 11x7-in. baking dish, layer half of the crumbs, half of the oysters and 1/4 teaspoon of seasoning mixture., Combine soup and milk; pour over the top. Layer with remaining oysters and another 1/4 teaspoon of seasoning mixture. Top with remaining crumbs and seasonings. Bake, uncovered, at 400° for 20-25 minutes or until hot and bubbly.

2/3 cup chopped parsley
2/3 cup green onion, finely chopped
1 cup cracker crumb
1/2 cup butter
1 lemon, juice of
1/2 teaspoon dry mustard
1 teaspoon Worcestershire sauce

Steps:

  • Pour the oysters into a shallow 9" pie plate.
  • Sprinkle with parsley and onions.
  • Scatter the cracker crumbs on top.
  • Melt butter and add lemon juice, mustard and Worcestershire sauce.
  • Pour mixture over the crumbs and bake 450F until oysters curl slightly and crumbs are brown appro 10-15 minutes.

My husband's aunt gave me this recipe a long time ago. I usually fix this recipe for Thanksgiving or Christmas. My children loves this recipe.

one lb oysters, raw with juice
half of box ritz crackers
one stick butter, melted
3/4 c cream or milk

Steps:

  • 1. Butter the bottom of a casserole dish. *(Saving the rest of the butter for later use) Crush the crackers real fine. (I do one roll of crackers at a time in a plastic bag).
  • 2. Place one roll of the crushed crackers into the casserole dish, covering up the butter. Place the oysters on top of the crackers, arranging them around the dish, following with the liquid from the oysters.
  • 3. Apply the other bag of crushed crackers on top of the oysters, spreading the crackers to cover. *Melt the remaining butter and drizzle over all ingredients.
  • 4. Using your forefinger, poke 6-8 holes into the ingredients and fill each hole with the cream. Bake at 350 degree oven, until lightly brown.

½ cup bread crumbs
25 buttery round crackers, crumbled
½ cup melted butter
1 pint shucked oysters, drained with liquid reserved
1 pinch salt and ground black pepper to taste
2 tablespoons milk

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Butter a shallow baking dish.
  • Combine bread crumbs and cracker crumbs; stir in the melted butter. Place a thin layer of the crumb mixture in the bottom of the prepared baking dish. Layer the oysters over the crumbs and sprinkle with salt and pepper to taste. Pour 2 tablespoons oyster liquid and 1 tablespoon milk over the top. Repeat then cover the top layer with the remaining crumb mixture.
  • Bake at 450 degrees F (230 degrees C) for 30 minutes.

1/4 c minced onion
1/2 c butter
3/4 tsp celery salt
1/4 tsp cayenne pepper
1 Tbsp worcestershire sauce
1 tsp lemon juice
2 c crushed saltine crumbs
1 Tbsp dried parsley flakes
2 jar(s) (12-oz. each) fresh oysters (small or medium)
2 eggs, beaten
1 c half and half

Steps:

  • 1. Preheat oven to 350F. Coat an 8-inch square baking dish with nonstick cooking spray.
  • 2. Melt butter in a skillet over medium-high heat. Saute onion until tender. Remove from heat and stir in celery salt, cayenne, Worcestershire and lemon juice.
  • 3. Combine saltine crumbs and parsley in a bowl.
  • 4. Drain oysters, reserving 1/3 cup liquor.
  • 5. Sprinkle 1/2 cup saltine mixture in bottom of prepared baking dish; layer half the oysters and half the remaining crumbs. Drizzle with half the butter and onion mixture. Repeat layers.

3 cups crushed saltine crackers
¾ cup unsalted butter, melted
4 cups shucked small oysters with liquor
⅛ teaspoon cayenne pepper
salt and ground black pepper to taste
2 tablespoons chopped fresh Italian flat-leaf parsley
1 cup heavy cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine saltine crackers and butter in a bowl; stir until all crumbs are saturated with butter.
  • Spread 1/3 of the saltines mixture on the bottom of a 9x13-inch casserole dish. Pour half of the oysters with their liquor over the saltines mixture. Season with cayenne pepper, salt, and black pepper. Repeat with next 1/3 of saltines and remaining oysters. Season with cayenne pepper, salt, black pepper, and Italian parsley.
  • Sprinkle remaining saltines mixture over the oysters. Drizzle cream slowly and evenly over the top.
  • Bake in the preheated oven until bubbling and browned, 40 to 45 minutes. Let rest 10 minutes before serving.

MOM'S OYSTER CASSEROLE

My mother has made this casserole every thanksgiving for as long as I can remember. It just wouldn't be the holidays without it. If my brother can't make it home for the holidays, it is one of his special requests when he is able to get home. The prep time is me using a food processor to chop and doesn't include the time to cut oysters in half if they are too large. I hope you enjoy it as much as my family does.

1 cup coarsely crumbled saltine crackers
1 pint shucked fresh oyster (30-40 depending on the size, cut them up if they are very large)
1/4 cup scallion, chopped
1/4 cup fresh parsley, chopped
1 tablespoon fresh lemon juice
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 cup butter
1 cup light cream
1/2 cup milk
1 dash Tabasco sauce (optional)
paprika, for dusting
salt

Steps:

  • Preheat oven to 400°.
  • Drain oysters well, reserving liquid.
  • Generously grease a shallow 1-1/2-quart casserole dish.
  • Sprinkle half the crackers over the bottom.
  • Lay half the oysters on top of crackers.
  • Sprinkle with half the onions, parsley, lemon juice, salt, pepper and Worcestershire sauce.
  • Dot generously with butter and pour half the cream, milk and reserved juice from the oysters.
  • Repeat the layers but save the remaining cracker crumbs for the top.
  • Add a dash of Tabasco if desired before covering with the crumbs.
  • Cover with the remaining cracker crumbs.
  • Dust enough with paprika to make it really red on top.
  • Bake 30 minutes or until the casserole is set (when you jiggle it, it shakes like set Jello).
  • Serve hot.
