Using vinegar and mustard in addition to the usual mayonnaise is the secret to a perfectly balanced potato salad. To save time, chop the celery, scallions, and cornichons for the dressing while the spuds cool.

3 pounds russet potatoes (about 6 medium)
Kosher salt and freshly ground pepper
3 tablespoons distilled white vinegar, divided
3/4 cup mayonnaise
2 tablespoons whole-grain mustard
1 cup finely chopped celery (from 3 stalks)
1/2 cup sliced cornichons (from about 20)
1/3 cup finely chopped scallions (from 3)

Steps:

  • Peel potatoes. Slice lengthwise into 1-inch-thick planks. Lay flat and slice again into 1-inch-thick strips. Stack strips together and cut crosswise into even cubes.
  • In a large pot, cover potatoes with at least 2 inches of water and season generously with salt. Bring to a boil, then reduce heat to medium-high and continue boiling until potatoes are tender and easily pierced with the tip of a knife, 8 to 9 minutes. Drain and transfer to a bowl. Toss with 2 tablespoons vinegar; season with salt and pepper. Let cool completely, about 30 minutes.
  • Meanwhile, whisk together mayonnaise, mustard, remaining 1 tablespoon vinegar. Stir in celery, cornichons, and scallions. Gently fold mayonnaise mixture into cooked potatoes; season with salt and pepper. Serve, or refrigerate in an airtight container up to 1 day (bring to room temperature before serving, about 30 minutes).

2 pounds (about 5-6 medium) potatoes, peeled and sliced into 3/4-inch pieces
1 cup Hellmann's mayonnaise
2 tablespoons vinegar
1 1/2 teaspoons salt
1 teaspoon sugar
1/4 teaspoon ground black pepper
1 cup thinly sliced celery
1/2 cup chopped onion
2 hard-boiled eggs, peeled and chopped

Steps:

  • Fill a 4-quart pot with salted water. Add the potatoes and bring to a boil over medium-high heat. Reduce heat to low and simmer for 10 minutes, or until the potatoes are fork-tender. Drain and set aside to cool slightly.
  • In a large bowl, whisk together the mayonnaise, vinegar, salt, sugar, and pepper. Gently toss in the potatoes, celery, onion, and eggs.
  • Refrigerate it for at least 30 minutes. Serve it chilled or at room temperature. Enjoy!

5 pounds potatoes (new red or mix of white and red)
4 eggs, hard-boiled, chopped
1 cup dill pickle relish
1/2 cup sweet pickle relish
1 cup salad olives , chopped
1 cup onion, chopped fine

1/2 cup parsley, chopped fine
12 ounces mayonnaise
1/4 cup yellow mustard
Salt, to taste
Hot sauce, to taste

Steps:

  • Boil potatoes in skins. Let cool then quarter or halve (smaller ones). Mix mayo, mustard, salt and hot sauce in bowl. Place potatoes and other ingredients in bowl. Add mayo mix and toss. Let sit in fridge and blend preferably overnight.

■3 lbs baked potatoes
■1 cup sour cream
■3 Tbls chopped cooked bacon
■1 cup mayonnaise
■1 bunch chopped green onions (use green part only)
■1 can Chipotle Peppers in Adobo Sauce, 12 oz.
■1 Tbls vinegar
■grated cheddar for garnish

Steps:

  • Bake potatoes in oven and let cool. While at room temperature mix mayo, sour cream, and bacon. Mix well and season with salt and white pepper. Open chiles and add 2 tablespoons of Adobo sauce from peppers. Mix. If you want spicier add 1 more tablespoon. Garnish with leftover chives and half a cup of grated cheddar cheese.

  • Place the potatoes in a large stockpot, and cover with water. Bring to a boil, and cook until the potatoes are tender, about 20 minutes. Drain and allow to cool. When cool, cut the potatoes in half.
  • Combine the vinegar and mustard in a large bowl. Slowly whisk in the olive oil.
  • Add the potatoes to the vinaigrette, and mix gently but thoroughly. Toss in the scallions, parsley and dill. Salt and pepper to taste.
