CARAMELISED RED ONION CHUTNEY RECIPE

This one is a really lovely chutney. Use it on or in quiches, pizzas, plain biscuits, sandwiches or just with a cheese platter, I am sure you will love it. I do keep this in the fridge, and it never lasts long, so I am not sure as to its time of keeping, but would say at least 5-6 months.

8 red onions
1 red chili, de-seeded
2 bay leaves
25 ml olive oil
200 g brown sugar
2 teaspoons mustard seeds
150 ml balsamic vinegar
150 ml red wine vinegar

Steps:

  • Cut the onions and chilli into thin slices, then cut onion slices in half again and put them into a pan with bay leaves, chilli and oil. Cook gently over a low heat for about 20 minutes.
  • When the onions are dark and sticky, add the sugar, the vinegars and mustard seeds, simmer for about 30 minutes, until the chutney is thick and dark. (Stirring at intervals so the chutney does not stick to the pan).
  • Pour the chutney into hot, sterilised jars seal and let chutney cool.
  • You must have a taste but really (before you eat it) this should left for a month or maybe even more for the flavours to blend and mature. .

1 (9-ounce) jar mango chutney (such as Major Grey's), any large pieces chopped
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1 tablespoon Dijon mustard plus additional for serving
8 beef hot dogs
8 hot dog buns, opened

Steps:

  • Mix chutney, onion, cilantro, and 1 tablespoon mustard in bowl. DO AHEAD_Can be made 1 day ahead. Cover; chill._
  • Prepare barbecue (medium-high heat). Grill hot dogs and buns until heated through and grill marks form, 2 to 3 minutes per side for hot dogs and about 1 minute per side for buns. Transfer buns to plate. Place 1 hot dog in each bun. Add mustard and relish; serve.

100g caster sugar
100ml red wine vinegar
100ml red wine

Steps:

  • Place the onions and sugar in a saucepan, cover and cook over medium heat until soft, about 10 mins. Pour in the red wine vinegar and red wine, then simmer uncovered until the liquid has reduced and the mixture is sticky, about 10 mins more. Add the grenadine syrup and mix well. Leave to cool, then transfer to a sterilised jar and seal.

1/2 cup golden raisins
1/8 teaspoon dried mint

2 pounds red onions, quartered lengthwise and sliced thin crosswise (about 4 cups)
3 tablespoons vegetable oil
2 tablespoons unsalted butter
1 Granny Smith apple

Steps:

  • In a small bowl combine well 2/3 cup warm water, the vinegar, the honey, the raisins, the mint, and the cloves and let the mixture stand while cooking the onions. In a large skillet cook the onions in the oil and the butter, covered, over moderately low heat, stirring occasionally, for 15 minutes, remove the lid, and continue to cook the onion, stirring, for 30 minutes, or until they are very soft. Stir in the raisin mixture and cook the mixture over moderate heat, stirring, until the liquid is almost evaporated and the apple is tender, and season the chutney with salt and pepper. The chutney may be made 3 days in advance, cooled, and kept covered and chilled. Serve the chutney at room temperature.

1/2 cup packed brown sugar
1/3 cup red wine vinegar

1/4 teaspoon pumpkin pie spice
1/2 cup uncooked wild rice
1 1/4 cups water
1 cup soft bread crumbs (about 1 1/2 slices bread)
1/3 cup chopped pecans
1/2 teaspoon garlic salt
3 eggs
1 jar (2.5 oz) mushroom pieces and stems, drained, finely chopped
1 jar (2 oz) diced pimientos, drained
2 tablespoons canola oil

Steps:

  • In 2-quart saucepan, heat 1 tablespoon oil over medium heat. Cook onion in oil about 6 minutes, stirring frequently, until onion is tender. Stir in remaining chutney ingredients. Heat to boiling; reduce heat to low. Cook 20 to 25 minutes or until dried fruits are plump and mixture has thickened; remove from heat.
  • Meanwhile, cook wild rice in water as directed on package, drain if necessary. In large bowl, mix cooked wild rice and remaining patty ingredients except oil.

Simple, Rich and Delicious; Caramelised Red Onion Chutney image

I purchased a pot of onion chutney from a local supermarket, intrigued, and was very disappointed. It was so sweet and jam-like, and really sickly. So I decided to make my own, with minimal ingredients, just to see how it would turn out. The resulting recipe is very simple, and very good! I make a big batch up about once a month, and have to hide a jar or two to keep as my friends take the rest! This recipe will fill one large pickled onion jar, and leave a little over for a couple of small gift jars.

