8 oz. mixed greens
1 c. sliced strawberries
1/2 c. blueberries
1/2 c. mandarin oranges
1/2 c. pecans, unsalted
3.5 oz. crumbled goat cheese
2 Tbsp. sliced green onions
1/2 c. orange sparkling juice (I used Sanpellegrino)
3 Tbsp. olive oil
2 Tbsp. white balsamic vinegar
1/2 Tbsp. honey
1/4 tsp. salt
1/8 tsp. pepper

Steps:

  • Combine salad ingredients in a large serving bowl.
  • Combine dressing ingredients in a small jar with a lid. Shake well. Pour over salad immediately before serving.

This is a fresh summer-time salad that is inexpensive and easy to make. This salad can be made up the day before and is always a crowd pleaser.

½ cup sliced almonds
3 tablespoons white sugar
⅓ cup vegetable oil
3 tablespoons apple cider vinegar
hot sauce
2 ½ tablespoons white sugar
1 teaspoon salt
1 dash ground black pepper
1 (12 ounce) bag spring mix lettuce
1 (11 ounce) can mandarin oranges, drained
1 cup sliced fresh strawberries
1 cup chopped celery
½ cup chopped red onion
2 teaspoons chopped fresh parsley

Steps:

  • Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
  • Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Sprinkle the toasted almonds over the salad to serve.

8 cups torn fresh spinach
1 pint fresh strawberries, sliced
1 can (11 ounces) mandarin oranges, drained
1/4 cup julienned red onion
1/2 cup canola oil
1/3 cup sugar
1/4 cup cider vinegar
1 tablespoon poppy seeds
1-1/2 teaspoons finely chopped onion
1/2 teaspoon Worcestershire sauce
1/4 teaspoon paprika

Steps:

  • On salad plates, arrange the spinach, strawberries, oranges and onion. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Drizzle over salads; serve immediately.

SALAD
1 c chopped celery
1 Tbsp minced fresh parsley
2 sprig(s) spring onions, chopped including tops
1 bag(s) fresh spinach (10 oz ready to eat in a bag)
11 oz mandarin oranges, drained
1 c fresh sliced strawberries
DRESSING
1/4 c salad oil
2 Tbsp raspberry vinegar
2 Tbsp sugar
1 pinch black pepper
1/2 tsp salt
GARNISH
2 Tbsp sugar
1/4 c sliced almonds

Steps:

  • 1. Mix celery, parsley, and onions. Refrigerate.
  • 2. Drain mandarin oranges and put them in the refrigerator. (You can keep some of the juice to add to the dressing also if you wish.)
  • 3. Wash and dry strawberries. Slice and refrigerate.
  • 4. DRESSING: Mix ingredients thoroughly and refrigerate. (The dressing will keep for several days.) Shake well before adding to the salad.
  • 5. GARNISH: To caramelize almonds, put sugar and almonds in a frying pan on medium heat and stir constantly until almonds are lightly browned. Place them on a piece of wax paper to cool.
  • 6. SERVE: Place spinach in a bowl. Add the celery mixture, mandarin oranges, strawberries, and almonds. and dressing. Toss and Serve!
  • 7. Place salad on a plate and drizzle with dressing.

  • For dressing, in a small bowl, whisk the oil, sugar, vinegar, parsley, salt and pepper sauce until blended. Cover and refrigerate., In a large heavy skillet, melt sugar over medium-low heat without stirring until golden brown, about 30 minutes. Add pecans and butter; stir constantly until butter is melted and pecans are coated. Remove from the heat. Pour onto a foil-lined baking sheet; cool completely. Break pecans apart if necessary., In a salad bowl, combine the spinach, romaine, oranges, celery, strawberries and onions. Just before serving, drizzle with dressing; toss to coat. Top with sugared pecans.
