If you like seasoned food you will love this!The mixture on this is done to perfection. This recipe was given to me about 25 years ago. Once you make a prime rib with this seasoning you will be told it is the best prime rib they ever tasted I guarantee it! This recipe is outstanding. I make a shaker of this & keep it on the back of my stove & use it on all my steaks also with soy sauce an hour before cooking. Enjoy!! Note: Will do 2 to 3 prime ribs

Number Of Ingredients 8

1/4 cup ground black pepper (course)
1/4 cup salt
1/4 cup garlic powder
2 tablespoons paprika
1/4 cup onion powder
2 tablespoons msg (can omit, do not substitute with meat tenderizer)
2 tablespoons seasoning salt (Johnny Seasoning)
1 tablespoon celery salt

Steps:

  • Rub 1/2 cup per 10 # meat. Rub and massage seasoning in with SOY SAUCE after all wet, work the seasoning in real good!
  • keep adding more seasoning till you have the amount needed.
  • Place in refrigerator, let seasoning soak into meat for 24 hours before cooking.
  • Take a large onion or more to make 1" thick slices to.
  • line down center of pan big enough to fit your piece of prime rib on! take rib out of refridgerator,sit at room temperature ½ before cooking.
  • Cook 350° around 2 hrs or more depending.
  • on the weight size of the prime rib! Use a meat thermometer.
  • Rare:120°.
  • Med: 140°.
  • Well: 160°.
  • Please note that beef roasts will "render" and continue cooking, increasing in temperature by as much as 15 deg. F just sitting on the counter. So, keep this in mind -- i.e., for a final temp of 120 deg F, take the roast out when the center of the meat reads 105 deg F.

  • May also Cook 500° 5 minutes per pound. After the 5 minutes times the pound of meat turn oven OFF. But you must leave oven door closed for 3 hours. NO Peeking!

2 tablespoons red pepper
1 tablespoon ground cumin

1/4 c course black pepper
1/4 c salt
1/4 c garlic powder
2 Tbsp paprika
1/4 c onion powder
2 Tbsp msg (can omit)
2 Tbsp celery salt
2 Tbsp johnny seasoning salt
soy sauce
1 to 3 large onion

Steps:

  • 1. 24 hours before cooking your Prime Rib. Wet your Prime Rib with Soy Sauce, after your meat is all wet. Rub 1/2 cup of Prime Rib Seasoning mix per 10 pounds of meat. Work and Massage the Soy and the seasoning amount needed.
  • 2. Place in the refridgerator for 24 hours before cooking.
  • 3. Before cooking take the Prime Rib out of the refridgerator and let sit on the counter for 1 hour.
  • 4. Cut up 1 to 3 large onions in 1/2 to line the bottom of your pan. The amount of onions are determined by the size and weight of your Prime Rib.
  • 5. Place your Prime Rib in a 350°oven. COOKIN TIME: Depends on the size & how you like your Prime Rib. Using a Thermometer helps. Rare:120° Medium:140°Well 160°
  • 6. NOTE:Take your Prime Rib out and let sit on the counter for about 20 minutes before cutting.. Your prime Rib is still cooking.
  • 7. Making Aju: In The pan you used to cook your Prime Rib. Leave the onions in and add 3 to 4 cups of water, bring to a good rolling boil for 3 to 5 minutes. Simmer till you are ready to serve.
  • 8. THIS SEASONING IS ALSO GREAT USING ON STEAKS AFTER SOAKING IN SOY SAUCE FOR A COUPLE OF HOURS =)

  • Obtain a medium-sized bowl, a pair of scissors, an empty spice jar with a shaker top and a plastic bag with a zip-seal top.
  • Measure 3 tablespoons of garlic powder, 3 tablespoons of dry mustard and 3 tablespoons of onion powder. Pour each seasoning into the mixing bowl.
  • Add 1 tablespoon of salt, black pepper and paprika to the bowl. Opt for fresh ground medium-sized pepper if possible.
  • Add 2 teaspoons of Cayenne pepper and MSG to the bowl. Individuals who are sensitive to MSG can leave off this ingredient, but should substitute an additional 2 teaspoons of salt or salt alternative.