10 plump red onions
500 g golden unrefined unbleached cane sugar
750 ml approx red wine vinegar (or one and a half normal-sized bottles of the stuff)

Steps:

  • Thoroughly wash jars with hot water and camden tablets. If you don't have the tablets, antibacterial soaps will do fine but rinse very well.
  • Place the jars, open, in an oven that is set to it's lowest heat, to keep warm.
  • Top and tail the onions, halve them, then peel off the dry skin and the first layer of flesh. Slice into half rings, about 2-3mm thick.
  • Add onion slices to a deep sides pot on a medium-high heat and allow to heat naturally, cooking in their own juices. Stir occasionally to prevent sticking.
  • Add half the sugar, and stir thoroughly to coat the onion. Continue heating and stirring gently, letting the sugar melt and bubble on the onion but not allowing the onion to stick and burn.
  • Once the onion just starts to turn colour, add enough red wine vinegar to cover and stir thoroughly again. Then turn he heat to medium and leave to cook for 15-20 minutes. Check regularly, and top up with vinegar as required.
  • Turn up the heat, add the remaining sugar and vinegar, and stir until all the sugar is absorbed into the mixture. Lower the heat again, and cook, stirring regularly, until thick and gloopy.
  • Spoon mixture into hot jars, label jars with the date and seal.
  • Leave at least 6 weeks before eating. I have tried this chutney at 3 months and it is delicious, if you can keep it hidden that long!
  • Serve as a side with cooked meat, curries, as a burger/hotdog relish, or at it's best layered on good oatcakes with a selection of blue cheeses, goats cheeses and over-ripe brie.

BARBECUED RED ONION CHUTNEY

You'll need a medium-hot charcoal fire for this recipe. So either start cooking when the main dish comes off the fire or, if making this dish separately, light a charcoal fire in your grill, putting all the coals on one side, and wait until it has died down to medium. 3 large red onions, peeled and cut into half-inch circles
Vegetable oil for coating
1 tablespoon plus 1/2 cup brown sugar
1 tablespoon chile powder

1/2 cup cider vinegar

Steps:

  • Coat onions lightly with oil. Mix together 1 tablespoon each brown sugar, chile powder, cumin and curry powder and rub onion circles all over with the mixture. (If you have metal skewers, thread two onion circles horizontally onto each skewer first, then coat with oil and seasoning.)
  • Place onions on grill over coals and cook until cut sides are golden brown streaked with black, 3 to 4 minutes per side. Move to side or back of grill where temperature is low and cook, flipping once or twice, until onions are soft enough to yield easily when squeezed with tongs, at least 15 and up to 40 minutes, removing smaller onions from grill as they become cooked to this stage. Remove from grill and, if not using immediately, refrigerate, covered, until ready to use.
  • To make chutney, roughly chop onions. Heat olive oil in large sauté pan over medium heat until shimmering. Add onions and cook until very soft, about 5 to 10 minutes. Add remaining 1/2 cup brown sugar and the cider vinegar, bring to a simmer and cook 10 minutes, until slightly thickened. This chutney keeps, covered and refrigerated, about 1 week.

3 apples, cored and cut crosswise into 1/2-inch rings

  • Heat oil in 2-quart saucepan over medium heat. Cook onion in oil about 8 minutes, stirring frequently, until onion is tender. Mix 2 tablespoons of the brown sugar and 4 teaspoons of the vinegar in small bowl; reserve.

A sweet chutney with a little bite. For a more adult flavour you can replace the cranberry juice for red wine This is a simple one pot recipe, try adding dried fruit such as raisins or apricot to your chutney.

2 tablespoons olive oil
1 1/2 lbs red onions (sliced)
2 small apples, diced into 5ml cubes
5 g fresh ginger, peeled and finely chopped (I used about 5 gms)
1 garlic clove, crushed and finely chopped
150 ml cranberry juice
4 tablespoons light brown sugar

Steps:

  • Heat oil on a low heat in a large saucepan or saute pan, and add the garlic and ginger, fry for a few minutes but do not let the garlic burn.
  • Add the rest of the ingredients stir well and bring to the boil.
  • Lower the heat and simmer for approx 30-40 mins, until reduced to a sticky consistency.
  • Transfer to a sterilised lidded jar and allow to cool.
  • Use in salads and on sandwiches, this chutney tastes great on cheese salad sandwich with wholemeal or seeded bread.
  • The quantities above wil make enough to fill a large lidded glass jar or seelable contailer.

  • Pour into sterilised jars and allow to cool.
