This recipe is more about assembly than actual cooking. (I mostly wanted to post my pics, which are pretty!) I had store-bought Romaine and Aerogarden -grown mixed greens, as well as strawberries and blueberries, needing to be eaten, so I made this salad (a variation of the usual strawberry-feta salads). I also put Recipe#49956 on it, but any bottled raspberry vinegrette will work. Also, it would be good with sliced chicken, avocado, onion, etc on top, or made with spinach. Feel free to enjoy it on the 4th, or any day!

Number Of Ingredients 6

2 cups mixed salad greens
1/4 cup crumbled feta cheese
2 tablespoons candied or toasted walnuts
4 strawberries, sliced
1/4 cup blueberries
raspberry vinaigrette dressing

Steps:

  • Lay the greens on the plate.
  • Pile the feta and walnuts in the middle of the greens.
  • Scatter the strawberries and blueberries on top.
  • Serve with the dressing on the side, and not until ready to eat (it wilts the salad).
  • Enjoy!

1 head butter or 1 head boston lettuce
12 cherry tomatoes, cut in half
1/4 cup loosely packed cilantro leaf
3 ounces ricotta salata
4 scallions (white parts only) or 4 spring onions, thinly sliced (white parts only)
4 scallions (dark green tops only) or 4 spring onions, thinly sliced (dark green tops only)
1 jalapeno pepper, chopped (seeds removed)
1/4 cup loosely packed cilantro, leaves
2 tablespoons fresh lime juice
1/4 teaspoon coarse salt
1/2 cup extra virgin olive oil

Steps:

  • To make dressing: In a mini-food processor or blender, add scallions, 1 tsp jalapeno pepper, cliantro, lime juice, and salt; pulse to combine. Taste and adjust flavour as necessary.
  • To make salad: Arrange lettuce leaves in bottom of a large serving dish. Add tomatoes, then clinatro leaves, crumble ricotta over the top and sprinkle with scallions. Place avocado in centre. Serve with dressing on the side.

1 pound small red potatoes, cooked and cubed
2 large tomatoes, diced
1 pound green beans, cut into 2-inch pieces and cooked
7 tablespoons olive oil
5 tablespoons white wine vinegar
3/4 teaspoon salt
1/2 teaspoon pepper

  • In a large bowl, combine potatoes, tomatoes, beans. In a small bowl, combine oil, vinegar, salt and pepper. Pour dressing over vegetables; toss to coat. Refrigerate for several hours before serving.

Number Of Ingredients 6

4-6 cups mixed Baby Greens (mild or spicy)
1 cup basil leaves
8 roasted tomatoes (recipe below)
1/2 of a cucumber
2 T. freshly grated Parmesean-Reggiano
1/4 to 1/2 cup Ken's Steak House (Regular or Lite) Caesar Dressing

Steps:

  • Roasted Tomatoes: Preheat oven to 400 degrees. Trim tomatoes and slice vertically in half. Place in roasting pan and drizzle with 2T olive oil or dot with 2T butter. Sprinkle liberally with salt and pepper. Roast for 35 to 45 minutes, until tomato skins wrinkle and brown. Let cool. While tomatoes are cooling, place baby greens in a large salad bowl. Pinch basil leaves from the stem, as close to the base of the leaf as possible and leave whole. Add to greens. Seed and quarter cucumber. Slice approximately 1/4" thick and add to greens. When tomatoes are cool, chop in 1/4" dice and add to salad. Sprinkle Parmesean on top, pour dressing on salad and toss gently.
