The BEST grilled chicken breast and marinade recipe! An easy method for making tender, moist grilled chicken breasts every time. So Juicy!

1 3/4 pounds boneless, skinless chicken breasts (about 3 medium breasts)
1 batch best Chicken Marinade* (see notes)
Chopped fresh herbs (crumbled feta cheese, a squeeze of lemon juice, optional for serving)
Oil (for grilling)

Steps:

  • Place the chicken breasts on a cutting board (leave several inches between them and work in batches as needed). Cover with plastic wrap to keep things tidy, and with a meat mallet, rolling pin, or your fist, pound the chicken to an even thickness. It doesn't need to be ultra thin-just make sure the middle is fairly even with the ends (the chicken should be about 1/2-inch thick).
  • With a fork, poke holes all over the chicken (this will allow the marinade to absorb).
  • In a large ziptop bag, combine the marinade ingredients, then add the chicken.
  • Seal the bag to evenly coat the chicken with the marinade. Place in a pan or bowl to catch any drips. Let the chicken marinate at room temperature for at least 30 minutes, or refrigerate it to marinate for up to 12 hours (5 to 6 hours is ideal). Even 15 minutes is better than nothing!
  • When ready to grill, preheat the grill to high (475 degrees F). If your chicken has been in the refrigerator, remove it and allow it to come to room temperature for at least 10 minutes. Clean and oil the grates.
  • Place the chicken on the grill presentation (smooth) side down, shaking off any excess marinade. Cover the grill and let cook for 4 to 5 minutes on the first side, then flip. The chicken should lift easily off the grill; if it sticks, allow it to cook another minute or two.
  • Recover the grill and cook for an additional 4 to 8 minutes. Chicken is considered done at 165 degrees F. I like to remove chicken from the grill around the 155-160 degree F mark and allow it to finish cooking while resting. DO NOT OVERCOOK, or your chicken will be dry.
  • Place the chicken on a plate and let rest for at least 5 minutes (resting is mandatory!). Add any desired toppings or sauces. Enjoy!

4 4 chicken breasts
olive oil (for grilling the chicken)
ground cumin, sprinkled
salt and pepper
RED & BLUE BERRY SALSA
1/2 c fresh blueberries, chopped
1/2 c fresh whole blueberries
1/2 red bell pepper, seed and diced
1/4 red onion, diced
1 jalapeno pepper, seeded and minced
2 Tbsp fresh minced parsley
2 Tbsp lemon juice
zest of one lemon
pinch salt

Steps:

  • 1. In a bowl, stir together all ingredients for the salsa and refrigerate until ready to use (you can make this up to 1 day in advance but if you do so, I recommend waiting until right before you serve it to add the fresh minced parsley).
  • 2. Lightly brush olive oil on both sides of the chicken breast, then season both sides with salt, pepper and cumin. Grill the chicken until fully cooked (there should not be any pink).
  • 3. Serve the grilled chicken topped with salsa

1 quart buttermilk
2 tablespoons ancho chile powder
1 tablespoon New Mexican chile powder
1 tablespoon cascabel chile powder
1/2 teaspoon chile de arbol powder or cayenne pepper
1 teaspoon smoked mild paprika
1 teaspoon ground coriander
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon ground cinnamon
4 8-ounce skin-on, bone-in chicken breast halves
4 chicken drumsticks
1/4 cup canola oil
Kosher salt and freshly ground black pepper

1 small Spanish onion, chopped
1 clove garlic, chopped
3 large very ripe mangoes, peeled, pitted and chopped
1/2 cup dry white wine
1/4 cup pineapple juice
1/4 cup fresh orange juice
1/4 to 1/2 teaspoon chile de arbol powder
3 tablespoons clover honey
Kosher salt and freshly ground black pepper

Steps:

  • Prepare the chicken: Whisk together the buttermilk, chile powders, paprika, coriander, garlic, onion powder and cinnamon in a large baking dish. Add the chicken and turn to coat. Cover and refrigerate at least 4 hours and up to 24 hours, turning a few more times. Remove the chicken from the brine and pat dry with paper towels. Put the chicken on a baking rack set over a baking sheet. Return to the refrigerator and let sit, uncovered, at least 1 hour and up to 4 hours.
  • Meanwhile, make the glaze: Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until soft, about 4 minutes. Add the garlic and cook 1 minute. Add the mangoes and cook, stirring occasionally, until broken down and caramelized, about 10 minutes. Add the white wine and cook until reduced by half, about 2 minutes. Carefully transfer the glaze mixture to a blender; add the pineapple juice, orange juice and the chile de arbol powder and blend until smooth, about 2 minutes. Strain into a bowl and season with the honey and salt and pepper. The mixture should be a thick puree. If it is too thick, thin it with a touch of water. Let cool to room temperature before serving.
  • Grill the chicken: Heat your grill to medium for indirect grilling. Remove the chicken from the refrigerator 30 minutes before cooking. Brush the chicken on both sides with the oil; season with salt and pepper. Put the chicken, skin-side down, on the hotter side of the grill (direct heat) and grill until browned, 4 to 5 minutes. Turn the chicken and continue grilling until the bottom is golden brown, 4 to 5 minutes. Move to the cooler side of the grill (indirect heat), close the cover and continue grilling until an instant-read thermometer inserted into the thickest part of the breast (not touching the bone) registers 160 degrees F, 15 to 20 more minutes. During the last few minutes, brush with some of the glaze. Remove the chicken to a platter and drizzle with more of the glaze. Tent loosely with foil and let rest 10 minutes before serving.

1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1 medium onion, chopped
1 jalapeno pepper, seeded and chopped
3 tablespoons brown sugar
3 tablespoons balsamic vinegar
1 tablespoon ground mustard
1 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
1 cup beer or nonalcoholic beer
1 broiler/fryer chicken (3 to 4 pounds), cut up and skin removed
1 envelope (1-1/4 ounces) chili seasoning
Hot cooked pasta

Steps:

  • Place the first eight ingredients in a food processor; cover and process until pureed. Stir in beer; set aside., Rub chicken pieces with chili seasoning. Place in a 5-qt. slow cooker. Pour tomato mixture over chicken. Cover and cook on low for 6-7 hours or until chicken is tender. , Thicken cooking liquid if desired. Serve chicken with pasta.

What a refreshing twist on a chicken salad recipe. It's sweet, savory and has a little tang. The mixture of flavors and textures is amazing. I tried this on a croissant and it was delicious. This will be great for a summer cookout. The hardest part is waiting for the chicken to cook!

3 chicken breasts grilled and shredded
1 c mayonnaise
1/2 c Italian salad dressing
1 stalk(s) celery diced
1 stem of green onion diced
1 c dried cranberries
1 c dried blueberries
1/2 c apples chopped (granny smith is best)
salt to taste

Steps:

  • 1. Grill or pan fry chicken and shred with a fork.
  • 2. Add chopped onion, chopped celery, and chopped apples.
  • 3. Mix in a large bowl add cranberries and blueberries.
