So delicious and decadent--wonderful! Made the perfect Valentine's Day breakfast. Very rich. The recipe makes quite a bit of glaze.

2 cups all-purpose flour
3 tablespoons white sugar
4 teaspoons baking powder
1 tablespoon unsweetened cocoa powder
¾ teaspoon salt
1 ¾ cups buttermilk
⅓ cup melted butter, cooled
2 eggs
2 teaspoons vanilla extract
½ teaspoon white vinegar
1 tablespoon red velvet food coloring (such as Lorann Professional Kitchen®) Red Velvet Bakery Emulsion) or as desired
6 ounces cream cheese, softened
6 tablespoons butter, softened
2 cups confectioners' sugar
½ cup whole milk, or more as needed
1 teaspoon vanilla extract
2 tablespoons confectioners' sugar, or to taste
6 tablespoons whipped cream, or to taste
1 cup sliced strawberries, or to taste

Steps:

  • Whisk flour, white sugar, baking powder, cocoa powder, and salt together in a bowl.
  • Beat buttermilk, melted butter, eggs, 2 teaspoons vanilla extract, and vinegar together in a bowl until smooth. Stir red food coloring into buttermilk mixture. Mix buttermilk mixture into flour mixture until just combined.
  • Preheat a waffle iron according to manufacturer's instructions.
  • Beat cream cheese and softened butter together in a bowl using an electric mixer until smooth and fluffy. Gradually mix 2 cups confectioners' sugar into cream cheese mixture, alternating with milk and 1 teaspoon vanilla extract, until glaze is smooth.
  • Spoon 1/4 to 1/2 cup waffle batter into preheated waffle iron. Cook according to manufacturer's directions. Repeat with remaining batter.
  • Lightly dust each waffle with remaining confectioners' sugar, drizzle with glaze, and top each with whipped cream and strawberries.

6 ounces cream cheese, at room temperature
6 tablespoons unsalted butter, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract
1/2 cup whole milk
1/4 cup pecan pieces, optional
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon plus 1 teaspoon baking powder
1 tablespoon natural cocoa powder (preferably Hershey's)
3/4 teaspoon table salt
1 3/4 cups buttermilk
1/3 cup (5 1/2 tablespoons) unsalted butter, melted and cooled
2 large eggs
2 teaspoons vanilla extract
1/2 teaspoon distilled white vinegar
2 tablespoons red food coloring
Nonstick cooking spray

Steps:

  • Make the cream cheese glaze: Whip the cream cheese and butter together in a large bowl until smooth and fluffy. Gradually whisk in the confectioners' sugar, then add the vanilla add the milk and whisk until the glaze is smooth. Stir in the nuts if using.
  • Make the red velvet waffles: Whisk the flour, sugar, baking powder and cocoa in a large bowl. Beat the buttermilk, melted butter, eggs, vanilla and vinegar together in separate medium bowl until smooth, then stir in the red food coloring. Add the buttermilk mixture to the dry ingredients and whisk until smooth.
  • Heat a waffle iron according to the manufacturers' instructions. Spray the waffle iron with nonstick cooking spray and then pour a scant 1 cup of the waffle batter onto the waffle grid. Close the iron and cook until the waffle is deep red and crisp on the outside, about 3 minutes. Repeat with the remaining waffle batter. Serve each waffle drizzled with the cream cheese glaze.

I slightly modified it but these made the coolest waffles EVER. These are perfect for Valentine's Day, especially if you have one of those old school heart-shaped waffle irons! I skipped the red food dye because I had nowhere near enough but they still tasted fantastic.

2 cups 1% low-fat milk (called for buttermilk)
3 1/2 tablespoons cream of tartar (skip if using real buttermilk)
2 egg whites (called for 2 large eggs but just the whites were fine)
3/4 cup sugar (lowered from original 1 1/4 cups)
2 tablespoons applesauce
2 tablespoons canola oil
2 cups all-purpose flour
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon baking powder
4 teaspoons unsweetened cocoa powder
2 tablespoons red food coloring

Steps:

  • Let the cream of tartar sit in the milk for at least 5 minutes to make the buttermilk. If using real buttermilk, skip this step. Vanilla or chocolate soymilk is also nice to use!
  • Whisk the sugar, egg whites, applesauce, and oil with the buttermilk in a large mixing bowl.
  • Gradually whisk in 1 cup of flour in 1/4 cup or 1/3 cup increments.
  • When 1 cup has been blended, whisk in the vanilla, salt, baking powder, and cocoa powder. If using red food dye, add it now too.
  • Whisk in the remaining cup of flour in the same fashion.
  • Coat a waffle iron with non-stick cooking spray.
  • Pour 1/2 cup of batter onto the waffle iron and cook until nicely browned, scraping off with a spatula.
  • Good with maple syrup but utterly to die for with a little chocolate syrup, powdered sugar, and strawberries! Makes about 10-14 delicious out-of-this-world waffles.

4 tablespoons cream cheese, cubed
3 cups Bisquick
1/4 cup granulated sugar
2 tablespoons cocoa powder
1 1/3 cups milk
1 egg
2 tablespoons vegetable oil
1/4 teaspoon vanilla
red food coloring
nonstick cooking spray
whipped cream, for serving

Steps:

  • Preheat waffle iron. Preheat oven to 225 degrees.
  • In a microwave safe bowl, combine maple syrup and cream cheese. Microwave on high, in 20 second bursts, whisking at each interval, until cream cheese is melted and mixture is smooth. Set aside.
  • In a medium bowl, mix to combine bisquick, granulated sugar, and cocoa powder.
  • Add milk, egg, oil, and vanilla. Mix until a smooth batter forms.
  • Add enough red food coloring, drop by drop, to yield a deep red color.
  • Spray waffle iron with nonstick cooking spray. Pour ⅔ cup batter onto waffle iron and let cook until golden on the edges and cooked through.

2 cups heavy cream
12 ounces unsalted butter, melted
1/2 cup natural red food coloring
4 eggs
4 cups all-purpose flour
1 1/2 cups cake flour
1 1/2 cups sugar
3/4 cup Dutch process cocoa powder
1/2 cup cornmeal
1 tablespoons baking powder
8 ounces softened cream cheese
1/4 cup powdered sugar
1 tablespoon vanilla extract
Zest of 1 orange
2 cups dried cherries (or fresh when in season)
1 cup molasses
1/4 cup bourbon
Pinch salt
Toasted pecans, for garnish
Powdered sugar, for garnish

Steps:

  • For the waffles: Whisk together the buttermilk, cream, butter, food coloring and eggs in a large bowl. Mix together the flours, sugar, cocoa, cornmeal and baking powder in another bowl. Mix the dry ingredients into the wet ingredients in thirds, stirring just until incorporated. Do not over-mix. Let rest, covered with plastic wrap, overnight in the refrigerator.
  • For the cream cheese mousse: Mix together the cream cheese, sugar, vanilla and orange zest using a mixer until smooth and creamy.
  • For the compote: Combine the cherries, molasses, bourbon and salt in a saucepan and heat until the cherries are softened. Serve warm like a chunky syrup.
  • Fire up the waffle iron and get cooking. Pour the batter onto the hot waffle iron and cook to desired doneness. Garnish with bourbon cherry compote, cream cheese mousse, toasted pecans and powdered sugar.

1/4 c unsweetened cocoa powder
2 eggs
1/3 c vegetable oil
1 1/2 c water
3 c waffle mix
3 oz cream cheese, softened
3 Tbsp powdered sugar
1/4 tsp vanilla
3 Tbsp milk
1/2 bottle red food coloring (approx 25 drops)
1/2 c chopped pecans, lightly toasted

Steps:

  • 1. Heat up waffle maker. Mix waffle mix and eggs, water, and oil according to pkg instructions.
  • 2. Add cocoa powder to waffle mix and blend.
  • 3. Add red food coloring slowly until you get the "red velvet" color you want. Cook waffles in waffle maker. This will make 5-6 Belgian waffles or 10 regular waffles.
  • 4. With a mixer blend together cream cheese, powdered sugar, vanilla, and milk. Pour glaze into a saucepan and warm on med-low. Stir frequently.
  • 5. Serve Red Velvet Waffles with warm cream cheese glaze and toasted pecans on top and a side of fruit and bacon. YUM!
